My boyfriend is an avid fisherman so when he brings home trout, this is one of the ways we prepare it. Hope you enjoy. It's from the Favorite Brand Names Cookbook.

6 tablespoons regular mayonnaise or 6 tablespoons light mayonnaise
1 garlic clove, minced
1 tablespoon lemon juice
herbs (i usually use dill or thyme)
1 dash pepper
4 (4 ounce) rainbow trout fillets

Steps:

  • Combine mayo, garlic, lemon juice, herbs and pepper in bowl; mix well.
  • Cover flesh side of each trout fillet with 1/4 of the mayo mixture.
  • Broil 4" from heat source for about 3-5 minutes, or until fish flakes with a fork and topping is bubbly.

Broiled Steelhead Trout With Rosemary, Lemon and Garlic image

This recipe would also work for many other types of fish, like catfish or salmon, but Steelhead is what I had on hand. So yummy!

1 lb steelhead fillet, with or without skin
1 clove garlic, chopped fine
1 1/2 tablespoons coarsely chopped fresh rosemary
1 lemon, zest of
1/2 lemon, juice of
1/4 teaspoon salt
1/2 teaspoon fresh ground pepper
1 tablespoon olive oil, plus
additional oil, for greasing baking pan

Steps:

  • Prepare a baking or roasting pan by lining it with foil and brushing it with olive oil.
  • Preheat broiler.
  • Mix together all remaining ingredients except fish into a well-blended paste.
  • Place fish skin-side down (if it has skin) on baking sheet, then spread seasoning over flesh.
  • Broil fish at second rack away from heat for 5 minutes or less, just enough to sear flesh but not burn herbs.
  • Lower fish to 3rd or 4th rack and lower oven heat to 325°F Bake for 10 additional minutes, or until fish is cooked through in the thickest portion.
  • Serve with steamed vegetables, salad, orzo salad, whatever.

Just came up with this recipe this weekend. It's pretty basic but delicious.

1 lemon, sliced into thin rounds with the ends reserved
3 tablespoons olive oil
1 ½ teaspoons minced garlic
1 ½ teaspoons minced onion
salt and ground black pepper to taste
1 filet steelhead trout

Steps:

  • Lightly oil the grate of your grill. Arrange lemon slices on the grate so they overlap slightly and form a shape slightly larger than your trout fillet.
  • Preheat grill for medium heat to 350 degrees F (175 degrees C).
  • Heat olive oil in a small skillet over medium-high heat.
  • Saute garlic and onion in the hot oil until the garlic browns slightly, 2 to 3 minutes; season with salt and pepper. Squeeze the reserved lemon ends over the garlic mixture.
  • Gently lay the trout fillet onto the lemons with the skin side down. Brush the garlic mixture over the top of the fish.
  • Cook trout on hot grill until the fish flesh flakes easily with a fork, about 10 minutes.

WHOLE RAINBOW TROUT BAKED IN FOIL

It's easy to find farmed rainbow trout these days. They're usually boned and "butterflied" - opened up, with the halves still attached. I bake them in foil packets and moisten them with the savory juice that accumulates inside as they bake.

Extra virgin olive oil
4 small rainbow trout, boned
Salt
freshly ground pepper
2 lemons, one sliced, one cut in wedges
8 fresh tarragon or dill sprigs, or 4 rosemary sprigs
Chopped fresh tarragon, dill or parsley for serving

Steps:

  • Preheat the oven to 450 degrees. Cut four sheets of heavy duty aluminum foil or eight sheets of lighter foil into squares that are three inches longer than your fish. If using lighter foil, make four double-thick squares. Oil the dull side of the foil with olive oil, and place a trout, skin side down, on each square. Season both sides with salt and pepper, and open them out flat. Place two tarragon or dill sprigs (or one rosemary sprig) and two lemon slices down the middle of each, and fold the two sides together. Drizzle 1/2 teaspoon olive oil over each fish.
  • Making sure that the trout are in the middle of each square, fold up the foil loosely, grabbing at the edges and crimping together tightly to make a packet. Place on a baking sheet, and bake for 10 to 15 minutes, checking one of the packets after 10 minutes. The flesh should be opaque and pull apart easily when tested with a fork.
  • Place each packet on a plate. Carefully cut across the top to open it, taking care not to let the steam from inside the packet burn you. Gently remove the fish from the packet, and pour the juices over it. Sprinkle with fresh tarragon, dill or parsley. Serve, passing the lemon wedges.

I stole this one from a family member, It's super easy to make and so delicious. Steelhead is kind of a cross between salmon and trout. This recipe can easily be substituted with salmon, and can be done on the BBQ as well be sure to use foil and or a bakesheet. Leftovers make great sandwiches!

1 large steelhead fillet or 1 large salmon
1/4 cup Hellmann's mayonnaise
1/2 teaspoon dry dill weed
1/4 teaspoon Old Bay Seasoning
1/2 a lemon, juice of
salt & fresh ground pepper

Steps:

  • Rinse and thouroghly pat dry Steelhead or Salmon.
  • Place skin side down on bake sheet that has been foiled and sprinkled with olive oil.
  • Combine mayo, dill, seasoning, lemon, salt and pepper in a bowl and mix with a wisk.
  • Spread mixture evenly over the fish.
  • Pre-heat the broiler.
  • Place in the oven on the middle rack.
  • Broil on high and check for doneness after 10 min.
  • Test the center of the fillet with a fork, fish should flake easily.
