I serve this super dessert often at baseball barbecues or whenever I have a large group in. Homemade brownies and fudge sauce plus ice cream...you can't go wrong! -Carol Brandon, Uxbridge, Ontario

Yield 4 dozen (2 cups sauce).

2 cups butter, cubed
32 ounces semisweet chocolate, chopped
7 eggs
2 cups sugar
3 teaspoons vanilla extract
2-1/2 cups all-purpose flour
1-1/2 teaspoons salt
3/4 pound chopped walnuts, optional
HOT FUDGE SAUCE:
1 cup heavy whipping cream
1 cup sugar
1/2 cup butter, cubed
1 cup baking cocoa
Vanilla ice cream
Whipped cream and maraschino cherries, optional

Steps:

  • In a large heavy saucepan, melt butter and chocolate over low heat; stir until smooth. Cool., In a large bowl, beat eggs and sugar on low speed until combined. Beat on medium-high until thickened and lemon-colored, about 12 minutes. Beat in vanilla and chocolate mixture. Fold in flour and salt just until blended (batter will be thick). Fold in walnuts if desired. , Transfer to two greased 13x9-in. baking pans. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool on wire racks for 15 minutes. , In a large saucepan, combine the cream, sugar and butter. Cook and stir until sugar is dissolved. Bring to a boil, without stirring. Reduce heat; simmer, uncovered, for 3 minutes. Cool for 3 minutes. , Place cocoa in a heat-proof bowl. Carefully whisk hot liquid into cocoa until smooth (do not scrape pan). Cut brownies into squares; serve with ice cream and hot fudge sauce. Garnish with whipped cream and cherries if desired.

One 18-ounce box brownie mix
2/3 cup (1 1/3 sticks) melted butter
1/4 cup milk
2 large eggs
One 1-pound tube refrigerated chocolate chip cookie dough
20 chocolate sandwich cookies
1/2 cup caramel sauce
1 pint mint chocolate chip ice cream
1/2 cup chocolate sauce
Canned whipped cream, assorted sprinkles and maraschino cherries, for garnish

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large bowl, combine the brownie mix, melted butter, milk and eggs until combined. Set aside.
  • Press the cookie dough into the bottom of a 10-inch cast-iron skillet. Lay the sandwich cookies in a single layer on top. Drizzle over the caramel sauce, getting into the spaces between the cookies. Pour over the brownie batter and smooth the top.
  • Bake until set, 40 to 45 minutes. Allow to cool for 20 minutes.
  • Top the brownie with scoops of the ice cream, then drizzle over the chocolate sauce and garnish with the whipped cream, sprinkles and cherries.

12 ounces semisweet chocolate chips
1 1/2 teaspoons instant coffee or espresso powder
6 brownies
1 quart vanilla ice cream

Steps:

  • Melt the heavy cream, chocolate chips, and instant coffee in a bowl over simmering water until smooth, stirring occasionally. Place a brownie on each plate, top with a scoop of ice cream, and serve with warm chocolate sauce.

We used these brownies with our Mint Parfait, but they can be crumbled as a garnish over any sundae or served warm, topped with a scoop of ice cream.

6 tablespoons butter, cut into small pieces, plus more for pan and parchment paper
3 ounces bittersweet or semisweet chocolate, cut into 1/4-inch pieces
2 large eggs
1/4 teaspoon salt
1/2 cup granulated sugar
1/4 cup firmly packed light-brown sugar
1/2 teaspoon pure vanilla extract
1/2 cup all-purpose flour

Steps:

  • Heat oven to 350 degrees. Butter an 8-inch-square baking pan; line with buttered parchment paper. Bring a small saucepan of water to a boil; turn off heat. Combine butter and chocolate in a small, heatproof bowl; set over the pan of water, stirring occasionally, until melted.
  • Whisk eggs in a large bowl, and add salt, sugars, and vanilla. Stir to combine. Stir in melted chocolate mixture. Sift in flour, and fold until combined. Pour batter into prepared pan; spread evenly. Transfer pan to the oven, and bake until top is shiny and batter is moderately firm, about 25 minutes. Let cool before cutting and removing from pan; serve.

BROWNIE SUNDAE PARFAIT



Brownie Sundae Parfait image

This is a great dessert to vary, according to your cravings and mood, with different flavors of ice cream and sauces. I love the uncomplicated taste of vanilla bean ice cream with brownies, but go for any of your favorite flavors. The Caramel Sauce adds another dimension of flavor and color to the chocolate and vanilla, but many other traditional ice cream sauces will also work. I like to spoon a little of the sauce between the brownies and ice cream to prevent the brownie layer from tasting too dry. The sauce helps pack it together with a nice gooey consistency, so that it's not too much of a textural contrast from the ice cream.

Yield makes 6 individual desserts

Number Of Ingredients 4

3 cups leftover Fudgy Brownies (page 67), roughly chopped into small (about 1/2 inch) pieces
1 cup Caramel Sauce (page 186) or store-bought sauce
1 pint vanilla ice cream
2 cups whipped cream

Steps:

  • Place 1/4 cup brownies in the bottom of each of 6 parfait glasses.
  • Drizzle about 1 tablespoon of the Caramel Sauce into each glass, then scoop half the pint of ice cream evenly among the glasses. Drizzle with another tablespoon of sauce.
  • Repeat with one more layer of brownies, caramel, ice cream, and caramel sauce. Top each parfait with a scoop of whipped cream and serve immediately.
  • Try the parfait with Peanut Butter Brownies (page 72), chocolate or banana ice cream, and Caramel Sauce. Or try the Mint Swirl Brownies (page 74) with mint ice cream and chocolate fondue (see Chocolate Cookie Sticks with Fondue, page 56).
