SEA SALT AND BLACK PEPPER CHIPS AND FRENCH ONION DIP



Sea Salt and Black Pepper Chips and French Onion Dip image

1 tablespoon grapeseed oil
1 yellow onion, finely diced
1 red onion, finely diced
1/2 cup dry sherry
1/2 cup dry white wine
4 cups sour cream
3 tablespoons salt
1 teaspoon ground black pepper
1 bunch scallions, sliced 1/4-inch-thick
2 potatoes, unpeeled, preferably Kennebec
1 gallon canola oil
Sea salt and black pepper

Steps:

  • For the dip: Heat the oil in a medium pan set over medium heat. Add the yellow onions and half of the red onions and saute, stirring occasionally, until caramelized, about 20 minutes. Add the sherry and wine and cook, stirring continually, until the liquid reduces completely, about 20 minutes more. Refrigerate until completely cool, 15 to 30 minutes.
  • Add the chilled onions, reserved red onions, sour cream, salt, pepper and scallions to a large bowl. Serve at room temperature.
  • For the chips: Slice the potatoes into chips on a mandoline, about 1/8-inch-thick.
  • Put the oil in a 3- to 5-gallon pot. Bring the oil to 325 degrees F. Fry chips, turning occasionally, until golden brown and all the little bubbles around the chips stop forming, about 15 minutes. (Those bubbles are an indicator of moisture. If you take them out before they're done, your chips will be soggy.)
  • Drain chips on paper towels and season with sea salt and black pepper. Serve with dip.

FRENCH ONION DIP WITH GRUYERE TOASTS

Sweet caramelized onions and plenty of fresh thyme add bold flavor to brighten this hearty dip, inspired by French onion soup. Serve with cheesy baguette as the traditional soup garnish, and endive for some pleasantly bitter contrast to the richness.

3 tablespoons extra-virgin olive oil
2 yellow onions, diced
2 tablespoons fresh thyme leaves
1 1/4 cups sour cream
1/2 cup mayonnaise
1 tablespoon Worcestershire sauce
Kosher salt and freshly ground pepper
1 baguette, cut into 1/4-inch-thick slices on the bias
4 ounces grated gruyere cheese or other Swiss cheese
2 heads endive, leaves separated, for serving

Steps:

  • Preheat the oven to 400 degrees F. Heat the oil over medium heat in a large skillet. Add the onions and thyme and cook, stirring occasionally, until onions are very soft and browned, about 15 minutes.
  • Meanwhile, stir together the sour cream, mayonnaise and Worcestershire sauce; season with salt and pepper. Fold in the onion mixture until well combined. Cover and chill for at least 1 hour or up to overnight. Mixture can be stored in an airtight container for up to 3 days.
  • Arrange the bread in an even layer on a baking sheet. Sprinkle each slice with about 1 tablespoon cheese. Bake until the bread is golden brown and crisp and the cheese is melted, 6 to 8 minutes. Serve dip with the cheese toasts and endive leaves.

1/4 teaspoon kosher salt
1 1/2 cups sour cream
3/4 cup mayonnaise
1/4 teaspoon garlic powder
1/4 teaspoon ground white pepper
1/2 teaspoon kosher salt

Steps:

  • In a saute pan over medium heat add oil, heat and add onions and salt. Cook the onions until they are caramelized, about 20 minutes. Remove from heat and set aside to cool. Mix the rest of the ingredients, and then add the cooled onions. Refrigerate and stir again before serving.

1 tablespoon butter
2 Vidalia onions, sliced into 1/4-inch rings (about 4 cups)
2 large shallots, sliced into 1/8-inch rings (about 1/2 cup)
2 cups sour cream
1 cup mayonnaise
1 teaspoon celery salt
1 teaspoon Worcestershire
1 teaspoon freshly ground black pepper
1 teaspoon salt

Steps:

  • In a large saute pan over low heat, add oil and butter. When butter is melted, add onions and saute stirring occasionally until golden brown and caramelized, about 35 minutes. Add shallots and some salt and saute for 15 minutes more until onions and shallots are dark brown. Remove from heat and let cool for 5 to 6 minutes, then chop into 1/4-inch pieces. Set aside to cool to room temperature.
  • Meanwhile, in a medium bowl, combine sour cream, mayonnaise, celery salt, Worcestershire, salt and pepper. Fold in onion mixture. Chill at least 1 hour or overnight, prior to serving.

2 Vidalia onions, sliced into 1/4-inch-thick rings
2 large shallots, sliced into -inch-thick rings
3 cloves garlic, minced
2 cups sour cream
1 cup mayonnaise
1 teaspoon celery salt
1 teaspoon Worcestershire sauce
Salt and freshly ground pepper
Chopped chives, for garnish
Potato chips, for serving

Steps:

  • In a large saute pan, heat the butter over medium-high heat. Add the onions and saute, stirring occasionally, for 15 to 20 minutes, or until golden brown and caramelized. Add the shallots and saute for 8 to 10 more minutes, until the onions and shallots are dark brown. Add the garlic and saute for 2 minutes. Remove from the heat and let cool for
  • 5 minutes, then chop into 1/4-inch pieces. Set aside to cool to room temperature.
  • In a bowl, mix the sour cream, mayonnaise, celery salt, Worcestershire sauce and 1 teaspoon each salt and pepper. Fold in the onion mixture. Refrigerate at least 1 hour or overnight. Garnish with chives and serve with potato chips.
