EASY MAKE-AHEAD BUFFALO CHICKEN DIP WITH BLUE CHEESE
If you love Buffalo wings, you will love this dip. It tastes just like the wings, but without the mess! It's a perfect game-day or Super Bowl snack. And, easy to prepare.

Steps:
- Preheat the oven to 350 degrees F.
- Add the softened cream cheese to a large bowl and stir until smooth and creamy. Add the dressing, buffalo sauce, 1/2 cup of the mozzarella or Monterey Jack cheese, the blue cheese, and chicken. Stir to combine.
- Place this mixture in a small baking dish that has been sprayed with non-stick cooking spray. Sprinkle the remainder of the cheese on top.
- Bake for 20 minutes, or until the dip is hot and bubbling. Serve immediately with heavy-duty chips or crackers such as Fritos or Triscuits and/or veggies.

BUFFALO CHICKEN MAC 'N' CHEESE

- Position an oven rack in the center of the oven and preheat the oven to 375 degrees F. Place the chicken in a 13-by-9-inch baking dish. Toss with the hot sauce, celery salt, 4 tablespoons melted butter and black pepper to taste. Bake until the chicken is tender and cooked through, about 30 minutes. Increase the oven temperature to 425 degrees F.
- Shred the chicken and transfer to a medium bowl, along with any juices from the baking dish. Cover loosely with plastic wrap, and set aside. Wipe out the baking dish with a paper towel and brush with 1 tablespoon melted butter. Set aside.
- Meanwhile, in a medium skillet over medium heat, melt 6 tablespoons butter. Add the panko and cayenne and season with some salt. Saute until deeply golden, stirring constantly, 4 to 6 minutes. Remove from the heat and add the thyme. Stir to combine and set aside.
- Bring a large pot of water to a boil and salt it generously. Add the pasta and cook to slightly less than al dente, about 3 minutes less than the package instructions. Drain.
- In a medium pot over medium heat, melt the remaining 3 tablespoons butter. When the foaming subsides, add the celery and onion. Cook until softened, 4 minutes. Add the flour and stir to coat. Continue to cook, stirring, 1 minute. Gradually add the milk, whisking continuously, and bring to a simmer. Add the Cheddar, gruyere and Parmigiano-Reggiano and whisk until the cheeses are melted and the sauce is smooth. Season to taste with salt and pepper.
- Add the pasta to the cheese sauce and stir to coat evenly. Transfer to the prepared baking dish. Top with the chicken mixture and half of the blue cheese. Sprinkle with the breadcrumbs and bake until bubbling around the edges and completely warmed through, 15 to 20 minutes.
- Top with the remaining crumbles of blue cheese and celery leaves. Serve immediately.

Steps:
- Boil in a large sauce pan enough water to cook the chicken breasts.
- Then, boil the chicken until its cooked through, about 15 minutes.
- Remove the chicken, pat dry, and shred with a fork.
- Then place the shredded chicken in a large baking dish.
- For a tailgate, I usually use 2 of those disposable 8 by 8 aluminum pans, or one large lasagna-size one.
- Pour your desired amount of hot sauce over the chicken, and season with salt and pepper if desired.
- Set this dish in the refrigerator to let the chicken absorb the flavor.
- Preheat your oven to 350.
- Next, over medium heat in a large pan, melt the cream cheese.
- Pour in the blue cheese dressing and stir until they are completely combined.
- Pour this mixture over the chicken.
- Bake for 10 minutes.
- Remove, but don't turn the oven off.
- Sprinkle the cheddar cheese evenly over the top and return to the oven for another 10-15 minutes, until the cheese is melted and starting to brown just a little.
- Serve hot or cold with chips!

- Preheat the oven to 350 degrees F.
- Combine the sour cream, hot sauce, milk and cream cheese in a food processor and process until smooth. Toss the chicken and hot sauce mixture together in a bowl and spread with a spatula in the bottom of a glass 8-inch square baking dish. - Mix all dip ingredients and chill overnight if possible.
- Spread wings out on a lightly oiled cookie sheet.
- Mix melted butter, vinegar, and hot pepper sauce.
- Brush butter mixture onto wings.
- (Can do this ahead and hold for 2 hours maximum if at room temp).
- Bake at 400° for 20- 30 minutes, or until wings are cooked through.
- Baste one time during cooking.
- Sprinkle cayenne during last 5 minutes of cooking for more heat.

- Place chicken breasts in a large saucepan; cover with water. Boil until cooked through, about 20 minutes. Remove from water, and cool. Pull meat from bones and skin. Shred meat and reserve.

These are simple, delicious and pefect for Super Bowl Sunday or any party! My family and friends always rave about them, sometimes I have to make an extra batch because they go so fast. You don't have to use a rotisserie chicken, but it sure cuts back on the time. If you don't like things too spicy, you can always cut back on the hot sauce and green onions.I like to use peanut oil for frying. They freeze well too. Making the dip ahead of time, then placing in fridge, allows the flavors to marry well. Bring it back to room temp to serve. This is adapted from a Food Network Show, Big Daddy's House. - Have oil heated to 350 degrees F.
- Pick the meat from the chicken and discard the skin, then dice.Place the chicken in a large bowl and add the hot sauce, pepper, cheese, and green onions, and toss to combine. Roll the chicken into 2-ounce balls, about the size of a golf ball.
- Place the flour, eggs, and Panko crumbs in 3 separate bowls. Roll each ball in the flour, then the egg and then the bread crumbs. Set aside.

- In 2-quart saucepan, heat broth and water to boiling; add chicken. Reduce heat to medium; cook 20 to 25 minutes or until juice of chicken is clear when center of thickest part is cut (at least 165°F). Remove chicken to large bowl; set aside to cool. Discard poaching liquid.
- In 10-inch skillet, heat 1 teaspoon oil over medium heat. Add celery, carrots and salt; cook and stir until vegetables are crisp-tender. Shred chicken with 2 forks. Add sautéed vegetables, onions, pepper sauce, butter and blue cheese; mix well.
- In deep fryer or 4-quart Dutch oven, heat 3 to 4 inches oil to 350°F.
- Meanwhile, sprinkle work surface with flour. Place 1 egg roll skin on work surface with 1 corner facing you. (Cover remaining skins with damp paper towel to prevent drying out.) Place about 2 rounded tablespoons chicken mixture slightly below center of egg roll skin. Fold corner of egg roll skin closest to filling over filling, tucking point under. Fold in and overlap right and left corners. Brush remaining corner with beaten egg; gently roll egg roll toward remaining corner and press to seal. (Cover filled egg roll with damp paper towel.) Repeat with remaining egg roll skins and chicken mixture.
- Fry egg rolls, a few at a time, in hot oil 4 to 6 minutes, turning once, until golden brown. Drain on paper towels. Place egg rolls on parsley-lined serving platter. Serve with blue cheese dressing.
