QUICK SHREDDED BRUSSELS SPROUTS WITH BACON
These shredded Brussels sprouts cook quickly, and they get fabulous flavors from bacon, garlic, and a little lemon juice.

- Gather the ingredients.
- Rinse the sprouts and drain thoroughly. Cut off discolored stem ends and remove and discard any loose and damaged leaves. Cut the sprouts in half; lay cut-side down, then thinly slice the halves until all are shredded. Set aside.
- Arrange the bacon in a large skillet or sauté pan and place the pan over medium heat. Fry the bacon until it is browned and crisp. Remove the bacon to paper towels to drain; crumble and set aside. Leave about 2 tablespoons of drippings in the skillet and discard any remaining drippings.
- Add the minced garlic and onion to the skillet and cook, stirring, until the onion is softened, about 2 to 3 minutes. Add the shredded sprouts to the skillet and continue cooking, stirring, until tender, or about 4 to 6 minutes.
- Add the lemon juice and salt and pepper, to taste. Cook, stirring, for 1 minute longer. Toss with the bacon and serve hot.

Steps:
- Bring 4 quarts of salted water to a boil in a large saucepan.
- Remove any torn or discolored outer leaves from the spouts and then trim and cut out cores.
- Add sprouts to the boiling water and blanch for 3-5 minutes; drain and fince with cold water until cool enough to handle. Separate sprouts into leaves and blot dry with paper towels (they can be prepared one day ahead and placed in plastic bag in the fridge).
- In a skilled cook bacon over medium heat for 5-10 minutes or until crisp. Remove and drain on paper towels. Discard all but 1 tablespoon of the bacon drippings.
- Reduce heat to medium low and add sprout leaves, bacon pieces, thyme, salt and pepper. Saute for 2-5 minutes, tossing gently or until heated through.

- Cook the bacon in a large ovenproof skillet until crisp, about 4 minutes. Remove with a slotted spoon to paper towels. Pour off and reserve all but 1 tablespoon of the fat. Add the Brussels sprouts to the pan and toss. Roast in a 450˚ F oven until browned and tender, about 20 minutes. Transfer to a platter. Add the reserved bacon fat to the skillet; add the onion and cook until tender. Stir in the cider vinegar and hot honey. Cook until thickened, about 2 minutes. Drizzle over the sprouts and top with the bacon.

- Heat a dry large skillet over medium heat. Add bacon; cook, stirring occasionally, until crisp, 5 to 7 minutes. Using a slotted spoon, transfer to a paper-towel-lined plate to drain. Add enough oil to bacon fat in skillet to total 2 tablespoons. Add garlic, shallots, and sprouts; cook, stirring occasionally, until pale golden, about 3 minutes. Add stock; season with salt and pepper. Cook until most of the liquid has been absorbed and sprouts are tender, 10 to 12 minutes.
- Meanwhile, bring a large pot of water to a boil; add 1 tablespoon salt and the pasta. Cook according to package directions until al dente. Drain, reserving 1/2 cup cooking liquid; return pasta to pot.
- Stir in sprouts mixture, reserved 1/2 cup cooking liquid, and cheese. Drizzle with 2 tablespoons oil; add sage and bacon. Toss until combined. Serve with more cheese.
