1 (15 ounce) can diced tomatoes with juice
½ cup water
1 tablespoon minced garlic
1 (6 ounce) box chicken-flavored dry bread stuffing mix
2 cups shredded mozzarella cheese
1 tablespoon Italian seasoning

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spray a 9x13-inch glass baking dish with cooking spray.
  • Toss the cubed chicken with the salt in a large bowl. Place the chicken in a layer into the bottom of the baking dish. Stir together tomatoes, water, garlic, and stuffing mix in a large bowl; set aside to soften. Sprinkle the cheese on top of the chicken, then sprinkle with the Italian seasoning. Spread the softened stuffing mixture on top.
  • Bake uncovered until the chicken cubes have turned white and are no longer pink in the center, about 30 minutes.

3 cups diced crusty bread
5 tablespoons olive oil
Kosher salt and freshly ground black pepper
6 chicken cutlets (thin-cut chicken breast)
5 Roma tomatoes, diced
2 cloves garlic, pressed
6 fresh basil leaves, chiffonade, plus whole fresh basil leaves for garnish
3 tablespoons balsamic reduction/glaze

Steps:

  • Preheat the oven to 375 degrees F.
  • Toss the diced bread with 1 tablespoon olive oil. Sprinkle with a pinch of salt and pepper and place on a sheet pan. Toast in the oven until golden, but still a little chewy, about 5 minutes.
  • Meanwhile, heat 2 tablespoons olive oil in a skillet over a medium-high heat. Sprinkle the chicken cutlets with salt and pepper and, when the oil is hot, add to the skillet. Fry, flipping as needed, until cooked through and nicely seared, 3 to 4 minutes per side.
  • Combine the tomatoes, garlic, basil chiffonade, the remaining 2 tablespoons olive oil, some salt and pepper and 1 tablespoon balsamic reduction in a bowl. Toss and set aside.
  • Remove the bread from the oven and, at the last minute, toss with the tomato mixture. Top the cooked chicken with the bread/tomato mixture, allowing it to fall around the edges and fill in the gaps of the skillet. Drizzle over the remaining 2 tablespoons balsamic reduction and garnish with some fresh basil leaves. Serve immediately.

1/4 cup grated Parmesan cheese
1/2 cup flour
3 eggs (lightly beaten)
6 boneless skinless chicken breasts
1 Tablespoon butter (melted)
1 1/2 cups diced tomatoes
1 teaspoon minced garlic
1 Tablespoon olive oil
2 Tablespoons grated Parmesan cheese
2 Tablespoons fresh basil leaves (finely chopped)
1 Tablespoon balsamic vinegar
Salt and pepper, to taste

Steps:

  • Preheat oven to 375 degrees F.
  • Spray a 9x13-inch baking pan with nonstick cooking spray.
  • Combine bread crumbs and Parmesan cheese in a small mixing bowl.
  • Place flour and eggs in their own separate bowls.
  • Dip the chicken breast in the flour, then in the eggs, and then in the bread crumb/cheese mixture.
  • Place chicken breast in prepared baking pan and then repeat with the remaining chicken breasts. Pour melted butter on top of the chicken.
  • Bake for 30 minutes or until the inside is no longer pink and reaches 165 degrees F.
  • While the chicken bakes, mix tomatoes, garlic, oil, cheese, basil, balsamic vinegar, salt and pepper. Let it sit for about 15 minutes so that the flavors can meld together.
  • When chicken is finished cooking, spoon some of the fresh tomato mixture on each chicken breast and serve.

My FAVORITE dish from TGIFriday's. I found the copycat and it is delicious. It is super simple to make and don't skimp on the garlic because that is what really makes the flavor. Also, if tomatoes aren't in season use the canned tomatoes in italian seasonings, they work just as well. Add some garlic bread to the side and you're done!

4 (4 ounce) chicken breasts
salt and black pepper (To Taste)
1 lb angel hair pasta
6 -8 medium size roma tomatoes
4 tablespoons olive oil, divided
1/4 teaspoon salt
1/8 teaspoon black pepper
10 fresh basil leaves
2 garlic cloves, sliced into thin coins
1/2 cup tomato sauce
1 cup balsamic vinegar
1 tablespoon granulated sugar

Steps:

  • Tomato Salad (Step 1): Wash, core and dice tomatoes to 1/4" pieces, save juices and place in small bowl. Wash, dry and cut basil leaves into thin strips. Combine tomatoes, left over juice, basil, 2 tablespoons olive oil, salt, pepper, and hold for 2 hours before use.
  • Balsamic Glaze: Bring to a boil vinegar and sugar in small pan and turn down flame to a simmer Reduce by 75% until sauce turns to a thick syrup, hold at room temperature.
  • Pasta: Boil pasta as per directions on box until al dente.Drain and transfer to bowl.
  • Tomato Salad (Step 2): Heat heavy bottom saucepan under medium-low flame. Add 2 tablespoons olive oil, heat oil for 20 seconds. Saute cloves of garlic, that are sliced into thin coins, in oil (if small use 3) for 45 seconds on each side until soft and tender - do not brown garlic (if brown DISCARD and start over). Increase heat and add tomato salad and stir.
  • Tomato Salad (Step 3): Add plain tomato sauce to pan and bring to a boil. Add pasta to sauce pan and toss with fresh sauce (sauce should just coat pasta). Transfer to a service platter or plate individually. Garnish with balsamic glaze.
  • Chicken Breasts: Season both sides of chicken breasts with salt and black pepper. Grill 3-4 minutes per side for grill marks or until the chicken breasts reach 165 degrees F. Grill right before serving.
  • To serve: Slice chicken breast into strips on a bias (45 degree angle) and place on top of pasta.Enjoy!

1 cup cherry tomato, halved, 1 (14.5 ounce) can petite diced tomatoes, undrained
8 oz pasta, uncooked, such as penne, fusilli or bow-tie
1 cup bite-size mozzarella cheese balls, or shredded mozzarella

Steps:

  • Heat the oil in large high sided skillet over medium-high heat. Add the cubed chicken and 1 tablespoon of the seasoning mix. Cook, stirring often for 5 minutes or until browned and fully cooked. Remove chicken from the pan and transfer to a large bowl. Set aside.
  • Add the onion to the skillet and cook for 3 minutes or until softened and translucent.

1/2 tomatoes, diced
3 tablespoons fresh basil, chopped
1/4 cup mozzarella cheese, shredded

3/4 cup Italian seasoned breadcrumbs
1 teaspoon dried oregano
1 teaspoon garlic powder
salt and pepper, to taste

Steps:

  • Preheat oven to 350°F.
  • Mix diced tomatoes, chopped basil, and cheeses in a bowl with olive oil.
  • In a separate bowl, combine bread crumbs, oregano, garlic powder, salt, and pepper.
  • Place chicken breasts, one at a time, into a zip-top bag. Pound with a tenderizing mallet or a rolling pin until uniformly about 1/4" thick.

2 tablespoons olive oil
4 tablespoons fresh basil
½ cup balsamic vinegar
½ cup shredded parmesan cheese, for topping

Steps:

  • Combine chicken and marinade ingredients and set aside.
  • Combine bruschetta ingredients.
  • Place balsamic vinegar in a small saucepan and bring to a boil over high heat. Reduce heat to simmer for 8-10 minutes, until mixture has thickened and formed a glaze (be careful not to over-reduce).
  • Cook chicken in a large skillet over high heat about 5-6 minutes per side. Once cooked, top with bruschetta, a drizzle of balsamic glaze, and a sprinkle of Parmesan cheese.

1 (6 ounce) package Stove Top stuffing mix
1/2 cup water
2 garlic cloves
1 1/2 lbs chicken breasts, cubed
1 teaspoon basil leaves
1 cup mozzarella cheese

Steps:

  • Heat oven to 400°F.
  • Mix tomatoes, stuffing mix and garlic just until stuffing mix is moistened.
  • Spread chicken onto bottom of 3-L casserole dish sprayed with cooking spray; top with basil and cheese.
  • Cover with stuffing. Bake 30 minute or until chicken is done and stuffing mixture is heated through.

Inspired by the flavors of bruschetta, this pasta salad boasts fresh tomatoes, mozzarella, and basil in a balsamic vinaigrette. I love the addition of roasted chicken (rotisserie chicken is a great store-bought shortcut!) because it turns this simple side dish into the main event. It's truly a meal-in-a-bowl, and best of all, that meal can be served warm, room temp or chilled.

1 pound uncooked short pasta, such as gemelli or bowties
3 cups diced tomatoes (See Cook's Note)
1 cup mini mozzarella balls, halved
2 cups diced cooked chicken (See Cook's Note)
1 cup fresh basil leaves
1/2 cup marinated artichoke hearts, quartered
1/3 cup sliced black olives
1/3 cup shredded Parmesan
1/4 cup balsamic vinegar
2 cloves garlic
1 tablespoon honey
1/2 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper

Steps:

  • Make the pasta salad: Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, according to the package directions. Drain the pasta, transfer to a large bowl, and let cool slightly. Add the tomatoes, mozzarella, chicken, basil, artichokes, olives, and Parmesan. (If you're looking to make this recipe in advance, leave out the fresh basil and stir it in right before serving.) Toss to combine.
  • Make the dressing: In a small bowl, whisk together the balsamic vinegar, garlic and honey. While whisking, stream in the olive oil and whisk until emulsified. Taste and season the dressing with salt and pepper.
  • Add the dressing to the pasta salad and toss to combine, then serve immediately or refrigerate for, covered with plastic wrap or in an airtight container for up to 3 days.

1/2 c water
1 tsp salt
1 Tbsp minced garlic
1 box chicken-flavored stuffing mix
2 c shredded mozzarella
1 Tbsp italian seasoning

Steps:

  • 1. Preheat oven to 400 degrees. Spray 9x13 inch glass baking dish with cooking spray.
  • 2. Toss chicken with salt. Place in a layer into the bottom of the baking dish. Stir together tomatoes, water, garlic and stuffing mix; let sit to soften.
  • 3. Sprinkle the cheese on top of chicken, then Italian seasoning and then stuffing mixture.
  • 4. Bake uncovered for about 30 minutes.

4 ounces chicken tenderloins
1 piece melba toast
2 medium roma tomatoes
2 tablespoons lemon juice
1 tablespoon liquid, amino acids (Bragg's)
2 tablespoons apple cider vinegar
2 garlic cloves, Raw
3 leaves basil, fresh
1 pinch oregano, dried
salt and pepper, to taste

Steps:

  • Marinate chicken in lemon juice, Bragg Liquid Amino Acids, vinegar, salt and pepper.
  • Mix Melba crumbs with dry spices.
  • Coat the chicken in the Melba crumbs / herb mixture and "fry" chicken (in non-stick skillet, do not use oil -- if anything is needed, use water or a very small amount of fat-free chicken broth) until golden brown. Deglaze the pan periodically with a little broth to keep chicken from burning.
  • For the bruschetta sauce: Chop tomatoes finely and put into small bowl.
  • Roll basil leaves together, crush lightly, and cut horizontally to create fine slices.
  • Mix ingredients together with lemon juice, vinegar, salt and pepper to taste.
  • Serve Bruschetta sauce (chilled or slightly warmed) over the hot chicken.
