8 lb bone-in spiral sliced half ham
2 Tbsp butter, melted
3 Tbsp honey
1 1/2 cups granulated sugar
1/2 tsp seasoned salt
1/2 tsp onion powder
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground ginger
1/4 tsp ground cloves
1/4 tsp paprika
pinch of allspice

Steps:

  • Trim ham if needed, then place in slow cooker. Combine melted butter and honey, then massage over ham, getting in between the slices a little. Cover and cook on LOW 4-5 hours.
  • At the end of the cooking time, preheat broiler to HIGH, and line a roasting pan with heavy duty aluminum foil.
  • Combine sugar, seasoned salt, onion powder, ground cinnamon, ground nutmeg, ground ginger, ground cloves, paprika and allspice in a small bowl. Pat half of the sugar mixture over the top of the ham.
  • Broil for several minutes, until bubbly and caramelized, then remove from oven.
  • To a small saucepan, add remaining sugar mixture. Add 3 Tbsp of either water or ham juices from bottom of the slow cooker. A combination of water/ham juice and bourbon is a nice alternative! Stir, and heat to a boil. Boil for about a minute, then remove from heat.
  • Brush or pour glaze over the ham, then broil again for a minute or two (careful... don't let it burn!). Remove from oven and let ham rest for 5-10 minutes.
  • Serve warm or cold and enjoy!

3/4 lb macaroni
1/2 lb ham
2 egg yolks
2 ounces cheese, grated
1/2 cup sour cream
salt and pepper

Steps:

  • Bring salted water to the boil and gently add the macaroni. Cook until tender, that is about 10 to 15 minutes. Strain and while still in the sieve pass quickly under cold running water.
  • Chop the ham into small pieces, then put with the macaroni in a casserole. Season with salt and pepper.
  • Beat the eggs and the cream together and pour over the macaroni. Sprinkle with cheese, and bake in a 350F oven until the sauce has cooked and become a light brown.

1 piece boneless fully cooked ham (16 ounces)
6 medium carrots, halved lengthwise and cut into thirds
4 medium red potatoes, quartered
2 medium onions, cut into wedges
1 bay leaf
1 teaspoon dried thyme
1 teaspoon peppercorns
1 garlic clove, halved
1/2 teaspoon whole allspice
1/2 medium head cabbage, cut into wedges

Steps:

  • Place the ham, carrots, potatoes and onions in a Dutch oven. Place the bay leaf, thyme, peppercorns, garlic and allspice on a double thickness of cheesecloth; bring up corners of cloth and tie with kitchen string. , Add to pan. Add water just to cover the ham and vegetables; bring to a boil. Reduce heat; cover and simmer for 10 minutes. Add cabbage; cover and simmer 15-20 minutes longer or until vegetables are tender; drain. Discard spice bag.

There are many reasons for making your own holiday ham: bragging rights that you actually did this, but also that you can flavor your ham any way you want and you can control the salt content.

1 (7 pound) fresh, bone-in pork shoulder ("picnic") arm roast, with the skin still on
6 quarts water, divided
18 ounces kosher salt
2 cups brown sugar
7 teaspoons pink salt #1 (curing salt)
1 tablespoon pickling spice, or to taste
¼ cup Dijon mustard
¼ cup maple syrup
1 pinch cayenne pepper
1 pinch salt

Steps:

  • Place kosher salt, brown sugar, pickling spice, and pink salt in a container large enough to hold the brine and the ham.
  • Bring 2 quarts of water to a boil and pour over the brine ingredients; whisk to dissolve. Pour in 1 gallon fresh cold water to cool down the mixture.
  • Score the skin side of the pork roast with a sharp knife. Cut into the fat beneath the skin but not into the meat. Score about 1 inch apart, then score in the opposite direction to get the classic diamond-shaped pattern.
  • Lower scored roast into the cooled brine, skin side up. Use a plate to weigh down the roast so that it cures fully submerged in the liquid. Refrigerate for 1 day for every 2 pounds of pork (for a 7 pound roast, cure for at least 2 1/2 days). Turn the roast over halfway through the brining process.
  • Remove roast from brining liquid. Discard the brining liquid and transfer the roast back to the brining container. Cover the roast with fresh cold water to rinse off some of the salt. Depending on how salty you want your ham, you can soak it for just a few minutes or overnight. Remove roast from the water and blot dry with paper towels.
  • Preheat oven to 325 degrees F. Add a cup of water to a roasting pan with 2 whole star anise. Place roast on a rack in the roasting pan.
  • Roast until ham reaches an internal temperature of 130 to 135 degrees F, about 2 hours. Ham will not be fully cooked at this point. If water has nearly evaporated, add a splash more. Increase oven temperature to 425 degrees F. Continue to roast until skin is browned and crispy and ham reaches an internal temperature of 145 to 150 degrees F.
  • To make the optional glaze, mix the mustard, maple syrup, cayenne pepper, and salt together in a bowl. Brush glaze on the ham at this point, not before. Return roast to oven for about 5 minutes to crisp it even further.
