Number Of Ingredients 6

1 - 4 lb spaghetti squash
3 large garlic cloves, minced
2 Tbsp butter
Salt and fresh cracked black pepper to taste
2 Tbsp parsley paste
3 Tbsp fresh shredded parmesan cheese

Steps:

  • 1. Cook time includes baking squash. It could also be microwaved, to cut down on overall time. Preheat oven to 375 degree F. Place squash on baking sheet. Cut a few slits into squash with knife. Bake for 1 hour and 15 minutes. Remove and cool. Cut in half and remove seeds. Now scrape the inside flesh with a fork. Making sure you remove it all.
  • 2. In a medium skillet over medium heat, melt butter. Add garlic and saute until tender, stirring often. Add parsley and cook another minute.
  • 3. Toss in the squash, salt and pepper, combine with the garlic and butter, tossing as you saute until desired tenderness. About 3 - 4 minutes.
  • 4. Sprinkle with Parmesan cheese and toss to melt. Serve immediately.

1 small spaghetti squash, about 3-4 pounds
2 Tbsp butter
2 clove garlic, finely minced
1/4 c finely minced parsley (or basil)
1/2 tsp salt (or to taste)
1/4 c shredded parmesan cheese

Steps:

  • 1. Pierce the squash a few times with a sharp paring knife to let steam escape. Bake in a preheated 375-degree oven for 60 minutes, or until a paring knife pierces easily through skin with little resistance. Let squash cool for 10 minutes.
  • 2. Cut squash in half lengthwise. Use fork to remove and discard the seeds. Continue using fork to scrape the squash to get long, lovely strands. If the squash seem difficult to scrape, return the squash to bake for an additional 10 minutes.
  • 3. Heat a large saute pan with the butter and the garlic over medium-low heat. When garlic becomes fragrant, add parsley, salt and spaghetti squash strands. Toss well, sprinkle in the parmesan cheese and taste to see if you need more salt. The spaghetti squash should have a slight crunch (not mushy). But if you like it softer, cover the pan and cook 2 more minutes.

1 (2 1/2 pound) spaghetti squash, halved and seeded
2 teaspoons olive oil
2 slices bacon, cut into 1 1/2-inch pieces
2 tablespoons unsalted butter
3 cloves garlic, minced
½ cup grated Parmesan cheese
salt and ground black pepper to taste
1 teaspoon chopped fresh oregano
¼ teaspoon crushed red pepper flakes, or more to taste
2 tablespoons grated Parmesan cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper or foil.
  • Using a sharp knife, cut off the root end of the squash, cut in half lengthwise, and scrape out the seeds and connecting strands with a spoon. Brush the cut sides with olive oil and place squash on the baking sheet with cut sides down.
  • Bake until the skin can be easily pierced with a fork, and the flesh is tender, about 45 minutes.
  • While squash is baking, cook bacon over medium heat until crispy and browned, 3 to 4 minutes. Remove to a paper towel to drain.
  • Remove squash from the oven and let rest until cool enough to handle. Scrape out the flesh with a fork creating long strands, loosening and removing the strands from the shells.
  • Heat a large pan on medium heat, and melt butter. Add garlic and cook until fragrant, about 30 seconds. Add squash strands, toss with garlic butter, and cook until heated through, stirring often, about 2 minutes.
  • Remove pan from the heat, stir in Parmesan cheese, and season with salt and pepper. Gently stir to coat the strands and let the cheese melt. Garnish with bacon, oregano, and red pepper flakes.

  • Put 1 halved, seeded spaghetti squash in a microwave-safe dish; add 2 tablespoons water, cover and microwave until tender, 16 minutes. Let cool slightly, then scrape into strands with a fork into a bowl. Cook 2 sliced garlic cloves in olive oil until golden. Add to the squash along with 2 tablespoons each chopped parsley, chives and pickled cherry peppers; toss. Season with salt and pepper.

1 medium spaghetti squash (about 4 pounds)
1 pound lean ground beef (90% lean)
2 cups sliced fresh mushrooms
4 garlic cloves, minced, divided
4 plum tomatoes, chopped
2 cups pasta sauce
1/2 teaspoon pepper, divided
1 tablespoon olive oil
1/4 teaspoon salt
Grated Parmesan cheese, optional

Steps:

  • Preheat oven to 375°. Cut squash lengthwise in half; remove and discard seeds. Place squash in a 13x9-in. baking pan, cut side down; add 1/2 in. of hot water. Bake, uncovered, 40 minutes. Drain water from pan; turn squash cut side up. Bake until squash is tender, 5-10 minutes longer., Meanwhile, in a large skillet, cook beef and mushrooms over medium heat until beef is no longer pink, 6-8 minutes, breaking up beef into crumbles; drain. Add half of the garlic; cook and stir 1 minute. Stir in tomatoes, pasta sauce and 1/4 teaspoon pepper; bring to a boil. Reduce heat; simmer, uncovered, 15-20 minutes., When squash is cool enough to handle, use a fork to separate strands. In a large skillet, heat oil over medium heat. Add remaining garlic; cook and stir 1 minute. Stir in squash, salt and remaining pepper; heat through. Serve with meat sauce and, if desired, cheese.

2 spaghetti squash (2 pounds each)
2 tablespoons olive oil
2 cloves garlic, slivered
Coarse salt and ground pepper

Steps:

  • Preheat oven to 400 degrees. With a fork, prick squash in several places. Place on a rimmed baking sheet; bake until soft to the touch, about 1 hour.
  • When cool enough to handle, halve squash crosswise. Scoop out seeds; discard. Scrape flesh into strands.
  • In a large skillet, heat oil over low heat. Add garlic; cook until fragrant and just starting to color, about 5 minutes. Add squash; season with salt and pepper. Cook, tossing frequently, until squash is very hot, about 5 minutes.
