This recipe is equally great for company or a weekday meal. It's fast and easy to make. The Parmesan cheese compliments the delicate flavor of the sole.

1/2 cup freshly grated parmesan cheese
3 tablespoons butter, softened
1/8 teaspoon cayenne pepper
2 tablespoons thinly sliced green onions
3 tablespoons mayonnaise
1 teaspoon grated lemon, rind of
1 1/2 lbs sole fillets
2 tablespoons lemon juice

Steps:

  • Heat broiler.
  • In medium bowl, stir together all ingredients except fish and lemon juice.
  • Place sole fillets on broiler pan; sprinkle with lemon juice.
  • Broil 3-4 inches from heat until fish flakes with a fork (about 3-5 minutes).
  • Spread Parmesan mixture over fillets and broil until bubbly and golden brown (3-5 minutes).

1/2 cup (1 stick) butter, room temperature
2 tablespoons chopped fresh chives
1 tablespoon chopped fresh dill
1 tablespoon chopped fresh thyme
1 tablespoon fresh lemon juice
6 4- to 5-ounce sole fillets
Olive oil
Fresh dill sprigs
Lemon wedges

Steps:

  • Mix butter, chopped herbs and fresh lemon juice in small bowl to blend. Season to taste with salt and pepper.
  • Preheat broiler. Place fish fillets on rimmed baking sheet; brush with olive oil and sprinkle with salt and pepper. Broil just until opaque in center, about 3 minutes. Spoon butter mixture over fish; broil just until butter melts, about 1 minute longer. Transfer fish to plates, spooning melted butter from pan over fillets. Garnish with dill sprigs and lemon wedges and serve.

  • Arrange fillets so they don't overlap.

1 1/2 lbs sole fillets
1/2 teaspoon salt
1/2 teaspoon pepper
4 garlic cloves, minced
1/4 cup fresh basil, chopped
1/4 cup fresh Italian parsley, chopped
1 teaspoon lemon peel, grated
2 tablespoons butter or 2 tablespoons margarine
2 tablespoons lemon juice

Steps:

  • Preheat the grill to medium-high and coat grill rack with nonstick cooking spray. Sprinkle filets evenly with salt and pepper.
  • Combine lemon peel, 2 garlic cloves, 2 tbsp of basil, 2 tbsp of parsley in a shallow bowl. Gently press both sides of filets into garlic mixture. Coat filets evenly with cooking spray.
  • Grill filets on rack, covered with grill lid, 5 to 7 minutes on each side or until fish flakes with a fork. Arrange filets on serving platter. Cover and keep warm.
  • Melt butter in a large skillet over medium-high heat. Add remaining garlic and cook 1 minute. Add remaining basil, parsley and the lemon juice. Bring to a boil. Remove from heat. Spoon sauce over fish. Serve immediately.
