1 garlic clove, peeled and halved
14 slices French bread (3/4 inch thick)
4 medium tomatoes, seeded and diced
1/4 cup chopped red onion
2 tablespoons olive oil
1 tablespoon minced fresh basil
1/4 teaspoon salt
1/8 teaspoon pepper
14 fresh basil leaves

Steps:

  • Rub cut side of garlic over one side of each slice of bread. Place bread garlic side down on an ungreased baking sheet. Bake at 350° for 5 minutes on each side or until lightly browned. , In a large bowl, combine the tomatoes, onion, oil, minced basil, salt and pepper; spoon about 2 tablespoons onto each piece of toast. Top each with a basil leaf.

4 plum tomatoes, seeded and chopped
1/2 cup shredded Parmesan cheese
1/4 cup minced fresh basil
3 tablespoons olive oil
2 tablespoons minced fresh parsley
3 garlic cloves, minced
2 teaspoons balsamic vinegar
1/8 teaspoon salt
1/8 teaspoon crushed red pepper flakes
1/8 teaspoon pepper
1 French bread baguette (10-1/2 ounces), cut into 1/2-inch slices
1/4 cup butter, softened
8 ounces fresh mozzarella cheese, sliced

Steps:

  • In a small bowl, combine the first 10 ingredients. , Spread baguette slices with butter; top each with a cheese slice. Place on ungreased baking sheets. Broil 3-4 in. from the heat until cheese is melted, 3-5 minutes. With a slotted spoon, top each slice with about 1 tablespoon tomato mixture.

This easy bruschetta recipe from Food Network's Ree Drummond makes a great appetizer or tasty first course for a larger meal.

4 tablespoons olive oil
5 cloves garlic, finely minced
1 pint red grape tomatoes, halved lengthwise
1 whole baguette or crusty loaf
1 pint yellow grape tomatoes, halved lengthwise
1 tablespoon balsamic vinegar
16 whole fresh basil leaves, plus more as needed, chiffonade
Salt and freshly ground black pepper
1 stick butter

Steps:

  • In a small skillet, heat the oil over medium-high heat. Add the garlic and stir, lightly frying for about a minute, removing before the garlic gets too brown (it can be golden). Pour the garlic and oil into a mixing bowl and allow to cool slightly.
  • Add the red and yellow tomatoes, balsamic and basil to the bowl. Sprinkle with salt and pepper. Toss to combine, and then taste and add more basil if needed, and more salt if needed (don't over salt, though!) Cover and refrigerate for an hour or two if you have the time.
  • Cut the baguette into diagonal slices to allow for the most surface area possible. Melt 4 tablespoons of the butter in a large skillet and grill half the bread on both sides, making sure they're nice and buttery. Cook until golden brown on both sides. Repeat with the remaining 4 tablespoons butter and the other half of the bread.
  • To serve, give the tomato mixture a final stir, and then spoon generously over the slices of bread. Serve on a big platter as a first course or appetizer.

SARDINE AND BEAN BRUSCHETTA

1 (16- to 19-ounces) can cannellini beans, rinsed and drained
1 (3 3/4- to 4 3/8-ounces) can sardines in oil, drained
1 1/2 tablespoons fresh lemon juice
3 tablespoons extra-virgin olive oil
1 garlic clove, minced
4 (1/2-inch-thick) slices country-style bread
2 oz arugula or watercress (5 cups)

Steps:

  • Mash beans and half of sardines with a fork. Stir in lemon juice, 1 tablespoon oil, garlic, and salt and pepper to taste.
  • Toast bread and brush with remaining 2 tablespoons oil. Top toasts with arugula, bean mixture, and remaining sardines.

5 ounces fresh sardines
1-ounce lemon juice
2 garlic cloves, chopped
1/2 cup olive oil
1/3 cup water
1/2 teaspoon salt
2 ripe tomatoes, chopped
3 green onions, chopped
4 cloves garlic, chopped
1/4 cup chopped basil leaves
1/2 cup chopped red onions
1/3 cup chopped parsley
1/4 cup olive oil
3 tablespoon crushed red pepper
1/4 teaspoon salt
1/4 teaspoon black pepper
Angel hair pasta and/or antipasto salad, or serving, optional

Steps:

  • Whisk together all marinade ingredients and marinate the sardines for 2 hours
  • For the Salsa: Mix all the ingredients in a large bowl.
  • Preheat grill to medium heat. Lightly oil the grill. Place the sardines on the preheated grill and discard marinade. Cook sardines for 5 to 7 minutes (depending on size) or until they flake easily with a fork. Serve with angel hair pasta, and/or antipasto salad, if desired.
