BROILER ICING
This is a caramel nut coconut icing that you toast under the broiler. Excellent on oatmeal cake!

- In a medium bowl, combine brown sugar, butter, and cream. Mix in coconut and chopped nuts.
- Spread icing over cooled cake. Place cake under broiler for 2 minutes or until bubbly.

Steps:
- Preheat oven to 350°F.
- In a large bowl, beat egg, then mix in honey. Stir in oil.
- Sift flour, spices, salt and baking soda together.
- Stir dry ingredients alternately with applesauce into wet ingredients. Batter will be stiff.
- Pour into a 9x13 cake pan. Bake for 1 hour, or until a skewer poked into cake comes out clean.
- Cream butter and honey. Mix in remaining ingredients.
- Spread icing on cake when finished baking (no need to cool), and put back in oven.
- Broil 3 or 4 minutes until it browns (watch carefully! It can get very dark before you know it!).
