TURKEY MEATLOAF

This ground turkey meatloaf is a lighter spin on a classic comfort food. It's packed with lean protein and tastes moist, tender and super flavorful.

2 pounds 90% lean ground turkey (, or 1 pound ground beef and 1 pound ground turkey)
1/2 cup panko breadcrumbs
1/4 cup whole milk (, or beef broth, plus more as needed)
2 large eggs (, whisked)
2-3 Tablespoons fresh parsley (, or 2 teaspoons dried parsley)
2 Tablespoons Worcestershire sauce
2 Tablespoons ketchup
1 1/4 teaspoons Kosher salt
1/4 teaspoon ground black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 cup ketchup or BBQ sauce (, I like to mix half and half)
2 Tablespoons light brown sugar

Steps:

  • Preheat the oven to 375°F. Line a baking sheet or 9x5-inch loaf pan with foil. Lightly spray with nonstick spray and set aside.
  • In a large bowl, mix the turkey, breadcrumbs, milk, eggs, parsley, Worcestershire sauce, ketchup, salt, pepper, garlic powder, and onion powder until combined. Don't overmix or the meat won't be as tender.
  • Form the mixture into a loaf shape on the baking sheet. In a small bowl, mix together the ketchup and/or BBQ sauce and brown sugar. Pour over the top of the meatloaf. Add pepper on top, if desired.
  • Bake meatloaf 45 to 55 minutes, or until the center reaches 160°F. Allow to rest 5 to 10 minutes before slicing into 8 to 10 slices.

1/4 onion, roughly chopped
3 carrots (1 roughly chopped, 2 grated)
2 cloves garlic
1 1/2 pounds lean ground turkey
1 large egg
1/2 cup panko
1/4 cup whole milk
1/3 cup plus 2 tablespoons Buffalo hot sauce (such as Frank?s RedHot)
Kosher salt and freshly ground pepper
2 tablespoons unsalted butter, melted
2 cups finely chopped broccoli florets
4 stalks celery, thinly sliced
1/2 cup blue cheese dressing

Steps:

  • Preheat the oven to 450˚ F. Combine the onion, chopped carrot and garlic in a food processor and pulse until finely chopped; transfer to a large bowl. Add the turkey, egg, panko, milk, 2 tablespoons hot sauce, 1/4 teaspoon salt and a few grinds of pepper. Mix well with your hands. Form into four 3/4-inch-thick oval patties on a rimmed baking sheet.
  • Bake the patties until lightly browned, firm and a thermometer inserted into the centers registers 160˚ F, 20 to 25 minutes.
  • Whisk the melted butter and remaining 1/3 cup hot sauce in a bowl. Brush the tops of the meatloaves with half of the sauce, then return to the oven until the sauce is baked in, about 4 minutes. Remove from the oven and brush with the remaining sauce.
  • Transfer the meatloaves to plates. Toss the broccoli, grated carrots and celery with the blue cheese dressing; serve with the meatloaves.

BUFFALO CHICKEN MEATLOAF

3 tablespoons ketchup
1 tablespoon hot sauce
Nonstick cooking spray, for spraying the loaf pan
3 tablespoons unsalted butter
3 stalks celery, small diced (about 1 cup), celery leaves reserved for garnish
1/2 medium onion, small diced (about 1 cup)
3 tablespoons hot sauce
1 1/2 pounds ground chicken, 50/50 light and dark
1 cup blue cheese crumbles
1 1/2 teaspoons kosher salt
2 teaspoons coarsely ground black pepper
2 large eggs
2 1/4 cups panko breadcrumbs
1/4 cup grated Parmesan

Steps:

  • For the sauce: Whisk together the ketchup and hot sauce in a small bowl and set aside.
  • For the meatloaf: Preheat the oven to 350 degrees F. Grease a 9-by-5-by-3-inch loaf pan with cooking spray and set aside.
  • Melt the butter in a medium saute pan over medium-high heat. Once melted, saute the celery and onion until softened, 3 to 5 minutes. Transfer the mixture, with the drippings, to a large bowl. Add the hot sauce to the bowl and stir to combine. Add the chicken, blue cheese, salt, pepper, eggs and 1 1/2 cups of the panko and mix until well combined.
  • Press the mixture into the prepared loaf pan, pressing more in the center of the loaf to create a divot. This will allow the meatloaf to bake evenly and not create a mound after it is baked. Spread the sauce over the top of the meatloaf. Mix the Parmesan with 1/2 cup of the panko and sprinkle the mixture on top of the sauce. Bake until the center is set and the top is golden brown, 45 minutes to an hour. Let rest about 15 minutes before cutting to serve.
  • Meanwhile, toast the remaining 1/4 cup panko in a dry pan until lightly golden and set aside.
  • Garnish the meatloaf slices with the toasted panko and chopped celery leaves.

1 tablespoon apple cider vinegar
1 tablespoon honey
1 lb lean ground turkey
1 cup zucchini, shredded, squeezed gently of excess moisture with kitchen towels
1 cup yellow onion, finely diced
2 cloves garlic cloves, minced
1 egg, whisked
1 tablespoon dijon mustard
1 tablespoon honey
2 tablespoons Sauce
½ cup panko bread crumbs
½ teaspoon salt
½ teaspoon pepper
1 teaspoon dried oregano
1 teaspoon dried basil
2 tablespoons fresh parsley, chopped
2 slices mozzarella cheese
parsley, to taste

Steps:

  • Preheat the oven to 375˚F (190˚C).
  • Make the sauce: In a medium bowl, stir together the tomato sauce, apple cider vinegar, and honey. Set aside.
  • Make the meatloaf: In a large bowl, combine the ground turkey, zucchini, onion, garlic, egg, Dijon mustard, honey, 2 tablespoons of the tomato sauce, bread crumbs, salt, pepper, oregano, basil, and parsley. Mix well.
  • Add half of the meatloaf mixture to a greased loaf pan and flatten to form an even layer.
  • Layer the cheese over the meatloaf layer. Top with the rest of the meatloaf and smooth the top.
  • Top the meatloaf with half of the tomato sauce mixture, using a spoon or rubber spatula to spread evenly. Reserve the rest of the tomato sauce.
  • Bake the meatloaf for 1 hour, or until the internal temperature reads 160˚F (70˚C) when tested with a meat thermometer.
  • When the meatloaf is cooked through, warm the reserved tomato sauce in the microwave or a skillet, then drizzle on top of the meatloaf.
  • Garnish with fresh parsley and serve with your favorite sides. (We used mashed sweet potatoes and asparagus.)

1 slice multigrain bread
1 pound ground buffalo meat
1 onion, diced
1 egg, lightly beaten
1 teaspoon mustard powder
¾ cup canned diced tomatoes, drained
1 teaspoon salt
1 dash ground black pepper
⅓ cup ketchup

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Crumble the bread slice into crumbs and set aside. Grease an 8x8 inch baking dish.
  • Thoroughly mix ground buffalo meat, onion, egg, ground mustard, tomatoes, salt, pepper, and bread crumbs in a large bowl.
  • Form the meat mixture into a loaf shape about 8x4 inches and place into the middle of the baking dish. Apply ketchup to the top and sides of the meatloaf.
  • Bake in preheated oven until meat is no longer pink and ketchup forms a glaze over the meatloaf, 1 1/2 hours. Let stand 10 minutes before serving.
