This is the best recipe for creamy and delicious peanut butter fudge I have ever used. It is great for sharing at work.

½ cup butter
1 (16 ounce) package brown sugar
½ cup milk
¾ cup peanut butter
1 teaspoon vanilla extract
3 ½ cups confectioners' sugar

Steps:

  • Melt butter in a medium saucepan over medium heat. Stir in brown sugar and milk. Bring to a boil and boil for 2 minutes, stirring frequently. Remove from heat. Stir in peanut butter and vanilla. Pour over confectioners' sugar in a large mixing bowl. Beat until smooth; pour into an 8x8 inch dish. Chill until firm and cut into squares.

1 cup reduced-fat creamy peanut butter
1 teaspoon pure vanilla extract
1 1/2 cups Splenda granular

Steps:

  • Melt butter in sauce pan.
  • Add peanut butter and stir until smooth
  • Add vanilla and splenda to peanut butter mixture and stir to combine with a wooden spoon.
  • Pour into an 8 x 8 pan that has been either buttered, Pam'ed or lined with wax paper
  • Place a second piece of waxed paper on the surface of the fudge and refrigerate until cool.
  • Cut into 1-inch pieces and store in an airtight container for up to a week.

  • Line an 8-inch square baking pan with waxed paper.

This is a GREAT recipe for Peanut Butter lovers (ME)! I'm writing this EXACTLY as my dietician told me so that we diabetics can eat it safely! ONE, I SAY AGAIN, ONE serving ONLY per day!!

3/4 c splenda/sugar blend
1/2 c whole milk
1 tsp pure vanilla extract
3/4 c creamy or chunky peanut butter

Steps:

  • 1. Put the Splenda blend & milk into the top of a double boiler set on medium high heat
  • 2. Bring it to a boil
  • 3. Boil 2 1/2 minutes
  • 4. Take it off the heat
  • 5. Add the peanut butter and vanilla
  • 6. Stir just until mixed well
  • 7. Pour into a greased 9 X 9 pan
  • 8. Cool & cut
