Try this delicious twist on the classic holiday candy -- a decadent chocolate chunk cookie topped with creamy peanut butter and smooth chocolate ganache. A definite WOW!

1 pouch (17.5 oz) Betty Crocker™ double chocolate chunk cookie mix
Butter, water and egg called for on cookie mix package
1/2 cup creamy peanut butter
1/4 cup powdered sugar
1/2 teaspoon vanilla
3/4 cup semisweet chocolate chips
1/4 cup heavy whipping cream

Steps:

  • Heat oven to 375°F.
  • In large bowl, stir cookie mix, butter, water and egg until soft dough forms.
  • Drop dough by slightly rounded tablespoons 2 inches apart on ungreased cookie sheet. Bake 8 to 10 minutes or until edges are set. Cool 1 minute; remove from cookie sheet to cooling rack. Cool completely, about 20 minutes.
  • Meanwhile, in small bowl, mix peanut butter, powdered sugar and vanilla until well blended. Spread about 1 teaspoon mixture on top center of each cookie.
  • In small microwavable bowl, microwave chocolate chips and cream uncovered on High 30 to 45 seconds; stir until smooth. Spoon generous teaspoonful on each cookie; spread gently over peanut butter layer. Allow chocolate to set until firm, about 1 hour. Store covered in refrigerator.

2 cups butter, softened
4 cups peanut butter
2 pounds confectioners' sugar
½ cup graham cracker crumbs
1 ½ cups semisweet chocolate chips

Steps:

  • Mix together margarine, peanut butter, confectioners' sugar and graham cracker crumbs by hand. Form into 2 inch balls and place on wax paper.
  • Refrigerate for 8 hours or overnight.
  • Melt chocolate chips in top of double boiler. Put a toothpick in the peanut butter balls and dip in chocolate until 3/4 covered. Place on waxed paper to cool.

These are like little peanut butter and chocolate balls. You basically mix it all up together. It is a perfect recipe to do at a sleepover or for parties. It is pretty simple and it really doesn't take too long. It takes about as long as chocolate chip cookies do, maybe a little longer, but if you love chocolate and peanut butter, you'll love this.

1 ½ cups creamy peanut butter
½ cup butter, softened
1 teaspoon vanilla extract
2 ½ cups semisweet chocolate chips
2 tablespoons shortening
4 cups confectioners' sugar

Steps:

  • You'll need wax paper, a double boiler, a cookie pan, and a medium bowl. In the medium size bowl, mix peanut butter, butter, vanilla, and confectioners' sugar (mixture will be stiff).
  • Shape into balls and place on a pan covered with wax paper. Place into the refrigerator.

1 box Fudge Brownie Mix
4 ounces Cream Cheese (1/2 block)
1 Egg
1/4 cup Powdered Sugar
3/8 cup Peanut Butter
3/8 cup Butter (Melted)
1 cup Semi-Sweet Chocolate Chips

Steps:

  • Preheat oven for 350
  • In medium bowl, beat brownie mix/butter/cream cheese/egg. Dough should be sticky.
  • Scoop dough onto an ungreased pan (making about 30 cookies)
  • Smooth the edge of each to form a round cookie
  • In separate bowl, mix powdered sugar & peanut butter until completely combined
  • Form mixture into about 1 inch balls
  • Bake dough 12 minutes
  • As soon as cookies come out of oven, press a peanut butter ball into the center of the cookie
  • Let cookie cool for 5 minutes, then transfer to wire rack
  • Melt chocolate chips in microwave for 30 seconds. Stir, then melt for additional 15 seconds
  • Spoon 1/2 tablespoon on top of cookie

1 1/4 c unsalted butter, divided
1/2 c creamy peanut butter
1 c brown sugar
1/2 c white sugar
2 large eggs
1/4 tsp salt
1/2 tsp baking powder
3 1/2 c bob's red mill organic unbleached white all-purpose flour
10 oz semi-sweet chocolate chips
sprinkles, edible pearls, sanding sugar for decorating (optional)

Steps:

  • 1. Heat oven to 350°F. Line cookie sheets with parchment paper.
  • 2. With an electric or stand mixer, cream together 3/4 cup butter, peanut butter and both sugars until well blended. Add eggs and mix again. Mix in salt and baking powder. Scrape the sides of the bowl if necessary. Add the flour and mix until well incorporated.
  • 3. Knead the dough together gently by hand before rolling it out. On a lightly floured surface, roll out the dough to about 1/4-inch thick. Use a 3-inch round cookie cutter, or the rim of a glass, to make the "O" shape. Use a 1-inch round cookie cutter, or the rim of a bottle cap to cut out the inside of each "O". Place cookies on prepared pans. Continue to re-roll the dough to make additional cookies.
  • 4. Bake cookies at 350°F for 13 minutes or until lightly browned. Place on a wire rack to cool completely.
  • 5. While cookies are cooling, make the glaze. Place a bowl over a simmering pot of water. Make sure the bowl is not touching the water. Add the chocolate chips and 1/2 cup butter to the bowl. Stir frequently until the chips and butter are melted and smooth. Remove bowl from the heat and dip one side of each cookie into the glaze. Place cookies back on the parchment paper, add sprinkles (optional), and allow glaze to harden. Store cookies in an airtight container.
