2 cups heavy whipping cream
2 cups 2% milk
3/4 cup packed brown sugar
1/8 teaspoon salt
6 large egg yolks
3 to 4 tablespoons bourbon
2 teaspoons vanilla extract

Steps:

  • In a large heavy saucepan, combine cream, milk, sugar and salt. Heat over medium heat until bubbles form around sides of pan, stirring to dissolve sugar. , In a small bowl, whisk a small amount of the hot mixture into the egg yolks; return all to the pan, whisking constantly. Cook over low heat until mixture is just thick enough to coat a metal spoon and temperature reaches 180°, stirring constantly. Do not allow to boil. Immediately transfer to a bowl. , Place bowl in a pan of ice water. Stir gently and occasionally for 2 minutes. Stir in bourbon and vanilla. Press waxed paper onto surface of mixture. Refrigerate several hours or overnight., Fill cylinder of ice cream maker two-thirds full; freeze according to the manufacturer's directions. (Refrigerate remaining mixture until ready to freeze.) Transfer ice cream to a freezer container; freeze until firm, 4-6 hours. Repeat with remaining mixture.

Because of the ZWT4 I'm a new owner of an ice cream maker. In a month or less, I tried 4 recipes so far. But some of them, I made half batches. That way, I can try more LOL This one from Rachael Ray looks amazing. You know me, when there's booze, it's even better LOL (A note from Rachael Ray : Think twice before serving this to children, the alcohol doesn't cook off.)

1 cup whole milk
1/2 cup sugar
1 pinch salt
5 large egg yolks, beaten
2 cups heavy cream, chilled
2 tablespoons coffee liqueur, chilled
2 tablespoons vodka, chilled

Steps:

  • In a small saucepan, cook the milk, sugar and salt over medium-high heat, stirring occasionally, until the sugar dissolves, about 4 minutes (do not let the milk boil).
  • Slowly pour one-half of the hot milk mixture into the eggs, whisking. Pour the mixture back into the saucepan and cook over low heat, stirring and scraping with a heatproof spatula, until thick enough to coat the spatula, 8 to 10 minutes.
  • Strain the mixture into a metal bowl. Stir in the heavy cream. Refrigerate until cool, about 2 hours.
  • Stir the coffee liqueur and vodka into the ice cream base. Pour into an ice cream maker and process according to the manufacturer's instructions.

Rich, decadent custard-based alcoholic ice cream that our house guests rave about. This recipe records the best of several variations that I have tried for our family and friends. Warning: watch yourself, this ice cream has a high alcohol content but you will barely taste the alcohol.

1 cup milk
¾ cup white sugar
¼ teaspoon salt
3 egg yolks
1 ounce dark chocolate, broken into pieces
2 cups heavy whipping cream
¼ cup vodka
2 tablespoons coffee-flavored liqueur (such as Kahlua®)
1 teaspoon vanilla extract

Steps:

  • Heat milk, sugar, and salt in a saucepan over medium heat, stirring constantly, until mixture is steaming, about 5 minutes.
  • Beat egg yolks in a measuring cup. Continue beating while gradually adding hot milk mixture, 1 tablespoon at a time, until yolk mixture measures about 1 cup. Pour egg-milk mixture back into the saucepan and add chocolate; stir until chocolate has melted, about 5 minutes.
  • Stir heavy cream, vodka, coffee-flavored liqueur, and vanilla extract into chocolate mixture. Refrigerate until completely cooled.
  • Pour mixture into an ice cream maker and freeze according to the manufacturer's instructions. The alcohol substantially lowers the freezing point so the ice cream maker will only bring the mixture to a cold slush. Allow ice cream to ripen in the freezer for several hours until firm.
