This recipe is for two [2] thin, sweet, tender, 1/2" thick T-Bones; about 8 ounces each, including the bone. "ala Elswet" is for the garlic and pepper lovers in the carnivorous kingdom. This is super-easy and tastes SO GOOD! We love it! We hope you love it, too.

16 ounces beef t-bone steaks, store-butcher sliced into thin 1/2-inch steaks (timing will be different for 1-inch steaks!)
4 large garlic cloves, sliced paper thin, large-jumbo sized cloves
1 teaspoon salt
1 teaspoon meat tenderizer, no MSG, unseasoned
2 tablespoons virgin olive oil
1 tablespoon black pepper, coarsely ground

Steps:

  • Oil both steaks well and place into lined broiling pan. Do NOT use rack, or the meat will be dry! Pour remaining oil over steaks and turn steaks over and over to thickly coat.
  • Halve salt, tenderizer, and pepper equally; sprinkle both steaks, both sides. Halve sliced garlic cloves and place on both sides of both steaks.
  • Let steaks marinate a minimum of 4 hours [overnight is highly preferred]. Turn steaks over to saturate other side, half way through marination time, if possible, replacing errant garlic slices.
  • Preheat oven to broil, and broil steaks in broiling pan 4 minutes on top side, flip, and 3 minutes on other side for medium.
  • 3 minutes on top side, flip, and 2 minutes on bottom for medium-rare.
  • 5 minutes on top side, flip, and 4 minutes on bottom for well.

Grilled Pepper Crusted T-Bone Steaks with Worcestershire-Chive Butter and Grilled Leeks with Herbed Vinaigrette image

1 tablespoon olive oil
1/4 cup finely chopped shallots
1 teaspoon finely chopped garlic
2 stick unsalted butter, at room temperature
1/4 cup Worcestershire sauce
2 tablespoons dry mustard
3 tablespoons finely chopped chives
Salt and freshly ground pepper
2 cups coarsely ground black peppercorns
3 tablespoons ancho chile powder
8 T-bone steaks, each 10 to 12 ounces
Olive oil
Salt
1 tablespoon Dijon mustard
1/4 cup white wine vinegar
1 tablespoon finely chopped shallots
1/3 cup minced assorted fresh herbs, (chives, parsley, tarragon, chervil)
1/2 cup extra virgin olive oil
Salt and freshly ground pepper
12 medium leeks, tough outer leaves discarded, trimmed, split lengthwise

Steps:

  • For the butter: Preheat grill or side burner. Heat oil in a medium skillet add shallots and garlic and cook until soft, let cool slightly. Place butter in a small bowl and add shallot mixture, Worcestershire, mustard and chives and mix until combined. Season with salt and pepper to taste. Scrape mixture into the center of a piece of waxed paper and roll into a log. Refrigerate until firm.
  • For the steaks: Preheat grill. Mix the peppercorns and ancho chile powder in a medium baking dish. Brush steaks with olive oil and season with salt. Dredge one side of the steaks in the pepper mixture and grill, pepper side down, until golden brown, about 5 to 6 minutes, turn over and continue grilling 6 to 7 minutes for medium-rare doneness. Remove from the grill and top with a slice of the butter.
  • For the vinaigrette: Whisk together the mustard, vinegar, shallots and herbs. Slowly whisk in the olive oil until emulsified. Season with salt and pepper to taste.
  • For the leeks: Preheat grill. Brush leeks with olive oil and season with salt and pepper to taste. Grill for 4 to 5 minutes on each side, until just cooked through. Remove to a platter and drizzle with the vinaigrette.

This is the best recipe for the grill and t-bones. My husband loves them and asks for them all the time. The key to a good steak is bringing it to room temp. before you cook it. The garlic and pepper go hand in hand.

6 cloves garlic, minced (i use a fine cheese grater it works great)
fresh ground pepper

  • bring the t-bones to room temp.
  • mince the garlic and apply liberally to each side of the steak.
  • next with your pepper mill add the fresh ground pepper until the steak is covered on both sides, again apply liberally.
  • the best cooking method is the grill but you can also broil them.

4 tablespoons soy sauce
4 tablespoons hoisin sauce
2 tablespoons dark sesame oil
2 teaspoons chili-garlic sauce
4 garlic cloves, minced
2 tender steaks, 1-inch thick
2 -4 tablespoons chopped parsley (optional)
2 teaspoons toasted sesame seeds

Steps:

  • In ziploc baggie, combine first 5 ingredients.
  • Add steaks, turn bag over and over to coat both sides of each steak well.
  • Marinate in fridge for 30 minutes to overnight.
  • Heat broiler, remove steaks from bag saving marinade.
  • Place steaks on lightly geased broiler pan.
  • Spoon half of the marinade on steaks.
  • Broil 4-6 inches from heat for 4 minutes.
  • Turn steaks over, top with rest of marinade, and broil 4-5 minutes longer for medium rare.
  • Plate, and sprinkle with sesame seeds and parsley.
  • *Let rest 5 minutes before eating.
  • You can also slice this thinly and serve over rice or make wraps.
  • These can also be cooked on a grill.

6 hamburger patties (each about 1/2-inch thick)

pepper
2 tablespoons butter
1 onion, chopped
3/4 lb mushroom, sliced
2 tablespoons flour
1 1/2 cups milk
1 teaspoon Worcestershire sauce
salt
pepper
1/2 teaspoon paprika
2 tablespoons fresh parsley, chopped

Steps:

  • Heat oil in large non-stick skillet.
  • Cook patties approximately.
  • 4 min per side.
  • Season with salt& pepper.
  • Remove from pan.
  • Keep warm.
  • Return pan to heat and add butter.
  • Cook onions and mushrooms about 5 minutes or until tender.
  • Sprinkle with flour.
  • Cook 3 minutes longer.
  • Add milk, worc.
  • sauce, salt, pepper and paprika.
  • Bring to a boil.
  • Reduce heat.
  • Cook gently, uncovered, 4-5 minutes.
  • Return patties to pan and cook 5 minutes or til cooked through.
  • Taste and adjust seasonings, if necessary.
  • Sprinkle with parsley.
  • **You can use thin minute steaks instead of hamburgers but cook steaks for 2 minutes in step 5 or til cooked through.
