2 tablespoons olive oil
½ large yellow onion, chopped
1 pound ground beef
1 (16 ounce) can refried beans
1 (1 ounce) package burrito seasoning
1 (14.5 ounce) package tortilla chips
1 (10.75 ounce) can condensed cream of mushroom soup
4 ounces sour cream
2 ½ cups shredded Mexican cheese blend
1 (8 ounce) jar salsa

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Coat a casserole dish with cooking spray.
  • Heat olive oil in a large skillet over medium heat. Add onion and cook until translucent, 3 to 5 minutes. Add beef and increase heat to medium-high. Cook and stir until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Combine refried beans and burrito seasoning in a bowl and mix well. Add mixture to the beef in the skillet and stir well.
  • Mix cream of mushroom soup and sour cream together in a bowl.
  • Place a layer of chips into the prepared casserole dish to just cover the bottom. Follow by 1/2 the meat mixture, 1/2 the soup mixture, 1 cup shredded Mexican cheese blend, and 1/2 the salsa. Repeat layers and top with remaining cheese.
  • Bake in the preheated oven, uncovered, until hot and bubbly, 20 to 30 minutes.

2 pounds ground beef
1 package taco seasoning mix
¼ cup water
1 (28 ounce) can mild enchilada sauce
1 (16 ounce) can refried beans
1 (15.25 ounce) can whole kernel corn, drained
8 tortillas, cut into 2-inch strips
2 cups shredded Mexican cheese blend

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Add taco seasoning and water; cook and stir until meat is coated, about 5 minutes more. Add enchilada sauce, refried beans, and corn; stir to combine.
  • Place a layer of tortilla strips in the bottom of a baking dish. Top with a layer of meat mixture, more tortilla strips, and Mexican cheese; repeat layers as necessary. End with a layer of Mexican cheese.

8 frozen burritos, unwrapped
2 10-ounce cans red enchilada sauce
2 cups shredded Mexican cheese
sour cream
salsa
cilantro, optional

Steps:

  • Preheat oven to 375 degrees F.
  • Arrange burritos in a 9x13" baking dish, 6 in a row, and 2 turned sideways next to the row to fill out the dish. Top with enchilada sauce.
  • Place in the preheated oven and bake for 30 minutes. Add cheese and continue baking until the cheese is melted (about 5 more minutes).
  • Top with sour cream, salsa, and cilantro if desired.

2-2½ lb ground meat
1/2 c finely chopped onion
1 can(s) refried beans
8 oz can of tomato sauce
1-2 pkg mexican spices (or use chili powder etc)
10 burrito skins
1 can(s) enchilada sauce (red)
2 pkg spanish rice mixture
1/2 lb skinless smoked sausage, cut into small slices then quartered
8 oz shredded sharp cheddar cheese (or more if desired)
4 oz shredded pepper jack cheese

Steps:

  • 1. Rice: Prepare rice according to package directions, add tomato sauce and chopped smoked sausage. If needed, add spices to pep it up a bit. When cooked, spread in baking pan
  • 2. Burritos: Brown onion in a small amount of oil, then add meat and cook until no longer pink and drain. Add refried beans, tomato sauce and spices to your taste preferences (I like it kind of spicey). You can use a package of taco seasoning if desired. Should be thick, not soupy.
  • 3. Divide meat/bean mixture into 10 equal portions and place 1 portion on each of the 10 burrito skins. Spread meat mixture across burrito and add some of the cheese if desired. Roll up and place seam side down on top of rice.
  • 4. When all of the burritos are in the pan, pour the red sauce over all of the burritos and use a spoon to spread the sauce all over to coat the burrito skins so they are all covered. This keeps the burrito skins from getting hard.
  • 5. Cover pan with foil and bake at 350 degrees for 30-45 minutes or until heated through. Remove from oven, remove foil and sprinkle with remaining cheese and return to oven to melt cheese... Serve with sour cream and taco sauce if desired.

1 (10.5 ounce) can condensed cream of chicken or cream of mushroom soup
½ cup sour cream
1 (4 ounce) can diced green chile peppers, drained
1 cup shredded Cheddar cheese

1 avocados - peeled, pitted and sliced
1 (2.25 ounce) can sliced black olives, drained
½ cup salsa

This easy chicken burrito casserole is a delicious Mexican dish for a busy weeknight dinner. It's a great recipe for using leftover rice, leftover chicken or rotisserie chicken.

3 cups cooked chicken breast, chopped
2 cups salsa (I like medium hot chunky style)
2 cups cooked rice
1 can refried beans
1 cup cheese, (shredded cheddar or Mexican blend)
8 flour tortillas (6" -8" tortillas)
1/2 cup mozzarella cheeses shredded

Steps:

  • Preheat oven to 350°F. Prepare a baking dish or casserole dish by spraying it with nonstick cooking spray. I used a 9x13 inch baking dish.
  • Spread all of the tortillas with the refried beans and cut in half. Using 8 halfs line the bottom of the casserole dish. I like to place the straight edge of tortilla against the sides of the dish and overlap the middle.
  • Next take half of the chopped chicken add evenly layer over the tortillas.
  • Mix the cooked rice with 1/2 of the salsa and spread over the chicken.
  • Add another layer of tortillas, then the rest of the chicken.
  • For the last layer, add the rest of the salsa and the rest of the cheddar and mozzarella cheese.
  • Place in the oven for about 30 minutes until the cheese has browned.
  • Let sit for 5 minutes before serving.
  • Top with your favorite burrito toppings like sour cream, black olives, guacamole, green onions, jalapenos, etc.

1 small white onion, chopped
2 cups cooked rice
1 (10 3/4 ounce) can condensed cheddar cheese soup or 1 (10 3/4 ounce) can nacho cheese soup
1 (1 1/4 ounce) packet taco seasoning
12 burrito-size flour tortillas
1 (16 ounce) salsa
1 (15 ounce) can black beans, drained
1 (29 ounce) can corn, drained
4 cups shredded cheddar cheese
1 (10 ounce) can enchilada sauce
2 tablespoons cilantro

Steps:

  • Preheat oven to 350.
  • In a large skillet, brown ground beef with onion; drain. Return beef & onions to hot skillet off of heat and stir in rice, undiluted soup and taco seasoning. Mix together well.
  • Lightly spray a lasagna pan/ 13" x 9" pan with nonstick cooking spray.
  • Line bottom of pan with 4 of the tortillas.
  • Evenly cover tortillas with half of the meat/rice mixture, then 1/2 of the salsa, then sprinkle with half of the corn, half of the black beans and 1 cup of cheese.
  • Cover again with 4 more of the tortillas and repeat these layers again.
  • Finally, top with the last 4 remaining tortillas. Pour entire can of enchilada sauce over top. Sprinkle with remaining 2 cups cheese and cilantro.
  • Bake at 350 for about 25 minutes.
  • Serve with a dallop of sour cream, if desired.

6 large flour tortillas
1 (16 ounce) can refried beans
2 -3 cups shredded taco cheese or 2 -3 cups cheddar cheese
1 (10 3/4 ounce) can cream of mushroom soup
4 ounces sour cream
jarred hot sauce, if desired to spice it up

Steps:

  • Brown ground meat/turkey & onion; drain.
  • Add taco seasoning and stir in refried beans.
  • Mix soup and sour cream in a separate bowl.
  • Spread 1/2 sour cream mixture in the bottom of a casserole dish.
  • Tear up 3 tortillas and spread over sour cream mixture.
  • Put 1/2 the meat bean mixture over that.
  • Add a layer of cheese.
  • You could put some hot sauce on this now.
  • Repeat the layers.
  • Sprinkle cheese over the top and bake, uncovered, at 350°F for 20-30 minutes.
