5 pounds ground Angus beef (preferred lean/fat content 80/20)
1 tablespoon sea salt
1 tablespoon seasoning salt
1/2 tablespoon cracked peppercorn
3 cloves fresh garlic, minced
8 ounces applewood smoked bacon
White burger buns
Creamy peanut butter
20 slices American cheese

Steps:

  • Combine the beef with the sea salt, seasoning salt, pepper and garlic. Create 10 beef balls. Place the balls individually between waxed paper and slightly press the center to create your patties. Place the patties on a lined cookie sheet, ready to be placed on the grill.
  • On the stove, fry the bacon to desired texture over medium-heat.
  • Turn your chargrill to medium-high and place the burgers on it once it is hot. Cook the first side until the edges are caramelized and browned, 3 to 5 minutes. Flip the burgers and cook for another 3 to 5 minutes. Be careful not to pierce the meat or overcook. Set aside and let them rest for another 3 to 5 minutes. Before you turn off the grill, lightly toast the white burger buns.
  • Dress each side of the white burger buns with creamy peanut butter and 2 slices American cheese. Place the burgers on top of the cheese and add the cooked bacon.

1 teaspoon fresh ground black pepper
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon kosher salt
½ teaspoon Worcestershire sauce
¼ teaspoon cayenne pepper
8 slices applewood-smoked bacon
1 ½ cups shredded sharp Cheddar cheese (such as Tillamook®)
1 cup peanut butter
1 tablespoon maple syrup
6 hamburger buns
6 leaves lettuce
2 tomatoes, sliced

Steps:

  • Mix ground beef, black pepper, onion powder, garlic powder, salt, Worcestershire sauce, and cayenne pepper in a large bowl until evenly blended. Form beef mixture into 6 4-inch wide patties. Transfer patties to a large plate and cover with plastic wrap. Refrigerate until patties are slightly firm, about 30 minutes.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels.
  • Cook beef patties on preheated grill until they are beginning to firm and are hot and slightly pink in the center, about 4 minutes per side. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C). Sprinkle Cheddar cheese over patties about a minute before they are done.
  • Mix peanut butter and maple syrup in a microwave-safe bowl. Heat peanut butter mixture in the microwave until slightly runny, about 25 seconds. Stir again.
  • Spread peanut butter mixture over hamburger buns and top with beef patties, lettuce, tomatoes, and bacon.

1 pound (4 sticks) unsalted butter, softened
1 1/2 teaspoons minced fresh basil
1 1/2 teaspoons minced fresh parsley
1 1/2 teaspoons minced fresh tarragon
Pinch cayenne pepper
2 large cloves garlic, minced
Salt and freshly ground black pepper
1 cup mayonnaise
1 tablespoon fresh lime juice
1 teaspoon paprika
1/4 teaspoon cayenne
1/4 teaspoon ground cumin
11 small cloves garlic, roasted and chopped
2 pounds fresh ground beef or four 8-ounce Angus beef patties
4 slices cheese
4 large burger buns

Steps:

  • For the compound butter: Stir together the butter, basil, parsley, tarragon, cayenne and garlic; season with salt and pepper. Spoon the mixture onto a piece of plastic wrap in a 6-inch-long mound. Fold the plastic wrap over the mixture to enclose it, and roll it to form a log about 2 1/2 inches in diameter. Chill until firm, about 2 hours.
  • For the roasted garlic aioli: Blend the mayonnaise, lime juice, paprika, cayenne, cumin and garlic in a food processor until smooth.
  • For the burgers: Preheat the oven to broil.
  • Form the ground beef into 4 patties. Stuff a slice of the compound butter inside each and broil the burgers to the desired doneness. Add another slice of the butter to the top of each burger, followed by a slice of cheese. Broil briefly, just until the cheese melts.
  • Serve on buns with a small mound of the aioli on top of the cheese.

1 1/2 tablespoons vegetable oil

Steps:

  • Place butter, garlic, shallot and parsley in a food processor.
  • Process until smooth.
  • Season with salt and pepper.
  • Place in a bowl, cover, and refrigerate 30 minutes to blend flavors. (Butter can be made up to 24 hours ahead.).
  • Bring to room temperature before serving.
  • Preheat broiler.
  • Brush buns with about 4 tablespoons garlic butter.
  • Toast for about 30 seconds; don't let them get too brown.
  • Divide meat into 4 equal portions.
  • Shape each into a patty and make a depression in the center.
  • Heat oil over high heat until it begins to shimmer.

1 tablespoon butter
2 teaspoons olive oil
½ cup chopped onion
.666 pound 90% lean ground beef
2 teaspoons Italian seasoning (such as Trader Joe's® 21 Seasoning Salute)
1 tablespoon ghee (clarified butter)
2 slices white Cheddar cheese (such as Sartori®)
2 (2 ounce) hamburger buns
2 tablespoons butter (such as Plugra®)

Steps:

  • Melt butter in a saucepan over medium heat, then add olive oil. Allow butter to brown. Reduce heat to low and add onion. Cover and cook over very low heat, stirring occasionally, until very soft, about 20 minutes. You do not want to caramelize the onion.
  • Meanwhile, season ground beef with Italian seasoning and shape into 2 hamburger patties.
  • Melt ghee in a skillet over medium-high heat. Cook hamburger patties, about 3 minutes per side. Add cheese onto each patty and allow to melt.
  • Meanwhile, preheat the oven's broiler and toast buns until crisp, 1 to 2 minutes.
  • Set hamburger patties on the bottom buns and add add sauteed onions on top. Spread 1 tablespoon butter across the freshly toasted top bun.

8 slices bacon
4 tablespoons unsalted butter, plus additional for toasting buns
2 pounds ground chuck
Kosher salt and freshly ground pepper
2 tablespoons vegetable oil
4 thick slices Cheddar or American cheese
4 pretzel buns
4 tablespoons unsalted butter
1 small onion, finely chopped
4 tablespoons all-purpose flour
2 cups light beer, such as lager
1 1/2 cups heavy cream
1 clove garlic, grated
Kosher salt and freshly ground black pepper
6 ounces grated sharp Cheddar
6 ounces grated Swiss cheese

Steps:

  • For the burger: Preheat the oven to 350 degrees F.
  • Place the bacon on a rimmed baking sheet and bake until golden brown but not completely crisp, 15 to 20 minutes. Keep warm for the burgers.
  • For the beer cheese sauce: Meanwhile, melt the butter in a heavy-bottom saucepan over medium heat. Add the onions and cook until soft, 2 to 3 minutes. Add the flour and cook, stirring, until the roux starts to brown, about 2 minutes. Whisk in the beer until smooth.
  • Reduce the heat and cook until the beer begins to reduce and the alcohol is cooked out, 4 to 5 minutes. Add the cream and garlic and continue to cook, stirring continuously, until the sauce thickens, about 10 minutes. Remove from the heat and season with 1/2 teaspoon salt and some pepper; gradually whisk in the cheeses until melted completely. Keep warm. Note: This recipe makes about 4 cups of cheese sauce, more than needed for the burgers. Refrigerate the extra for up to 3 days.
  • To make the burgers, cut the butter into four 1/2-inch thick pieces and set aside, taking care to keep them cold. In a medium bowl, gently fold the ground beef with 1 to 2 teaspoons salt and some pepper to season, and divide into four equal portions. Form each portion of meat into a ball and press your thumb into the center. Place a cold slice of butter into each indent and cover over with some meat, pressing each ball into a patty so the butter is in the center. Hold the patties on a plate for cooking.
  • Heat a grill pan over medium high heat, and brush with oil. When the pan is hot, add the patties, spacing them evenly. Cook on one side until browned, about 5 minutes, and then flip the patties and cook to desired doneness, adding the cheese slices in the last 2 minutes.
  • Butter both sides of the pretzel buns and place on the grill pan, cut-side down. Grill until golden brown and toasted. Place the buns onto plates, and place the patties onto the toasted buns. Top each burger with 2 bacon slices and 1/4 cup beer cheese sauce. Serve immediately.

3 tablespoons olive oil
1 medium yellow onion, finely diced
Salt and fresh ground pepper
1 teaspoon five-spice powder
3 tablespoons balsamic vinegar
2 pounds ground beef (80 percent lean)
3 tablespoons cold butter, each tablespoon cut into 6 cubes
9 slices sharp cheddar (from deli), cut into quarters
18 slider buns, mini brioche rolls or Hawaiian rolls
1/2 cup mayonnaise
2 tablespoons chopped cornichons
2 tablespoons ketchup
2 tablespoons balsamic vinegar
1 tablespoon chopped capers
2 cloves garlic
1/4 cup olive oil
3 tablespoons walnuts, toasted
2 cups baby arugula
1 teaspoon fresh lemon juice
Pinch salt

Steps:

  • For the sliders: Heat the olive oil in a medium skillet over medium heat. Add the onions, season with a bit of salt and pepper, and cook until softened and translucent, about 5 minutes. Let cool.
  • In a large bowl, combine the sauteed onions, five-spice powder and 1 tablespoon of the balsamic vinegar, and season with a generous pinch of salt and of pepper. Add about one-quarter of the ground beef, and gently mix together until combined. Add the remaining ground beef and gently mix, making sure not to overmix.
  • Divide the meat into approximately 2-ounce portions, and form each into a ball. Insert a cube of butter into the center of each ball, then lightly press into patties about 3/4-inch thick and 2 inches in diameter. Place the patties on a baking sheet, cover with plastic, and refrigerate until ready to cook.
  • Fire up the grill or grill pan to medium-high. Cook the sliders about 2 to 3 minutes per side for medium doneness. After flipping, drizzle each slider with a bit of the remaining balsamic. Set two pieces of cheddar on each slider about 2 minutes before it is done cooking. Place the sliders on buns, and serve with sauces on the side.
  • For the sweet Russian sauce: Combine the mayonnaise, cornichons, ketchup, balsamic and capers in a small bowl; mix until blended.
  • For the arugula pesto: Combine the garlic and 2 tablespoons of the olive oil in a mini chopper or food processor, and pulse until the garlic is chopped. Add the toasted walnuts and pulse until finely chopped. Add the arugula, the remaining 2 tablespoons olive oil and the lemon juice, and season with salt. Pulse just until everything is finely chopped, not pureed.

1 1/2 tablespoons canola oil
4 hamburger buns, split

Steps:

  • Combine the butter, garlic, shallot, and parsley in a food processor and process until smooth; season with salt and pepper to taste. Scrape into a bowl, cover, and refrigerate for at least 30 minutes to allow the flavors to meld. The butter will keep in the refrigerator for up to 24 hours. Bring to room temperature before using.
  • Divide the meat into 4 equal portions (about 6 ounces each). Form each portion loosely into a 3/4-inch-thick burger and make a deep depression in the center with your thumb. Season both sides of each burger with salt and pepper.
  • Brush the buns with about 4 tablespoons of the butter, using roughly 1/2 tablespoon for each half.
  • Cook the burgers, using the oil (see page 16) and brushing them every 30 seconds with the remaining garlic butter.
  • Meanwhile, toast the buns (see page 15). Place the burgers on the bun bottoms, cover with the bun tops, and serve immediately.

1 large hamburger bun
1 large hamburger
3 slice bacon (fried crisp)
1 - 2 slice onion
1 - 2 Tbsp creamy peanut butter
1 - 2 Tbsp mayonnaise

Steps:

  • 1. Fry the bacon until crispy. Set aside.
  • 2. Fry the hamburger as desired.
  • 3. Optional: Grill insides of the bun. Optional: You can also use grilled slices of bread instead of a bun.
  • 4. Spread mayonnaise on one half of the bun. Spread peanut butter on the other half of the bun. Or put half of each on each side of the bun or bread.
  • 5. Put onion and bacon on both halves of bun. Put hamburger on bottom half of bun. Top it with the other half of the bun.

Butter Burgers are the most delicious burgers ever, cooked and smothered in butter! This Wisconsin Butter Burger recipe is everything your dreams are made of, juicy, cheesy, and absolutely tasty.

10 tablespoons salted butter (softened)
1 medium sweet yellow onion (chopped)
1 tablespoon water
3/4 teaspoon kosher salt
3/4 teaspoon freshly ground black pepper
1 pound 90% lean ground beef
4 hamburger buns (toasted)
1 teaspoon vegetable oil
4 slices American cheese

Steps:

  • In a large skillet, melt 2 tablespoons butter over medium heat. Add chopped onion, water and ¼ teaspoon salt. Cover and cook, until tender, about 5 minutes. Reduce heat to medium-low and remove lid. Continue to cook until onions are translucent and just beginning to brown, about 3 more minutes. Transfer onions to a plate, and divide into 4 equal portions; set onions aside until ready to use.
  • Divide beef into 4 equal sized portions and gently shape each into a 4½x½-inch patty. Sprinkle both sides of the patties with salt and pepper. Refrigerate the patties 15-30 minutes.
  • Spread each bun top with 2 tablespoons butter; set aside.
  • Heat oil in the same skillet used for the onions until the oil begins to smoke. Use a spatula to transfer the patties to the skillet and cook 3 minutes (without moving them). Flip the patties and cook 1 more minute. Place 1 cheese slice over each patty and continue to cook until cheese is melted, about 20-30 seconds more.
  • Transfer patties to the bun bottoms and place ¼ of the sautéed onions on each patty. Top each with the buttered bun tops and serve immediately.
