Tequila, lime, a touch of orange: the Margarita is a perfect mixture, with or without salt.

2 ounces blanco tequila
Juice of 1 whole lime
1/2 ounce triple sec, preferably Cointreau
Salt for rim (optional)
Lime wedge, for garnish

Steps:

  • Fill a cocktail shaker with ice and add tequila, lime juice and triple sec. Shake. Pour, with the ice, into a highball or footed glass (salt rim first if you like). Garnish with wedge of lime.

1 1/2 oz. reposado tequila
1/2 oz. Élixir Combier
1/2 oz. thyme syrup
3/4 oz. lime juice
Finely crushed pink sea salt
White peppercorn
Sugar
Dr. Brown's Cel-Ray Soda

Steps:

  • Shake tequila, Élixir Combier, thyme syrup and lime juice in a shaker filled with ice. Rim a highball glass with sea salt, peppercorn and sugar. Strain into glass. Top with soda.

3 ounces Templeton rye
1/2 ounce Dolin dry vermouth
2 dashes Angostura bitters
1 thick strip of lemon peel

Steps:

  • Stir all ingredients except lemon peel with ice in a mixing glass for 30 seconds. Strain into a chilled coupe, whose interior has been rubbed with the lemon peel. Twist lemon peel over the drink and use it as a garnish.
