This is so much easier than the traditional MS mud cake recipes and tastes just as good. The shortcut is using brownie mixes for the base. Very rich!!

2 (19 1/2 ounce) packages brownie mix
1 1/2 cups coarsely chopped pecans, toasted
1 (10 1/2 ounce) bag miniature marshmallows
1 (16 ounce) package powdered sugar, sifted
1/2 cup milk
1/4 cup butter, softened
1/3 cup cocoa

Steps:

  • Prepare brownie mixes according to package directions, stirring in chopped pecans.
  • Bake at 350 degrees for 30 minutes or until a wooden pick inserted in center comes out clean.
  • While brownie mix is baking combine powdered sugar, milk, butter and cocoa. Beat all ingredients at medium speed with an electric mixer until smooth.
  • When brownie mix cake is done, remove from oven.
  • Top warm cake evenly with marshmallows.
  • Return to oven and bake 5 minutes.
  • Remove from oven and drizzle chocolate frosting over warm cake.

This is a Pampered Chef recipe. It's brownie on top with a yummy gooey pudding layer underneath. Fantastic with homemade ice cream! Very popular at our house.

1 cup all-purpose flour
3/4 cup sugar
3 tablespoons unsweetened cocoa powder
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk
2 tablespoons butter, melted
1 teaspoon vanilla
1/2 cup chopped pecans or 1/2 cup walnuts
1 cup sugar
1/4 cup unsweetened cocoa powder
1 1/2 cups boiling water

Steps:

  • Preheat oven to 350°F
  • For pudding, combine all ingredients in a medium bowl; pour into greased 8-inch square baking dish.
  • For topping, combine sugar and cocoa in a small bowl; gradually stir in boiling water.
  • Pour over pudding. DO NOT STIR.
  • Bake 45 minutes. Topping will sink and the pudding will rise to the top.
  • Allow to cool slightly before serving. Serve with ice cream or whipped cream.

1 cup all-purpose flour
2/3 cup unsweetened cocoa powder
3/4 teaspoon double-acting baking powder
3/4 teaspoon salt
2 large eggs
1 cup granulated sugar
3/4 stick (6 tablespoons) unsalted butter, melted and cooled
1/2 cup milk
1 teaspoon vanilla extract
1/2 cup chopped walnuts
3/4 cup firmly packed light brown sugar
1 1/3 cups boiling water
Accompaniment: coffee ice cream

Steps:

  • Preheat the oven to 350°F. Into a bowl sift together the flour, 1/3 cup of the cocoa powder, the baking powder, and the salt. In another bowl whisk together the eggs, the granulates sugar, the butter, the milk, and the vanilla, add the flour mixture, and stir the batter until it is just combined. Stir in the walnuts and spread the batter evenly in an ungreased 8-inch-square baking pan. In a bowl whisk together the remaining 1/3 cup cocoa powder, the brown sugar, and the water, pour the mixture over the batter, and bake the cake in the middle of the preheated oven for 35 to 40 minutes, or until a tester comes out with crumbs adhering to it.
  • Serve the cake hot with the ice cream.
