SOFT, FLUFFY BROWN RICE BREAD (GLUTEN-FREE, DAIRY-FREE)



Soft, Fluffy Brown Rice Bread (Gluten-Free, Dairy-Free) image

This soft and fluffy brown rice bread is simple to make, and is great for making sandwiches, or toasting and spreading with butter and jam. Made with brown rice flour for extra fiber, this easy yeast bread is totally gluten-free and dairy-free too.

2 cups brown rice flour
1 3/4 cups warm water (approximately 105F - 115F)
1/4 cup sunflower oil
1/4 cup psyllium husk powder
1 tablespoon instant yeast
2 tablespoons sugar
3/4 teaspoons xanthan gum
2 eggs, room temperature
1 teaspoon baking powder
1/2 teaspoon salt

Steps:

  • Grease an 8″x4″ metal loaf pan.
  • In a large mixing bowl, whisk the brown rice flour, psyllium husk powder, instant yeast, sugar, baking powder, xanthan gum, and salt together.
  • Add the warm water, sunflower oil, and eggs to the dry ingredients and mix well to get a wet and shaggy dough (the dough is supposed to be shaggy, so don't worry).
  • Transfer the dough to the greased loaf pan and smooth out the top with a spatula.
  • Cover the dough pan with a kitchen towel and let the dough rise approximately 30 to 40 minutes in a warm, draft-free place until it has almost doubled in size. (Tip: I like to place the loaf pan in my microwave with the power off - it creates the perfect draft-free and warm environment for rising dough).
  • During the last 10 minutes of the dough rising, preheat oven to 350F and adjust the oven rack to the middle position.
  • Bake the dough for 40 to 50 minutes until bread has turned dark brown on top and the loaf sounds hollow when tapped. Remove loaf from the oven.
  • Let the loaf cool for 10 minutes in the loaf pan, before removing and letting it cool completely on the wire rack. Use a serrated bread knife to slice once the loaf has completely cooled.

1/3 cup brown rice
2/3 cup water
1 1/2 tablespoons olive oil
1/2 cup warm water (up to 1/2 cup to make dough, by eye)
3 cups bread flour
2 tablespoons white sugar
1 teaspoon salt
1 1/2 teaspoons active dry yeast

Steps:

  • In a saucepan bring water to a boil. Add rice and stir. Reduce heat, cover and simmer for 15 minutes.
  • Place 1/2 cup of cooked rice in a two cup measuring cup.
  • Add oil and enough warm water to equal 1 1/2 cups. Add this mixture to pan of bread machine. Add flour, sugar, salt and yeast. Select cycle; press Start.
  • In my bread machine this takes 2 1/2 hours start to finish.

I found this on allrecipes, and it is one of my favorite all-purpose bread machine recipes. A high-rising loaf with excellent texture, and the taste is very adaptable to whatever flavorings you may choose to add (sweet or savory). Whatever we can't eat while it's hot usually becomes either cinnamon toast or garlic cheese toast the next day. Prep time does not include cooking time for rice. Makes 1 1 1/2 lb loaf.

1/2 cup leftover brown rice (or 1/3 cup uncooked, if you don't have leftovers)
1 1/2 tablespoons olive oil
water (approx. 80-110 degrees F)
3 cups bread flour (all-purpose also works)
2 tablespoons sugar
2 teaspoons salt
1 1/2 teaspoons active dry yeast
1 tablespoon vital wheat gluten (optional)

Steps:

  • If you don't have any leftover brown rice, prepare 1/3 cup of uncooked rice and allow to cool a bit.
  • Place 1/2 cup cooked rice in a 2-cup measure.
  • Add olive oil and enough warm water to make 1 1/2 cups total.
  • Pour rice mixture into pan of bread machine, and add all other ingredients per manufacturer's recommended order.
  • Set machine for Basic setting and desired crust color.
  • Bake.

My husband and I chose not to eat wheat much, and we were given a bread machine for a wedding present. So we searched for a good rice bread recipe. I found this one. I have tried it a handful of times and each time it comes out very well. So I thought I'd share. This bread is very moist and dense. Like most rice breads it does not rise as much as wheat bread. So if you try it and it does not rise above half of the pan do not worry. This recipe was also a find because we had friends and family who were sensitive to wheat. I hope you enjoy!

1 cup water
1/3 cup milk (I use skim, but have used soy and it worked well too)
2 eggs
1 teaspoon apple cider vinegar
4 tablespoons oil
2 tablespoons sugar
1 teaspoon salt
1 1/2 cups rice flour
2/3 cup brown rice flour
1 1/2 teaspoons xanthan gum or 1 1/2 teaspoons guar gum
2 teaspoons fast rising yeast or 2 teaspoons bread machine yeast

Steps:

  • 1. Put all wet ingredients right into the bread machine baking pan according to your bread machine manual. Liquids first.(I put them in in the order listed).
  • 2. Once the wet ingredients are in the pan start with the dry ingredients. When putting the flour in try to spread the flour around so that it covers all of the liquids underneath.
  • 3 Once the flour is spread, put in the yeast.
  • 4 Use a Basic bread setting. Medium Crust color. Makes a 2lb loaf.

2 ¼ cups white rice flour
1 cup brown rice flour
2 ½ teaspoons xanthan gum
1 teaspoon unflavored gelatin
3 tablespoons superfine sugar
1 ½ teaspoons salt
1 tablespoon egg substitute
½ cup dry milk powder
2 ¼ teaspoons active dry yeast
3 eggs
1 teaspoon cider vinegar
3 tablespoons walnut oil
½ cup warm water (110 degrees F/45 degrees C)

Steps:

  • To help insure success have all ingredients at room temperature before proceeding. Combine the white rice flour, brown rice flour, xanthan gum, and salt. Mix very well. The flours need to be completely combined.
  • Combine the gelatin, sugar, egg replacer, milk powder, beaten eggs, vinegar and oil. Beat until well combined.
  • Combine the flour mixture, egg mixture and yeast together and beat well. A standup mixture works best for this. Add tepid water to dough if mixture is to dry. The dough should be somewhere between a normal bread dough consistency and a batter.
  • Pour into greased 9x5 inch bread pan and allow to rise in a warm, still place until doubled in bulk. Bake in a preheated oven at 325 degrees F (165 degrees C) until crust is a light to medium brown. Cool ten minutes in the pan, then to room temperature outside the pan before slicing.
