Steps:
- heat water to boiling in a saucepan an add butter beans. cover and let simmer for 25 minutes.
- fry sausage links until just brown. remove from skillet and cut into bite sized chunks.
- remove from skillet while leaving drippings in pan.
- add onion over low heat , stir apples in and add brown sugar over top.
- turn up heat to medium and let sugar thicken.
- when sugar gets syrupy, remove from heat.
- when beans are cooked, drain and add butter, milk, salt, and mustard and mix well.
- turn into a buttered baking dish and lay sausage over top the spread apples, onion mixture over top.
- bake at 350 for 30 minutes.

- In a large skillet, cook and crumble sausage over medium heat until no longer pink; drain. Add green pepper and onion; saute until tender. Drain. Add remaining ingredients., Pour into a greased 13x9-in. baking dish. Cover and bake at 325° for 1 hour. Uncover; bake 20-30 minutes longer or until bubbly.

Steps:
- Gently heat the olive oil in a deep pan. Add the onions and garlic, fry until softened.
- Add the sausages and gently brown.
- Put in the chorizo and turn the heat up slightly so that it sweats off some of the oil. Add the pancetta and leeks and stir to combine.
- Add the butter beans, stock, mushrooms and thyme. Bring it to the boil, turn down and simmer for approximately 20 minutes.
- Meanwhile shred and core the cabbage, blanch in hot water and refresh, before adding to the casserole.
- Simmer for 5 minutes before serving.

SOUTHERN BUTTER BEAN SOUP WITH SMOKED SAUSAGE
This is a great comforting soup on a chilly day. It may take a while, but it is well worth the time it takes. It's an easy, flavorful soup to make. I like to serve this with cornbread muffins and butter. I hope you give it a try some time - I think you will enjoy it.

- 1. In a large stock pot add 8 cups of water and the ham hocks. Bring to a boil, then turn the heat to medium low and simmer ham hocks for 2 hours.
- 2. To the pot add dry beans, onion, bell pepper, sugar, salt, pepper, jalapeno, garlic, and thyme. Simmer for another hour. Note - the jalapeno will add flavor without the soup being spicy.
- 3. Remove ham hocks and discard jalapeno. Add chicken broth and diced smoked sausage. Simmer for 20 minutes.
- 4. Remove ham from the ham hocks and return back to the soup pot.
- 5. Taste for seasoning and serve with your favorite bread. Corn bread is a favorite of ours.
BUTTER BEAN AND SAUSAGE SOUP
This is my spicy version of a classic white bean and sausage soup. I puree one can of the beans and leave the other undrained for thickness and richness. All of the herb measurements are approximate - I never really measure, just add until it looks right!! This is so quick and easy and especially satisfying on a chilly day!

Steps:
- Drain 1 can of beans and puree them with 2 cups of the chicken broth.
- Brown the sausage in a soup pot and drain.
- Add bean puree, remaining chicken broth, diced tomatoes, remaining can of beans with its liquid, and all seasonings.
- Bring to a boil and add pasta.
- Reduce heat, cover and simmer until pasta is tender.
- Serve with grated parmesan if desired.
