Steps:
- Preheat oven to 350°F (180°C)
- For the cheesecake, in a bowl, beat the cream cheese until smooth.
- Add sugar, egg, mint extract, and food coloring, and beat until smooth.
- Fold in the chocolate chips. Set aside.
- For the brownie, in a separate bowl, whisk the dry ingredients until combined.
- Add the butter and eggs, and beat until smooth.
- To assemble, fill each cup of a standard, lined muffin tin half full of brownie, then half full of cheesecake mixture.
- Bake 25 - 30 min.

- 1. 1. preheat your oven to 350 degrees. grease the bottom only of a 9 inch spingform pan. prepare brownie mix as package directs for chewy brownies. spead the brownie mixture evenly in your prepared pan. bake the brownie mix for 35 minutes or until set.
- 2. 2. in a large bowl, beat cream cheese until fluffy. gradually beat in the can of sweetened condensed milk until smooth. Add eggs and vanilla, mix it well. STIR in your chocolate chips. Pour mixture into baked crust (brownie crust)
- 3. 3. reduce oven temp to 300 degrees, bake for 50 mins or until set.
- 4. 4. cool. chill thoroughly!! chill in the fridge overnight if possible.
- 5. remove side of the springform pan. Garnish as desired. store leftovers covered in the fridge. makes one 9 inch cheesecake. NOTE: chocolate chips may fall to brownie layer during baking. (mine didnt , but it can) prep time: 20 mins Bake time.1 hour, 25 mins. total. Best to leave this in the fridge overnight to chill. Cheesecake needs time to chill or it wont taste right. :) Enjoy!
CHOCOLATE CHIP CHEESECAKE BROWNIE
Steps:
- 1. Preheat oven to 170 Deg Celsius. Grease a 9 x 13 inch pan. 2. In a large bowl, cream together butter, brown and castor sugar. Beat in the eggs one at a time, then stir in Vanilla Essence. Combine flour, baking soda and salt. Blend dry ingredients into the creamed mixture. Stir in chocolate chips. Set aside. 3. In a seperate bowl, mix together the cream cheese and castor sugar. Mix in the remaining eggs. 4. Spread half of the chocolate chip dough into the bottom of the greased pan. Pour cream cheese batter on top of dough. Sprinkle with chopped nuts. Drop pieces of the remaining chocolate chip dough over the filling. Do not worry about the gaps; the batter will spread. 5. Bake for 45 minutes in the preheated oven or till lightly browned on top. Let the brownies cool in the pan before cutting into bars. 24 Servings
