This recipe for fresh grilled shark steaks with a hint of lemon brings out their natural flavor on the grill.

2 (8 ounce) shark steaks
2 cups milk
1 tablespoon lemon juice
sea salt and freshly ground black pepper to taste

Steps:

  • Place the shark steaks in a shallow dish and pour milk over them to cover. Let stand for 2 hours, or refrigerate overnight.
  • Prepare a grill for medium-high heat. Remove the shark steaks from the pan and pat dry. Discard leftover milk. Season the steaks with lemon juice, sea salt and pepper.
  • Grill the steaks until meat is firm, about 15 minutes, turning once. Fish should appear white all the way through.

1 lb fresh shark steaks or 1 lb fresh swordfish steak
2 green onions, thinly sliced
2 tablespoons orange juice
2 tablespoons chili sauce
1 teaspoon dried basil, crushed
1 tablespoon finely chopped fresh gingerroot
1 tablespoon reduced-sodium soy sauce
5 -6 dashes hot chili oil
nonstick spray coating

Steps:

  • Rinse fish; pat dry with paper towels.
  • Cut into serving size pieces.
  • For marinade, in a shallow bowl combine the green onions, orange juice, chili sauce, basil, gingerroot, soy sauce, and chili oil.
  • Add the fish; turn to coat with marinade.
  • Cover; marinate at room temperature for 20 minutes.
  • Spray the unheated rack of a broiler pan with nonstick coating.
  • Drain fish, reserve marinade.
  • Place fish on prepared rack.
  • Broil 4 inches from the heat for 5 minutes.
  • Using a wide spatula, carefully turn fish over.
  • Brush with the reserved marinade.
  • Broil for 5-7 minutes more or until fish flakes easily when tested with a fork.

BROILED SHARK WITH PESTO TRAPANESE

4 garlic cloves
25 large fresh basil leaves
1/4 cup whole almonds, toasted
3/4 pound plum tomatoes, peeled, seeded, chopped, drained
3 tablespoons extra-virgin olive oil
2 tablespoons chopped pitted imported green olives
4 5-ounce shark or swordfish steaks (about 3/4 inch thick)
4 tablespoons dry white breadcrumbs

Steps:

  • With processor running, drop garlic through feed tube; process until chopped. Scrape down sides of bowl. Add basil and almonds; chop finely. Add tomatoes, oil and olives; process using on/off turns until mixture resembles coarse paste (do not purée). Season with salt and pepper. (Pesto can be made 4 hours ahead. Cover and chill.)
  • Preheat oven to 400°F. Lightly oil large baking sheet. Arrange shark steaks on prepared sheet. Sprinkle with salt and pepper. Spread 3 to 4 tablespoons pesto over each steak. Cover each with 1 tablespoon breadcrumbs. Bake until fish is just opaque in center, about 10 minutes.
  • Preheat broiler. Broil fish until crumbs on top begin to brown, about 2 minutes. Transfer fish to plates. Serve, passing remaining pesto separately, if desired.
