TACO MAC BUFFALO HOT WINGS
My husband loves Taco Mac. We moved to Denver recently and no Taco Mac.This is my attempt to duplicate them for him. He loved them so I guess they are close.

Steps:
- Combine hot sauce, butter, Worcestershire sauce, garlic and sugar; mix well in a pot and warm the sauce until butter is melted. Keep warm until ready to use.
- If the wings are frozen, be sure to defrost and dry them.
- If they have not been clipped yet, clip the tips off, and separate at the joint.
- Wash them well in cool water. Season with salt, paprika and cayenne.
- Put on a paper towel covered rack/tray in the refrigerator overnight to air dry. ( This is critical if you want to match the texture of Taco Macs, especially if they were frozen).
- Oil should be about 375 degrees. Deep fry the wings in batches until just golden, about 10 to 15 minutes or until some parts of the wings begin to turn dark brown.
- Remove the wings from the oil to a paper towel covered pain to drain and put in a warm oven (200 degrees) while cooking the remaining wings. But don't let them sit too long, because you want to serve the wings hot.
- Put the wings into a large bowl with lid. Add the hot sauce. Put on the lid, then shake making sure to coat all the wings evenly. Serve any left over sauce on the side.
- Serve with Bleu cheese dressing and celery sticks. Don't forget the beer!
OVEN-BAKED BUFFALO HOT WINGS (PALEO)
This is a great Buffalo Hot Wings recipe whether you are paleo or not. If you are really strict paleo, start with a paleo compliant hot sauce (I have two paleo compliant hot sauces to chose from on this site). If you aren't that picky, use Franks Red Hot Buffalo Sauce.

- Preheat oven 250°F Line baking sheet with foil. Spray baking rack with Olive oil Pam and place in pan.
- Spray the chicken pieces with Olive oil Pam, then salt and pepper to taste. Season with garlic powder.
- In a large zip lock bag, place 1/4 cup of the baking powder and 1 tsp of cayenne pepper. Add half the chicken and toss until coated. Place on the cooking rack. Repeat with other half of chicken and remaining powder and cayenne.
- Bake coated chicken wings for 20 min at 250 F, then increase heat to 425 F and bake for 20 more minutes. Turn pieces over and bake for another 20 min or until golden brown and chicken is thoroughly cooked.
- If making your own buffalo sauce, heat prepared hot sauce (commercial or homemade) and butter in a sauce pan until well blended. Pour sauce in a large bowl. If using a commercially prepared buffalo sauce just pour it in a large bowl. I highly recommend my habanero mango sauce (also paleo compliant), but Franks Red Hot Buffalo Sauce is quite good and not terrible from a paleo point of view.
- Toss all the cooked chicken until evenly coated. Transfer to a platter and serve with your favorite sides.
BUFFALO HOT CHICKEN WINGS OR TENDERS
This is adapted from a diabetic hot wings recipe that I came across while searching for something my husband would like. I've always wondered where the term "Buffalo hot wings" came from and I learned that the traditional hot sauce was created over 45 years in a Buffalo, New York pub! You can honor the Buffalo tradition by serving blue cheese dressing as your dipping sauce...use a low-fat or a fat-free dressing if you are trying to eat healthier. And as you know, the chihcken tenders have less fat than the wings. I hope you will try this recipe and let me know what you think!

- Sprinkle the onion and garlic powders, salt and pepper on the chicken pieces.
- In a medium skillet, melt the margarine.
- Add chicken and brown over medium heat about 3-4 minutes for each side. Be sure to brown well as that will ensure you taste the seasonings.
- While chicken is browning, mix together the hot red pepper sauce, apple cider vinegar and water.
- When both sides of chicken are brown, sprinkle the sauce mixture over the chicken pieces. Continue cooking 4-5 minutes, turning chicken midway.
- After about 5 minutes, turn the heat to medium high; cook about 2 minutes until the sauce is completely reduced and the chicken is really coated with the sauce.
- Note: Cook time will vary with the size of your chicken pieces. Smaller pieces will take less time.

- While chicken is cooking, mix together melted butter, hot sauce, cayenne and Worcestershire sauce and keep warm; prepare celery and dressing/dip and set aside.
- Rinse chicken wings and pat dry.
- Season chicken liberally with salt and pepper.
- Deep-fry wings in at least 3 inches of hot oil for about 20 minutes or bake for about 35-45 minutes at 375-400F until cooked through and crispy.
- Drain chicken wings on paper or paper toweling.

- Discard small tip of each wing, split at large joint.
- Drummettes are ready to cook as is.

- Cut off tips and separate each wing at the joint. Sprinkle wings with salt and pepper to taste. Heat oil in deep fryer or large heavy pot. When it is quite hot, add half the wings and cook about 10 minutes, stirring occasionally.

BUFFALO HOT WINGS-ANCHOR BAR STYLE
These are the best hot wings IMHO. I don't like my hands to be really sloppy and the trip through the oven after frying solves this. Add as much heat as you like. I prefer the flavor of Red Hot sauce, but use your favorite. Add some Cayenne pepper to kick it to your desired heat level. Serve with my blue cheese dressing. Serves one hungry wing-lover or up to 4.

- Preheat the oven to 375 degrees F.
- Spray a baking sheet (or baking pan) with nonstick spray and set aside.
- Using a blender or food processor, grind cereal to a breadcrumb-like consistency. Transfer to a small bowl and set aside.
- Crush potato chips in a sealed bag, and then add to the bowl of cereal crumbs. Add spices and mix well.

- 1. Combine 1/2 cup soy sauce, Italian dressing, and chicken wings in a large, zip-top bag. Close bag and refrigerate 4 hours to overnight. Preheat an outdoor grill for medium heat. In a small saucepan, melt the butter. Stir in the 1 teaspoon soy sauce and the hot pepper sauce. Turn off heat and reserve. Remove the chicken wings from the marinade and pat dry. Cook the wings on the preheated grill, turning occasionally, until the chicken is well browned and no longer pink, 25 to 30 minutes. Place grilled wings in a large bowl. - 1. Completely thaw wings and pat dry with paper towels. Deep fry at 375 for 10 or 15 minutes, depending on how crispy you like them. In a bowl with an airtight lid, combine the two bottles of hot sauces and mix well. Dump in the cooked wings, cover with lid and shake until all wings are thoroughly covered in sauce. I have found that the "Hot Buffalo" is REALLY hot!! So hot that I didn't enjoy it, and I really like hot food. And the "Buffalo" was too mild. So, I mix the plain "Buffalo" with the "Hot Buffalo" and it comes out perfect.
