CANDIED BACON BLTS



Candied Bacon BLTs image

Candying the bacon in the oven adds a little bit of sweetness to the mix, enhancing a classic BLT. After the bacon gets crisp, you can overlap the strips, imitating the size and shape of your bread. As the bacon cools, the "caramel" on the outside firms up, making the sandwich easier to assemble -- and eat, too!

10 slices thick-cut bacon
1/3 cup packed light or dark brown sugar
Freshly ground black pepper
2 small tomatoes, thickly sliced
Kosher salt and freshly ground black pepper
4 thick slices sourdough bread
3 tablespoons mayonnaise, plus more for serving (optional)
4 leaves Boston lettuce
12 large basil leaves
2 thick slices red onion

Steps:

  • For the candied bacon: Preheat the oven to 375 degrees F. Line one rimmed baking sheet with aluminum foil and another with parchment paper. Arrange the bacon slices very close together on the foil-lined baking sheet -- they should all fit on one.
  • Sprinkle about 1 1/2 teaspoons brown sugar and a few grinds of black pepper over each slice of bacon. Bake until the bacon is evenly browned and very crisp, 15 to 17 minutes.
  • While the bacon is still hot, transfer to the parchment-lined baking sheet and divide into 2 groups, overlapping 5 slices slightly on top of each other. Let cool while you prepare the rest of the sandwich.
  • For the sandwich: Lay the tomato slices on a large plate and season with salt and pepper. Spread the mayonnaise on one side of each slice of bread. Heat a large cast-iron skillet over medium heat.
  • When the skillet is hot, add 2 slices of bread, mayo-side down, and toast until deeply golden brown. Remove to a plate and repeat with the remaining 2 slices of bread. Let cool completely. If desired, spread more mayonnaise on the untoasted sides of the bread.
  • To build each sandwich, layer half of the lettuce, basil, onion, tomato slices and bacon between 2 slices of bread. If desired, cut the sandwich in half.

Simple BLT sandwiches are quite amazing, but when you add dill mayonnaise, avocado and brown sugar bacon, they become something spectacular! I used double-thick bacon in this recipe, but you can use thick-cut bacon if you prefer, adjusting the cooking time as necessary. -Colleen Delawder, Herndon, Virginia

6 thick-sliced bacon strips
1/4 cup packed brown sugar
1/4 teaspoon cayenne pepper
1/4 cup mayonnaise
1/2 teaspoon dill weed
1/4 teaspoon garlic powder
1/4 teaspoon freshly ground pepper
1/8 teaspoon kosher salt
2 brioche hamburger buns, split
4 Bibb or Boston lettuce leaves
1 medium ripe avocado, peeled and thinly sliced
1 medium tomato, thinly sliced

Steps:

  • Place bacon on a rack in a foil-lined 15x10x1-in. baking pan. Place in a cold oven. Set oven to 350°. Bake for 20 minutes. Sprinkle bacon with brown sugar and cayenne pepper. Bake until sugar is melted and bacon is browned, 15-20 minutes longer., Meanwhile, combine mayonnaise, dill, garlic powder, pepper and salt; spread over cut sides of buns. Layer bun bottoms with lettuce leaves, avocado, bacon and tomato; replace bun tops.

1 pound thick cut bacon
1/4 cup light brown sugar

Steps:

  • Preheat the oven to 375 degrees F.
  • Line a baking pan with parchment paper and lay the bacon out side by side, overlapping just a bit, if necessary, to fit the whole package on the pan. Sprinkle with the brown sugar and place the pan on the top rack of the oven. Bake 35 to 40 minutes or until the bacon is nicely browned and slightly crispy.* Remove from the oven and serve immediately.
