10 Minute ..quick and Easy Chocolate Brownie Pudding Cake image

This is not a gourmet cake, but it is a quick chocolate fix. This cake cooks in about 5-7 minutes in the microwave, yes the microwave believe it or not! Depending on your microwave as to how much pudding will be in it,it will be a cakey,brownie,pudding like dessert.I like to top it with Ice cream and fudge and whip cream for a quick Ice cream brownie treat or powdered sugar and chocolate sauce.

1 cup sugar
2/3 cup flour
2/3 cup cocoa
1/4 teaspoon salt
1 teaspoon baking powder
3 eggs
2 tablespoons melted butter
1 teaspoon vanilla
1/2 cup boiling water, with
3 tablespoons sugar, added

Steps:

  • Boil water with 3 tbsp of sugar and set aside.
  • Combine all dry ingredients (first 5 ingredients) in a bowl, then add eggs,melted butter and vanilla until well blended, mixture will be thick.
  • Butter a 9 inch microwavable pan or tupperware, even if its a tad smaller it's ok.
  • Spread mixture evenly into the buttered pan.
  • Very slowly pour water into the center of the mixture and do not stir!
  • Cover well, with plastic wrap or lid.
  • Cook in microwave on regular power for 5 minutes, check it to make sure it's set and if not put back in microwave for a couple more minutes.
  • Sprinkle with powdered sugar and serve with your favorite toppings.
  • Enjoy!

1 cup all-purpose flour
1/2 cup unsweetened cocoa powder, plus
3 tablespoons unsweetened cocoa powder
2/3 cup granulated sugar
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup 1% low-fat milk
2 1/2 tablespoons vegetable oil
2 tablespoons coffee-flavored liqueur or 2 tablespoons black coffee
2 teaspoons vanilla extract
1/3 cup packed light brown sugar
1 3/4 cups boiling water
confectioners' sugar, for dusting
light whipped topping (optional)

Steps:

  • Heat oven to 375 degrees; you'll need an 8-inch square or other 2-quart, 2-inch deep baking dish.
  • Put flour, 1/2 cup cocoa powder, granulated sugar, baking powder and salt into a bowl, and whisk to mix well.
  • Mix milk, oil, liqueur and vanilla; stir into flour mixture until blended.
  • Spread in ungreased baking dish.
  • Mix brown sugar and the 3 T cocoa; sprinkle evenly over batter.
  • Slowly pour boiling water evenly over surface of batter (resist the temptation to stir).
  • Carefully place dish in oven.
  • Bake 30 minutes, or until top is just set and a wooden pick inserted halfway into center comes out with moist crumbs.
  • Cool in dish on wire rack 10 minutes.
  • Dust with confectioners' sugar.
  • Fore a decorative design, place a paper doily on cake before dusting with sugar.
  • Carefully lift doily straight up.
  • Serve pudding cake warm with whipped topping.

MICROWAVE CHOCOLATE PUDDING CAKE

Brown sugar in the batter of this classic fudgy cake makes it extra rich and gooey. Since baking it in the microwave doesn't heat up the kitchen, the cake makes a great summer treat, topped with vanilla (or your favorite) ice cream. The longer the cake cools, the more the pudding is absorbed.

3/4 cup all-purpose flour
1 cup packed light brown sugar
1/2 cup unsweetened cocoa powder (not Dutch process)
1/2 teaspoon baking soda
Kosher salt
2/3 cup buttermilk
1/4 cup vegetable oil
1 teaspoon pure vanilla extract
Vanilla ice cream, for serving

Steps:

  • Spray the inside of a microwave-safe 2-quart 8-inch square baking dish with cooking spray.
  • Whisk together the flour, 1/2 cup of the brown sugar, 1/4 cup of the cocoa powder, baking soda and 1/2 teaspoon salt in a large bowl. Break up some of the larger brown sugar clumps with your fingers. Make a well in the center, add the buttermilk and oil and stir until everything is just combined. Scrape the batter into the prepared baking dish with a rubber spatula. Smooth the top.
  • Put 1 cup water in a microwave-safe 2-cup or larger measuring cup. Microwave on high (at 100 percent power) until steaming hot, 2 minutes in an 1,100-watt oven or 3 minutes in a 700-watt oven. Add the remaining 1/2 cup brown sugar and 1/4 cup cocoa powder, the vanilla and 1/4 teaspoon salt, and whisk to dissolve the sugar. Pour over the batter in the baking dish. Do not stir in.
  • Microwave the cake on high (at 100 percent power) until the top is mostly set and dry to the touch, 8 minutes in an 1,100- or a 700-watt oven. (If the cake is slightly wet in the center, that's OK; it will continue cooking as it sits.) Let cool for at least 30 minutes.
  • When you cut into the cake, you will notice a gooey chocolate pudding layer at the bottom; be sure to scoop some with each serving. Serve the cake warm or at room temperature with ice cream.

SAUCE:
1/2 cup packed brown sugar
1/4 cup baking cocoa
1-1/2 cups boiling water
CAKE:
1 cup all-purpose flour
1/2 cup sugar
1/4 cup baking cocoa
1-1/2 teaspoons baking powder
1/4 teaspoon salt
1 large egg, beaten
1/3 cup whole milk
2 tablespoons butter, melted
1 teaspoon vanilla extract
1/2 cup semisweet chocolate chips
Whipped cream or vanilla ice cream

Steps:

  • In a saucepan, combine sauce ingredients and keep warm. , In a bowl, combine flour, sugar, cocoa, baking powder and salt. In a small bowl, combine egg, milk, butter and vanilla; add to dry ingredients and stir until moistened. Fold in chocolate chips. Pour into a greased 1-1/2-qt. baking dish. Pour warm sauce over batter. Do not stir. Bake at 350° for 35-40 minutes or until cake is firm and floats in sauce. Let rest 10 minutes. Serve warm with whipped cream or ice cream.

I grew up with a dessert called Hot Fudge Pudding Cake. It was a package mix. This is the closest to the original recipe I've had. Similar to other brownie cakes listed but less ingredients and microwave cooked. One of my all time favorites.

1 cup brown sugar, packed
1/4 cup baking cocoa
1 1/2 cups hot water
1/4 cup butter or 1/4 cup margarine
1 cup flour
1 cup sugar
1/4 cup cocoa
1 cup milk
2 teaspoons baking powder
1/4 teaspoon salt
1 teaspoon vanilla

Steps:

  • Combine first 4 ingredients in a glass bowl or 4 cup glass measuring cup.
  • Microwave for 4 minutes or until bubbling.
  • Combine cake ingredients in a 8 or 9 inch glass cake pan. Stir until smooth.
  • Pour liquid topping mixture over cake. Microwave for 9-12 minutes until cake rises to top.

1/2 pound (2 sticks) unsalted butter, plus extra for buttering the dish
4 extra-large eggs, at room temperature
2 cups sugar
3/4 cup good cocoa powder
1/2 cup all-purpose flour
Seeds scraped from 1 vanilla bean
1 tablespoon framboise liqueur, optional
Vanilla ice cream, for serving

Steps:

  • Preheat the oven to 325 degrees F. Lightly butter a 2-quart (9 by 12 by 2-inch) oval baking dish. Melt the 1/2 pound of butter and set aside to cool.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat the eggs and sugar on medium-high speed for 5 to 10 minutes, until very thick and light yellow. Meanwhile, sift the cocoa powder and flour together and set aside.
  • When the egg and sugar mixture is ready, reduce the speed to low and add the vanilla seeds, framboise, if using, and the cocoa powder and flour mixture. Mix only until combined. With mixer still on low, slowly pour in the cooled butter and mix again just until combined.
  • Pour the brownie mixture into the prepared dish and place it in a larger baking pan. Add enough of the hottest tap water to the pan to come halfway up the side of the dish and bake for exactly 1 hour. A cake tester inserted 2 inches from the side will come out 3/4 clean. The center will appear very under-baked; this dessert is between a brownie and a pudding.
  • Allow to cool and serve with vanilla ice cream.
