I try to make a new pizza a week and I wanted to come up with a good Buffalo pizza. This one turned out so YUMMY! My whole family loved it and can't wait to have it again!

1 mama mary's prepared pizza crust
6 tablespoons ragu light alfredo sauce with parmesan cheese (or eyeball it till it looks like enough to cover crust)
8 ounces mozzarella cheese, grated
1 (6 ounce) package tyson oven roasted diced chicken breasts
6 tablespoons franks redhot buffalo wing sauce
1 (4 ounce) can mushrooms
1 (2 1/4 ounce) can black olives, sliced
1/2 sweet onion, minced
4 tablespoons cilantro, chopped

Steps:

  • In a small bowl mix chicken cubes with Buffalo sauce and set aside.
  • Spread Alfredo sauce on prepared pizza crust and top with 1/2 the mozzarella cheese. Top with chicken cubes (sprinkle on any sauce remaining in the bowl), onions, mushrooms, black olives and cilantro. Finish with the rest of the cheese.
  • Bake at 425 for about 15 minutes or until crust is brown.

1-1/4 cups chicken stock
1 package (16 ounces) potato gnocchi
2 cups shredded cooked chicken
1 cup reduced-fat Alfredo sauce
3 tablespoons Buffalo wing sauce
1/3 cup crumbled blue cheese
1/3 cup finely chopped celery with leaves

Steps:

  • Place stock in a large skillet. Bring to a boil; add gnocchi. Reduce heat; cook, covered, 3 minutes. Uncover pan, cook and stir until liquid is reduced to 1/2 cup, 2-3 minutes longer. Add chicken, Alfredo sauce and wing sauce; heat through. Top with blue cheese and celery.

1 (16 ounce) package penne pasta
1 tsp olive oil
20 leftover chicken wings,removed the bones
2 tsp italian seasoning
1 red onion,diced
2 c crumbled blue cheese
1 c shredded parmesan cheese
SRIRACHA ALFREDO SAUCE
1 jar(s) alfredo sauce
1 (8 ounce) cream cheese,softened
3/4 c sriracha
2 tsp italian seasoning

Steps:

  • 1. Bring a large pot of lightly salted water to a boil;add penne and cook,stirring occasionally,until tender yet firm to the bite,about 11 minutes.Drain.
  • 2. Heat olive oil in a large skillet over medium-low heat.Add boneless chicken wings,season with italian seasoning.Saute for 6 minutes,stir in diced red onion,continue saute for 3 minutes.Remove
  • 3. To make Sriracha Alfredo Sauce:In a large mixing bowl,combine alfredo sauce,cream cheese,sriracha and italian seasoning,mix well until blended.Set aside.
  • 4. Preheat oven to 375 degrees F.
  • 5. Margarine bottom and sides of a 9x13-inch casserole dish.Cover bottom with a layer of pasta,crumbled blue cheese,Place half layer of chicken mixture and pour 1/2 of Sriracha Alfredo Sauce over the chicken mixture.
  • 6. Repeat layers.Sprinkle with shredded parmesan cheese.Cover with aluminum foil.
  • 7. Bake in the preheated oven until the sauce is bubbly,about 15 minutes.Remove aluminum foil and bake until cheese is melted,about 5 minutes more.
