BEER BRAISED ONIONS
These onions are great with burgers (try it with my recipe #309195).They can be cooked ahead, cooled and kept in the fridge. When you need them, simmer them gently. When they are hot, add a splash of beer to perk up the flavour.

Steps:
- Melt the butter in a pan. Add the onions and cook until tender.
- Add 6 fl oz beer, sugar and salt. Cook approx 16/18 minutes until the beer is absorbed and the onions are starting to brown.
- Add the remaining beer and simmer gently.
- Serve warm to accompany burgers.

Tasty burgers that are super easy to make. I like to add a fried egg to the burger for extra goodness.

Steps:
- 1. Heat olive oil in large skillet over medium high heat. Slice onions into rounds and separate. Add to oil and saute until caramelized about 10 minutes. Add the Worcestershire sauce and beer. Turn heat to medium and let cook until beer has evaporated and the onions are golden. Season with some salt.
- 2. Mix the pork with the spices. Shape into patties and fry until done. Top with caramelized onions, cheese and serve on buns with favorite toppings.

- For the Beer-Braised Onions:.
- Melt the butter in a large heavy skillet.
- Add the onions and cook while stirring frequently over medium heat for 5 to 6 minutes, or until tender.
- Add 3/4 cup beer and the sugar, and cook until beer is absorbed and the onions become lightly browned, about 15 minutes.
- For the burgers:.
- Pre-heat the barbeque on high.
- In a large bowl, gently but thoroughly combine the beef, garlic, red pepper, 1/4 cup beer, dijon, salt and pepper.
- Form into 4 patties 1" thick, and place on the grill, turning heat down to medium.
- Grill them for 4-6 minutes per side, or until nearly the desired doneness.
- Top each burger with 1/2 cup grated cheese, and heat till slightly melted.
- Serve on toasted buns and top each with the beer-braised onions.

- Combine beef, beer, Tabasco and Worcestershire sauce. Season to taste.
- Form into four 1" thick patties. Wrap in cling film and chill for a couple of hours.
- Grill patties; top with cheese and beer braised onions.
