BUFFALO CHICKEN WINGS

Steps:
- Cut each chicken wing at joints to make 3 pieces; discard tip. Cut off excess skin; discard.
- Heat oven to 425°. Melt margarine in rectangular pan, 13x9x2 inches, in oven. Mix flour, salt and pepper in large heavy-duty resealable plastic bag. Add chicken; seal bag tightly. Shake until chicken is completely coated with flour mixture. Place in pan.
- Bake uncovered 20 minutes; turn chicken. Mix barbecue sauce, pepper sauce, Cajun seasoning and cumin in medium bowl. Pour over chicken; toss until evenly coated with sauce. Bake uncovered 10 to 12 minutes longer or until light golden brown on outside and juice is no longer pink when centers of thickest pieces are cut.
- Serve with dressing and celery sticks.

BUFFALO CHICKEN WINGS W/ BLUE CHEESE DIP
These wings are baked, not fried, which simplifies the prep. The recipe was adapted from The Anchor Bar in Buffalo, the bar where these wings were originally served.

Steps:
- Mix all dip ingredients and chill overnight if possible.
- Spread wings out on a lightly oiled cookie sheet.
- Mix melted butter, vinegar, and hot pepper sauce.
- Brush butter mixture onto wings.
- (Can do this ahead and hold for 2 hours maximum if at room temp).
- Bake at 400° for 20- 30 minutes, or until wings are cooked through.
- Baste one time during cooking.
- Sprinkle cayenne during last 5 minutes of cooking for more heat.
- Serve hot with dip and celery sticks.
FRIED BUFFALO WINGS WITH BLUE CHEESE DIP

- Make the dip: Pulse the sour cream, blue cheese, mayonnaise, garlic, milk and lemon juice in a food processor until combined but still chunky. Season with salt and pepper. Cover and refrigerate until ready to serve.
- Make the wings: Heat 1 inch of vegetable oil in a large deep skillet over high heat until a deep-fry thermometer registers 375 degrees F. Set a rack on a rimmed baking sheet.
- Mix the flour and paprika in a shallow dish. Dredge the wings in the flour mixture to coat, tapping off the excess. Fry the wings in batches, turning as needed, until cooked through and deep golden brown, about 15 minutes. (Return the oil to 375 degrees F between batches.) Remove with tongs and transfer to the rack to drain.
- Meanwhile, combine the hot sauce, butter and honey in a medium pot over medium heat until the butter melts. Continue to cook, stirring, until the sauce thickens slightly, about 10 minutes. Reserve one-quarter of the sauce for serving. Add the cooked wings to the pot and toss with the remaining sauce. Serve with the blue cheese dip and reserved sauce.
BUFFALO CHICKEN WINGS
Steps:
- Preheat the broiler.
- Cut the chicken wings in thirds, cutting between the bones. Discard the wing tips. Melt the butter and add the cayenne, hot sauce, and salt. Put the wings on a sheet pan and brush them with the melted butter. Broil them about 3 inches below the heat for 8 minutes. Turn the wings, brush them again with the butter, and broil for 4 more minutes or until cooked.
- For the sauce, place the blue cheese, mayonnaise, sour cream, milk, Worcestershire, salt, and pepper in the bowl of a food processor fitted with a steel blade. Process until almost smooth.
- Serve the chicken wings hot or at room temperature with the blue cheese dip and celery sticks.
CLASSIC BUFFALO WINGS WITH BLUE CHEESE DRESSING
There are a lot of really good recipes with twists and turns, but when I want wings that have that classic, original restaurant-style flavor , I always turn to these. This is my own stand-by recipe. Enjoy!!

- 1. For wings: In a small bowl mix together the flour, salt, cayenne, paprika and garlic powder. Place chicken wings in a large glass dish or bowl and sprinkle flour mixture over them and toss until they are evenly coated. Cover dish or bowl and refrigerate for 1 hour. (This sets the flour.) Heat oil in a deep fryer or deep pan to 375 degrees. The oil should be just enough to cover wings entirely, an inch or so deep. Combine the butter, hot sauce, pepper and garlic powder in a small saucepan over low heat. Stir together and heat until butter is melted and mixture is well blended. Remove from heat and reserve for serving. Fry coated wings in hot oil for 10 to 15 minutes, or until parts of wings begin to turn brown. Remove from heat, place wings in large bowl, add hot sauce mixture and toss and stir together til coated. Pour onto large serving platter.
- 2. For blue cheese dressing: In a medium bowl, whisk together ingredients, until the dressing is creamy but still slightly lumpy from the blue cheese. Garnish with extra crumbled blue cheese if desired.
- 3. A higher quality can be subbed for the Maytag Blue if desired, such as Roquefort or Gorgonzola, but it isn't really necessary for this and Maytag is really quite good.
- 4. Serve platter of wings, hot, with lots of napkins, blue cheese dressing for dipping, and celery sticks with the tops chilled in a glass or small vase with ice water.
BLUE CHEESE SALAD DRESSING OR DIP (GREAT FOR BUFFALO WINGS)
This makes a great dip for buffalo wings! You can add in a couple teaspoons Worcestershire sauce also if desired.

- In a bowl, mix sour cream, buttermilk, mayonnaise and onion salt until well blended; add oil, mix again.
- Crumble blue cheese very finely, and add to buttermilk mixture; stir to mix well.
- Chill for 4 hours or more (to blend flavors).
- Serve with salads, as a fresh veggie dip, or spicy Buffalo-style chicken wings (my husband's favorite!).
- Note: when this dressing is first made, it will appear very stiff, however it will thin out after it chills for several hours, and become just the right consistency for pouring.

- In a small bowl, combine the soy sauce, sugar, garlic, salt, orange zest and pepper; divide in half. Add chicken pieces to inner pot of large multi-cooker. Top with half the sauce and toss to coat. Lock pressure lid. Press pressure function; select poultry setting. Press timer; set to 1 minute. Start. , Let pressure release naturally for 10 minutes; quick-release any remaining pressure. , Remove chicken from inner pot with a slotted spoon to a large bowl. In a small bowl, combine chili powder, cayenne, pepper sauce and remaining sauce mixture. Discard cooking juices in inner pot and wipe clean. , Place wire rack into inner pot. Arrange chicken in a single layer on rack. Close air frying lid. Press air fry function; select poultry setting. Press temp; set to 400°. Press timer; set to 6 min. Cook chicken in batches, adding more time as necessary for wings to reach 170°. , In a small bowl, whisk dip ingredients. Serve with wings.
