2 cloves garlic, minced
5 oz spinach
1 cup artichoke heart, drained
3 cups milk
2 teaspoons kosher salt
2 teaspoons black pepper, freshly ground
2 cups elbow macaroni
¾ cup shredded cheddar cheese
3 cups shredded mozzarella cheese, divided

Steps:

  • Preheat oven to 450°F (230°C).
  • In a large pan, melt the butter. Add garlic, and spinach cooking until spinach is wilted. Add artichoke hearts.
  • Slowly add the milk, salt, and pepper. Stir until milk is boiling.
  • Add the macaroni, cooking until the milk coats the macaroni like a glaze.
  • Add the cheddar and 2 cups (200g) of mozzarella, stirring until the cheese is completely melted.
  • Sprinkle the remaining mozzarella on top.
  • Bake for 7 minutes, until cheese is bubbly and golden brown.

1 (12-oz.) jar marinated quartered artichoke hearts, drained (⅓ cup drained liquid reserved) and coarsely chopped

1 small onion, finely chopped

2 1/2 cups half-and-half
1 pound yellow sharp cheddar cheese, cut into 1-inch cubes (about 3 1/2 cups)
8 ounces pepper jack cheese, shredded (about 2 cups)
2/3 cup sour cream
1 cup panko (Japanese breadcrumbs)

Steps:

  • Preheat the oven to 350 degrees F and butter a 9-by-13-inch baking dish. Bring a large pot of salted water to a boil; add the pasta and cook until al dente, about 7 minutes. Drain.
  • Meanwhile, melt 3 tablespoons butter in a large skillet over medium heat. Add the onion and celery and cook until soft, about 5 minutes. Stir in the chicken and garlic and cook 2 minutes, then add 1/2 cup hot sauce and simmer until slightly thickened, about 1 more minute.
  • Melt 2 tablespoons butter in a saucepan over medium heat. Stir in the flour and mustard with a wooden spoon until smooth. 1 pound elbow macaroni
6 tablespoons unsalted butter, plus more for the casserole dish
1 yellow onion, chopped
2 stalks celery, chopped
2 tablespoons all-purpose flour
3 1/2 cups half-and-half
4 cups shredded Cheddar
2 cups shredded Monterey Jack cheese
1/2 cup crumbled blue cheese
1 1/3 cups hot sauce
1 cup panko breadcrumbs
2 scallions, sliced on the bias

Steps:

  • Bring a large pot of salted water to a boil. Cook the macaroni until al dente, about 7 minutes; strain and set aside.
  • Preheat the oven to 350 degrees F. Butter a large oval casserole dish.
  • Cook 2 tablespoons of the butter, the onions, celery and a pinch of salt in a large saute pan over medium heat until the onions and celery are soft but not brown, about 7 minutes.
  • Melt 2 tablespoons of the butter in a large straight-sided skillet over medium heat. Sprinkle the flour over the butter and cook for 1 minute. Whisk in the half-and-half, bring to a boil and cook for 2 minutes. Remove the skillet from the heat, and stir in the Cheddar, Monterey Jack and blue cheese until melted. Stir in the onion mixture, macaroni and hot sauce. Taste and season with salt and pepper.
  • Pour the macaroni mixture into the prepared casserole dish. Melt the remaining 2 tablespoons of butter, pour into a small bowl and mix with the panko; sprinkle on top of the mac 'n' cheese. Bake until bubbly and brown, 35 to 40 minutes. Garnish with the scallions.

1 rotisserie-roasted chicken
6 tablespoons butter
6 tablespoons all-purpose flour

  • Bring a large pot of lightly salted water to a boil. Cook macaroni in the boiling water, stirring occasionally until tender yet firm to the bite, 8 minutes. Drain.

2 cans (14 oz. each) artichoke hearts, drained, chopped
2 cups loosely packed baby spinach leaves
1/2 cup KRAFT Grated Parmesan Cheese, divided
1 pkg. (8 oz.) KRAFT Shredded Colby & Monterey Jack Cheeses, divided
1/4 cup panko bread crumbs

Steps:

  • Heat oven to 375ºF.
  • Cook pasta as directed on package, omitting salt.
  • Meanwhile, shake flour and 1/2 cup milk in covered jar until blended; pour into medium microwaveable bowl. Stir in remaining milk and garlic. Microwave on HIGH 1 min.; stir. Microwave additional 1 to 2 min. or until slightly thickened, stirring every 30 sec.   • Heat oven to 425°F. Cook and drain macaroni as directed on package, using al dente cook time. Meanwhile, in 3-quart saucepan, melt Earth Balance over low heat.   • Position an oven rack at the center of the oven, and preheat the broiler.
  • Bring a large pot of water to a boil and cook the pasta according to the package instructions. Reserve 3/4 cup of the pasta water; strain the pasta.
  • Wipe out the pot. Add the butter, and melt over medium heat. Add the shallots, and cook, stirring occasionally, until soft, 2 to 4 minutes. ⅓ cup crumbled blue cheese
¼ cup red onion, finely diced
¼ cup scallion, sliced, green part only

Steps:

  • Preheat the oven to 350°F (180°C). Grease a 10-inch cast-iron skillet with nonstick spray.
  • Melt the butter in a medium saucepan over medium-high heat. Add the flour and cook, stirring frequently to break up any clumps, for 5 minutes, or until the roux is light golden brown. Reduce the heat to medium, then slowly pour in the milk and cook, whisking constantly, until thickened, about 8 minutes. Do not let the mixture come to a boil.
  • Remove the pot from the heat, add the mild cheddar cheese, and whisk until melted and smooth. Stir in the salt. Add the cooked macaroni to the cheese sauce and toss to coat well.

  • While the mac and cheese bakes, make the celery ribbons: Using a vegetable peeler, peel the backs of the celery stalks lengthwise into ribbons. Transfer the ribbons to a large bowl filled with ice water and let sit for at least 30 minutes or up to 1 hour.
  • Drizzle the mac and cheese with more Frank's® RedHot® Buffalo Wings Sauce and the ranch dressing, then top with the crumbled blue cheese, red onion, scallions, and celery ribbons.
