Ground buffalo (bison) is a great choice for delicious burgers. The lean meat and rich flavors create burgers with some extra zip that helps them stand out from regular burgers. The secret to this burger recipe is using a little Worcestershire and BBQ sauce to add moisture that holds the ground meat together while deepening the burgers' flavor.

2 lb ground buffalo
1/2 cup white onion (minced)
2 cloves garlic (minced)
2 tbsp BBQ Sauce
2 tbsp Worcestershire sauce
1 tsp smoked paprika
2 tsp salt
1 tsp ground pepper

Steps:

  • Finely mince the onion and garlic. Place the ground buffalo in a bowl with the onion, garlic, smoked paprika, salt, and pepper. Mix in the Worcestershire and BBQ sauces.
  • Use your hands to mix everything as if you're giving someone you like a good back rub, making sure the seasoning gets spread evenly through the ground bison.
  • To form the burgers, split the mixture into equal parts and use your hands to form patties, working the meat until the patties hold together.
  • Using your thumbs create a small depression in the top of the burgers; this will help them keep their shape on the grill.
  • Grill the burgers on a medium to medium-high grill for 5 to 6 minutes, flip and cook for another five to six minutes or until the burgers have the desired level of doneness.

2 tablespoons butter, softened
2 tablespoons brown sugar
3/4 cup mayonnaise
1/4 cup Louisiana-style hot sauce
2 pounds ground beef
1 teaspoon salt
1/2 teaspoon coarsely ground pepper
6 kaiser rolls, split
1 celery rib, finely chopped
6 tablespoons crumbled blue cheese

Steps:

  • In a small bowl, beat butter and brown sugar until light and fluffy. Add mayonnaise and hot sauce; beat until smooth. Set aside., Crumble beef into a large bowl; sprinkle with salt and pepper and mix well. Shape into 6 patties., Grill burgers, covered, over medium heat for 5-7 minutes on each side or until a thermometer reads 160° and juices run clear. , Place on rolls. Top each with 2 tablespoons Buffalo mayonnaise and 1 tablespoon each of celery and cheese.

2 pounds ground buffalo meat
1 (8 ounce) can green chiles, drained and diced
1 teaspoon cayenne pepper
1 teaspoon cumin
1 teaspoon salt, plus more, for seasoning
Freshly ground pepper
4 hamburger buns
1 red pepper, roasted, peeled, seeded, and julienned
Famie's Simple and Spicy BBQ Sauce, recipe follows
1 (4 ounce) can chipotles in adobo sauce, pureed
8 ounces your favorite smoky BBQ sauce

Steps:

  • Preheat an outdoor grill or broiler.
  • In a large mixing bowl, mix the buffalo meat, chiles, cayenne, cumin, and salt until well blended. Refrigerate until ready to use.
  • Form the meat mixture into 4 large patties. Place the patties on the grill and cook until desired temperature. Season the burgers with salt and pepper to taste and place on hamburger buns. Top with roasted red peppers and Famie's Simple and Spicy BBQ Sauce.
  • In a small bowl, blend the two ingredients together. Store in refrigerator.
  • Yield: 12 ounces sauce

Buffalo Sauce Burgers Stuffed With Blue Cheese image

Buffalo sauce, a mixture of melted butter and hot sauce, is a big claim to food fame for Buffalo, New York. It is normally served on fried chicken wings (Buffalo wings), but this burger is a great variation of the theme. The recipe is adapted from one published in my local newspaper and credited to David Joachim, author of The Tailgater's Cookbook. It was included in a feature on tailgating, and the idea was to get these ready to grill at home, then grill them at your tailgating affair. The original recipe called for either ground buffalo or ground beef. Since ground buffalo is not available where I live, I used ground beef. I forgot to notice how long prep took, so the time given is a guess. I served these on PaulaG's Recipe #139827--they are excellent and I highly recommend them.

4 tablespoons butter, cut in small pieces
1/3 cup mild hot sauce (they mentioned Durkee, I used Frank's RedHot)
1/2 cup finely crumbled blue cheese
1 tablespoon minced garlic (you may want to use less if you're not a big fan of garlic)
2 lbs 85% lean ground beef or 2 lbs ground buffalo meat
1/2 teaspoon celery seed
1/3 cup finely chopped onion
6 hamburger buns, split

Steps:

  • Melt butter and whisk in hot sauce.
  • Mix blue cheese and garlic in a small bowl.
  • Using your hands, gently mix beef (or buffalo), celery seed, onion and 1/4 cup hot sauce mixture in a medium bowl until blended. Form into 12 patties, using a light touch; the patties should be about 4 1/2 inches in diameter and no more than 1/2 inch thick.
  • Spoon about 2 teaspoons of cheese-garlic mixture in center of 6 patties, then top with remaining patties and press together, sealing edges.
  • Cover and refrigerate until ready to grill. (Even if you aren't making these ahead of time, I think they hold together better after a little chill time).
  • Heat grill to medium and oil grate.
  • Grill burgers about 4-5 minutes on each side, or until cooked to taste. (I'll only eat ground beef cooked well, so I cooked a bit longer.) Brush with remaining hot sauce mixture during last 2 minutes of cooking. Toast buns if you like.
  • (I couldn't think of many traditional condiments I wanted on this burger, so I just ate mine with extra buffalo sauce and lettuce).

2 teaspoons ground cumin
2 teaspoons chili powder
2 garlic cloves, minced
1/2 teaspoon salt
1/8 teaspoon pepper
1 pound lean ground turkey
4 whole wheat hamburger buns, split
1 cup shredded lettuce
2 celery ribs, chopped
2 tablespoons fat-free blue cheese salad dressing

Steps:

  • In a large bowl, combine 1 tablespoon hot sauce, cumin, chili powder, garlic, salt and pepper. Add turkey; mix lightly but thoroughly. Shape into four 1/2-in.-thick patties., In a large nonstick skillet, cook burgers over medium heat 4-6 minutes on each side or until a thermometer reads 165°. , Serve burgers on buns with lettuce, celery, salad dressing and remaining hot sauce. Freeze option: Place patties on a waxed paper-lined baking sheet; cover and freeze until firm. Remove from pan and transfer to an airtight container; return to freezer. To use, cook frozen patties as directed, increasing time as necessary for a thermometer to read 165°.
