I went to my butcher's to try a new fish and he told me this basic recipe! Must say, the smell was great! The spice measurements are estimates because it's just sprinkling it on each side! It's also good to put some slices of ripe tomato on top before baking.

2 basa fillets (fresh or thawed)
2 teaspoons garlic powder
3 teaspoons oregano
1/4 cup shredded mozzarella cheese or 1/4 cup shredded Italian cheese blend

Steps:

  • Pre-heat the oven to 400 F.
  • Pat the fillets dry with paper towel.
  • Sprinkle the oregano and garlic powder on both sides of each fillet.
  • Put them in a baking dish and sprinkle with the cheese.
  • Sprinkle some more oregano on top of the cheese.
  • Cover with foil (or if your baking dish has a lid) and bake for approximately 30 minutes.

Crispy Baked Basa image

Basa is a new fish that is common in many markets here in Houston. It is a mild, tasty fish.

¼ cup mayonnaise
1 tablespoon stone ground mustard
1 teaspoon capers
1 teaspoon ketchup
¼ teaspoon paprika
¼ teaspoon hot pepper sauce
1 pound swai fish
1 ½ tablespoons olive oil
1 cup finely crushed plain Melba toast rounds
salt and pepper to taste
1 clove garlic, minced
1 lemon, sliced

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a bowl, thoroughly blend the mayonnaise, mustard, capers, ketchup, paprika, and hot pepper sauce.
  • Brush the basa fillets with about 1 tablespoon olive oil, and roll in the crushed Melba toast to coat. Season with salt and pepper. Use a kitchen sprayer to lightly spray the coated fish with remaining olive oil. Arrange the fish in a baking dish and top with garlic and lemon slices.
  • Bake 15 minutes in the preheated oven, or until fish is easily flaked with a fork and coating is lightly browned. Serve with the mayonnaise sauce mixture.

BROILED CARIBBEAN SEA BASS

Sea Bass is one of my favorite fish so I like to make this quite often. The hot pepper sauces gives it a little kick This cooks quickly and only really needs 30 minutes to marinade. The cooking time includes the 30 minutes marinating time.

6 (5 -6 ounce) sea bass steaks (skinless about 5 to 6 oz each about 1/2 inch thick) or 6 (5 -6 ounce) striped bass fillets (skinless about 5 to 6 oz each about 1/2 inch thick)
1/3 cup chopped cilantro
2 tablespoons olive oil
2 tablespoons fresh lime juice
2 teaspoons hot pepper sauce
2 garlic cloves, minced
7 ounces black bean and rice mix
lime wedge

Steps:

  • Place fish in a shallow dish.
  • Combine cilantro, oil lime juice, pepper sauce and garlic in a small bowl and pour over fish. Cover, marinade in refrigerator 30 minutes or up to 2 hours.
  • Prepare black bean and rice mix according to package directions,
  • Keep warm.
  • Preheat broiler.
  • Remove fish from marinade.
  • Place fish on rack of broiler pan, drizzle with any remaining marinade in dish.
  • Broil 4 - 5 inches from heat 8 to 10 minutes until fish is opaque.
  • Serve with black beans and rice and lime wedges.
