2 bottles (12 ounces each) beer or nonalcoholic beer
2 tablespoons prepared mustard
1 tablespoon ketchup
8 fresh Italian sausage, bratwurst or Polish sausage links
1 large onion, thinly sliced
1 tablespoon olive oil
1 medium sweet red pepper, coarsely chopped
1 medium green pepper, coarsely chopped
1 medium onion, chopped
1 garlic clove, minced
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon pepper
8 hot dog buns, split
Spicy brown mustard

Steps:

  • In a 6-qt. stockpot, combine beer, prepared mustard and ketchup. Add sausages, sliced onion and, if necessary, water to cover. Bring to a simmer and cook, uncovered, until a thermometer inserted in sausage reads 160°, 10-12 minutes., Meanwhile, in a large skillet, heat oil over medium heat. Add peppers and chopped onion; cook and stir until tender, 6-8 minutes. Stir in garlic and seasonings; cook 30 seconds longer. Remove from heat., Remove sausages from beer mixture. Grill sausages, covered, over medium heat or broil 4 in. from heat until lightly browned, 1-2 minutes on each side. Cut each sausage lengthwise in half. Serve in buns with pepper mixture and brown mustard.

Chicken and Sausage Sandwiches with Fried Bell Peppers image

Number Of Ingredients 8

2 tablespoons olive oil, divided
2 medium red bell peppers, seeded and sliced into thin strips
1 cup onion sliced into half-moons
Salt and freshly ground black pepper to taste
1 pound cooked shredded chicken
1 cup diced chorizo, andouille, or other cooked spicy sausage
2 tablespoons balsamic vinegar
4 long rolls (submarine or hoagie rolls)

Steps:

  • Heat 1 tablespoon of the oil in a large skillet over medium-high heat. Add the bell peppers and onion and cook, stirring, until softened, about 5 minutes. Season with salt and pepper. Remove the vegetables from the skillet and set aside.
  • Heat the remaining 1 tablespoon oil in the same skillet over medium-high heat. Add the chicken and cook until golden brown, 3 to 5 minutes. Add the sausage and vinegar and cook for 1 minute to heat through.
  • Using tongs, arrange the chicken mixture on the open rolls, top with the fried peppers and serve.

This is a tasty and very easy sandwich to make. It is sort of a cross between a peppers and onion sandwich with sausage and a buffalo chicken cheese steak. You can make it as hot or mild as you like. I use this sandwich as dinner with soup and salad. A very satisfying meal. The amount of blue cheese depends on how messy or not you like your sandwich to be.

2 teaspoons vegetable oil
4 Buffalo wing-flavored chicken sausages (such as al fresco®), sliced on a bias
1 onion, sliced
1 red bell pepper, sliced
1 green bell pepper, sliced
¼ cup blue cheese salad dressing, or more to taste
3 tablespoons hot pepper sauce
2 cups baby spinach leaves
4 hoagie rolls, split lengthwise and toasted

Steps:

  • Heat oil in a skillet and tilt skillet to coat surface. Cook sausage slices in the heated skillet until nicely browned, 2 to 3 minutes per side. Add onion, red bell pepper, and green bell pepper to the sausages; cook and stir until tender, about 5 minutes. Transfer sausage mixture to a bowl.
  • Stir blue cheese dressing and hot sauce into the sausage mixture, assuring the sausage slices are coated in sauce.
