1 small garlic clove, minced

1 pound Brussels sprouts, halved and thinly sliced
1 small red onion, halved and thinly sliced
1/3 cup dried cherries, chopped
1/3 cup chopped pecans, toasted

Steps:

  • Whisk together the first 4 ingredients; gradually whisk in oil until blended., Place Brussels sprouts, onion and cherries in a large bowl; toss with dressing. Refrigerate, covered, at least 1 hour. Stir in pecans just before serving.

20 brussels sprouts, shaved
1 avocado, diced
6 green onions, diced
1 cup fresh spinach
7 slices bacon, cooked and cut into 1/2 inch (1 cm) pieces
⅓ cup parmesan cheese
¼ cup dried cranberries
¼ cup sliced almonds
4 tablespoons lemon juice
1 tablespoon dijon mustard
1 tablespoon dried oregano
1 tablespoon pepper
½ tablespoon salt
4 tablespoons olive oil

Steps:

  • Slice the stems off the Brussels sprouts and cut each one in half, then thinly slice. Transfer the shaved sprouts to a medium bowl and break apart with your hands.
  • To prepare the vinaigrette, juice the lemons into a small bowl and remove the seeds.
  • Add the mustard, oregano, pepper, and salt. Whisk to combine.
  • Slowly add the olive oil while continuing to whisk until evenly blended.
  • Slice the avocado and remove the pit, then dice.
  • Trim the ends of the scallions, then dice.
  • In a large bowl, combine the Brussels sprouts and spinach.
  • Add the avocado, bacon, scallions, Parmesan cheese, cranberries, and almonds.
  • Pour the dressing evenly over the salad.
  • Toss thoroughly until well mixed.

2 tablespoons olive oil
salt and ground black pepper to taste
1 cup chopped hazelnuts

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Crumble and set aside. In a medium sauce pan, steam Brussels sprouts until tender.

1 (14 ounce) package Hillshire Farm® Smoked Sausage, bias-sliced 1/2-inch thick
3 tablespoons apple cider vinegar
1 tablespoon minced shallot
2 teaspoons honey
1 ½ teaspoons Dijon-style mustard
½ teaspoon salt
½ teaspoon ground black pepper
⅓ cup olive oil
1 ½ pounds Brussels sprouts, thinly sliced
½ medium red onion, thinly sliced
½ cup toasted walnuts, coarsely chopped
½ cup dried cranberries

Steps:

  • In a large skillet, cook and stir sausage slices over medium heat about 5 minutes or until browned. Set aside to cool slightly.
  • For vinaigrette, in a small bowl, combine cider vinegar, shallot, honey, mustard, salt, and pepper. Slowly whisk in olive oil and beat until combined.
  • In a large bowl, combine cooked sausage, Brussels sprouts, red onion, walnuts, and dried cranberries. Drizzle with vinaigrette. Gently toss.
  • Serve immediately or cover and chill up to 4 hours.

2/3 cup olive oil
5 tablespoons red wine vinegar
3/4 teaspoon sugar
4 pounds brussels sprouts, trimmed
6 ounces Maytag blue cheese or Danish blue cheese, crumbled (about 1 1/2 cups)
Glazed Pecans , coarsely chopped

Steps:

  • Whisk first 3 ingredients in medium bowl to blend. Season vinaigrette to taste with salt and pepper.
  • Cook brussels sprouts in large pot of boiling salted water until crisp-tender, about 8 minutes. Drain. Transfer to bowl of ice water to cool. Drain well; pat dry. Cut brussels sprouts in half lengthwise and place in large bowl. (Vinaigrette and brussels sprouts can be prepared 1 day ahead. Cover separately; chill. Bring both to room temperature; rewhisk vinaigrette before continuing.)
  • Toss brussels sprouts with enough vinaigrette to coat. Transfer to deep platter; spoon any remaining vinaigrette over. Sprinkle with blue cheese and Glazed Pecans.

This is a salad with fresh hazelnuts, either roasted or not, with raw, shredded, and very fresh Brussels sprouts.

1 ½ pounds Brussels sprouts, finely shredded
3 tablespoons extra-virgin olive oil
3 tablespoons lemon juice
3 tablespoons lime juice
⅓ cup minced fresh chives
1 teaspoon fresh thyme leaves
2 pinches salt, or more to taste
1 ⅓ cups chopped hazelnuts
2 ounces crumbled blue cheese, or more to taste

Steps:

  • Remove about 1/4 the Brussels sprouts and thinly cut cross-wise with a knife; add back to the remaining shredded Brussels sprouts.
  • Whisk olive oil, lemon juice, lime juice, chives, thyme, and salt together in a bowl until dressing is smooth; set aside for flavors to blend, about 5 minutes.
  • Toss Brussels sprouts and hazelnuts together in a large bowl. Drizzle dressing over Brussels sprouts mixture; lightly toss to coat. Add blue cheese; toss to coat.
