1/2 cup uncooked brown rice
3 teaspoons grated lemon zest, divided
1/4 teaspoon salt
3 cups 2% milk
3 tablespoons brown sugar
1 teaspoon vanilla extract
Optional toppings: fresh mango, ground cinnamon and unsweetened coconut flakes

Steps:

  • In a large saucepan, combine the water, rice, 1-1/2 teaspoons lemon zest and salt. Bring to a boil. Reduce heat; cover and simmer for 30-45 minutes or until tender., Stir in milk and brown sugar. Cook, uncovered, for 40-50 minutes or until desired consistency, stirring occasionally. Remove from the heat; stir in vanilla and remaining lemon zest. Chill if desired., Spoon into dessert dishes. Add toppings as desired.

2 cups instant white rice (such as Minute®)
½ teaspoon butter
⅛ teaspoon salt
1 cup milk
2 tablespoons brown sugar, or to taste
1 teaspoon cornstarch

Steps:

  • Bring water to a boil in a saucepan. Stir rice, butter, and salt into water until the butter melts. Cover saucepan and remove from heat. Set aside until water is absorbed, about 5 minutes.
  • Stir milk, brown sugar, cornstarch, and vanilla extract into the rice; bring to a simmer over medium heat while stirring; cook until the rice has the consistency of loose oatmeal, about 5 minutes. Ladle pudding into bowls and dust with cinnamon.

Steps:

  • Bring nonfat milk, rice and salt to simmer in heavy medium saucepan. Reduce heat to low. Cover and gently simmer until rice is very tender and liquid is almost absorbed, stirring occasionally, about 1 1/2 hours.
  • Whisk milk, eggs, sugar, vanilla and cinnamon to blend in medium bowl. Stir in raisins. Gradually stir egg mixture into rice mixture. Stir over low heat until mixture is just thickened, about 6 minutes. Transfer to bowl. Stir in molasses. Cool. Refrigerate until well chilled.(Can be prepared 2 days ahead.)

1/2 cup dried cranberries or 1/2 cup dried tart cherry

Steps:

  • Butter the inside of the crock pot or casserole dish.
  • Stir together the cooked brown rice, the dried fruit, both sugars and the cardamom in the crock pot.
  • In a saucepan whisk together the coconut milk, milk, and egg. Heat through until hot {{without}} boiling. Stir in the almond extract. Pour over rice mixture.
  • Cook on LOW for 2-2 1/2 hours or until liquid has absorbed.

1/2 cup brown rice

Faced with the challenge of finding a dessert that met the requirements of the WW Core program, I modified a recipe from one of my favorite cookbooks, "The New American Plate." This is Core plus points for the sugar used, if any. I made mine with the brown sugar Splenda but use what you have on hand. I have done this with the cinnmon sticks, with the vanilla bean and a combination. Both were good. This is not a very sweet pudding and works well rewarmed for breakfast the next day. Thought it was good enough to share.

4 1/2 cups nonfat milk
1/3 cup nonfat dry milk powder
1 cup brown rice
3 cinnamon sticks or 1 whole vanilla bean
1 pinch salt
3 tablespoons brown sugar (use more if you like a sweeter rice pudding) or 3 tablespoons baking Splenda sugar substitute (use more if you like a sweeter rice pudding)
1 1/4 teaspoons vanilla (only if using cinnamon sticks)
1 pinch ground nutmeg
1/4 cup plain nonfat yogurt
2 tart apples, peeled, cored and diced
1 pear, peeled, cored and diced

Steps:

  • Place powdered milk in a large heavy sauce pan, add about 1 cup of milk and whisk to form a slurry. Add remaining milk and continue to whisk. Place the milk mixture over medium high heat adding cinnamon sticks or vanilla bean, rice and salt. (If you are using the bean, use a knife to cut a lengthwise slit across the bean so that it releases the seeds into the milk.) Bring just to a boil, do not let the milk scald, and reduce heat to a low simmer. Cook for 60-70 minutes, stirring occasionally. At the end of the hour the milk should be almost fully absorbed, about three quarters gone.
  • Stir in the sugar, vanilla (if using cinnamon sticks), nutmeg and three quarters of the fruit continuing to cook another 15 minutes. The rice pudding mixture will continue to thicken which is good.
  • Remove the pudding from the heat and fetch out the cinnamon sticks. Stir in the yogurt.
  • Transfer the warm pudding to a serving bowl or individual serving dishes. Garnish with remaining diced fruit and sprinkle with cinnamon.

This low calorie rice pudding has been family tested and approved and can be whipped up in no time.

1 1/2 c low fat (i use skim)
1/6 c brown sugar (splenda), firmly packed, (1/3 cup, if using regular brown sugar)
1 tsp vanilla extract
1/4 tsp almond extract, optional (i have used before, but not necessary)
1 tsp cinnamon, ground
1 c brown rice, cooked ( i use instant brown rice, for shorter cooking time)
1/2 c raisins
1/2 c walnut pieces

Steps:

  • 1. Combine eggs, milk, sugar, vanilla and cinnamon in a mixing bowl. Beat until well combined (but not foamy).Stir in rice, raisins and walnuts. Pour into a 1 1/2 quart ovenproof dish. Place dish in a larger baking dish or pan. Pour boiling water into the backing dish (being careful not to get water in the pudding mixture) to a depth of approx. 1 inch.
  • 2. Bake in preheated 350 degree oven for 45 to 55 minutes, until a knife inserted near center comes out clean.Serve warm or at room temperature. Garnish with whipped topping or ice cream.
  • 3. Note: You can, also use dried cherries or craisins. Pecans or Almonds for a change or whatever you happen to have on hand.

The flax is healthy and chock full of fiber, and acts as a stabilizer for the almond milk since vegan milks don't thicken on their own plus it has more nutritional value than cornstarch. I use Sun Crystals to cut down on sugar but stay chemical-free (it is 50% sugar and 50% stevia extract, has 240 calories for 1/4 cup.) so it's sweet but not overpowering the other flavors in it.

1 cup uncooked brown rice
2 cups boiling water
1 dash salt
3 cups plain unsweetened almond milk
2 tablespoons ground flax seeds
1/4 cup blanched slivered almond
1/2 cup sugar (I used 1/4 cup Sun Crystals stevia-sugar blend)
1 tablespoon rose water
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
3 dashes cardamom (just a few shakes)
saffron, powder
chopped pistachios

Steps:

  • Boil 2 cups of lightly salted water in a heavy-bottom saucepan, immerse the brown rice in it. Lower the heat, loosely cover the pot, and let simmer at medium-low heat for 40 minutes or until the rice has absorbed all the water.
  • Add all the other ingredients and mix well, and loosely cover. Let simmer on medium-low heat for 15-20 minutes or until the mixture has thickened and the rice is very tender.
  • Pour into an airtight container and refridgerate for at least 2-3 hours before serving, or overnight. Makes a great breakfast too if made with amaranth or quinoa!

This is a pudding for whole food-minded people, deliciously different from the traditional rice pudding. Taken from Delia Smith's Complete Cookery Course ISBN 0-563-36249-9. Cooking and preparation times are a guesstimate.

275 ml brown rice
570 ml milk
4 tablespoons dark brown sugar
1 egg, beaten
1/2 teaspoon ground cinnamon
1/4 teaspoon nutmeg, grated
110 g dried apricots, soaked overnight then drained and chopped
175 g prunes, soaked overnight then drained and chopped
150 g natural yoghurt

Steps:

  • In a thick-based saucepan bring the milk to the boil and sprinkle in the rice.
  • Stir, then cover and cook on a very low heat for about 50 minutes or until the rice is tender.
  • Keep an eye on it or the milk might boil over and, towards the end of the cooking time, have a peep as you may need to add a drop more milk.
  • Then take it off the heat and stir in 3 tbsps of the sugar, the beaten egg, cinnamon and nutmeg.
  • Next, butter a 4 pint (2.25 litre) casserole dish, spread half the rice mixture in it and top this with half the fruit.
  • Spread the rest of the rice on top and cover this with the remaining fruit.
  • Cover the casserole with a lid and bake in a pre-heated oven for 30 minutes at gas mark 4, 350F or 180°C.
  • At the end of the cooking time, remove the pudding from the oven, spread the yoghurt over the top and sprinkle with the remaining tbsp of sugar.
