1 (8 ounce) package cream cheese, softened
2 cooked chicken breasts, shredded
½ cup buffalo wing sauce
¼ cup ranch salad dressing
¼ cup sour cream
1 ½ cups shredded Colby-Monterey Jack cheese
1 (16 ounce) package scoop-shaped tortilla chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix cream cheese, chicken, buffalo wing sauce, ranch dressing, and sour cream together in a large bowl; transfer to a 9x13-inch baking dish. Evenly sprinkle Colby-Monterey Jack cheese over dip.
  • Bake in the preheated oven until cheese is melted and lightly browned, 25 to 30 minutes. Serve with tortilla chips.

1 (9 3/4 ounce) can chicken, drained
1/2 cup ranch salad dressing
1/4 cup hot sauce (I like franks)
1 (8 ounce) package Philadelphia Cream Cheese
16 ounces shredded cheddar cheese

Steps:

  • Mix all ingredients except cheese.
  • Bake at 350°F for 25 minutes and stir after 12 minutes.
  • Optional take a cup of cheese and mix it in the mixture when you stir after 12 minutes.
  • Place back in oven for 8 minutes.
  • Take remaining cheese and put it on top of the mixture and replace in oven for 5 minutes or until cheese is melted.
  • I usually double this recipe.

3 pounds skinless, boneless chicken breasts
1 onion, chopped
2 stalks celery, chopped
1 tablespoon garlic, minced
¼ cup full-fat coconut milk
¼ cup mayonnaise
1 tablespoon ranch dressing mix
½ cup hot sauce
¼ cup salted butter
2 tablespoons apple cider vinegar
¼ cup nutritional yeast
1 tablespoon nutritional yeast
2 stalks celery, julienned
1 red bell peppers, cut into strips
1 yellow bell pepper, cut into strips
1 fresh seeded cucumber, cut into strips

Steps:

  • Place chicken breasts in a multi-functional pressure cooker (such as Instant Pot®). Add onion, celery, garlic, coconut milk, mayonnaise, ranch dressing mix, hot sauce, butter, and apple cider vinegar. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 20 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Shred chicken using 2 forks.
  • Select saute setting and stir in 1/4 cup nutritional yeast. Simmer for 5 minutes. Transfer to a serving dish and sprinkle with remaining 1 tablespoon nutritional yeast.
  • Serve with sliced celery, red and yellow bell peppers, and cucumbers for dipping.

3-4 Boneless/ skinless Chicken Breasts
1 Bottle Franks Red Hot Sauce
2- 8 oz. Cream Cheese
1-16 oz. Bottle Ranch Dressing
1/2 cup chopped Celery (optional)
1-8 oz. pkg. Sharp Cheddar Cheese

Steps:

  • Boil chicken breasts. Cool and shred with fork. In a 9x13 pan combine shredded chicken with bottle of hot sauce. (for better results do this the night before, however you can do it all the same day). Over medium heat in saucepan, melt cream cheese with ranch dressing, stir until smooth and hot. Pour over chicken. Sprinkle ½ cup chopped celery on top. Bake 375 degrees for 20 minutes. Add cheddar cheese and bake until bubbly. Let stand 10 minutes before serving. Serve with Tostitos scoops.
