Steps:

  • Preheat the oven's broiler and set the oven rack at about 6 inches from the heat source.

I really didn't enjoy eating vegetables as a kid. When I moved to Stockton, California I discovered the wonderful taste of asparagus. Every April over 30,000 people flood into Stockton for the annual Asparagus Festival, with good reason. It's really a delicious vegetable that goes so well with everything (fish, meat, chicken). This is my favorite way of preparing asparagus. It's easy, quick and simple. And it's yummy!

1 lb asparagus spear
1 teaspoon salt
3/4 teaspoon fresh ground pepper
2 tablespoons olive oil

Steps:

  • Rinse the asparagus spears.
  • Snap off the tough ends of the spears.
  • Place the asparagus in a shallow metal or ceramic pan.
  • Drizzle olive oil over the asparagus.
  • Sprinkle sea salt or kosher salt over the asparagus.
  • Grind fresh black pepper over the asparagus.

2 tablespoons lemon juice, plus 1 lemon cut into wedges
1 teaspoon toasted sesame oil
4 skinless salmon fillets (4 to 6 ounces each)
1 pound asparagus, trimmed
1 cup couscous

  • Heat broiler with rack 6 inches from heat. Whisk together soy sauce, lemon juice, and sesame oil.
  • On a rimmed baking sheet, arrange asparagus and lemon wedges and brush with sauce. Broil 3 minutes. Add salmon to pan, brush with sauce, and season with salt and pepper. ¼ cup white wine, (chardonnay, pinot grigio, or sauvignon blanc)
¼ cup white wine vinegar
⅛ cup heavy whipping cream
1 cup butter, (cold and separated into tablespoons)
4 salmon fillets, 6 ounce (1.8 KG)
1 lb asparagus, trimmed
2 lemons
dill
extra virgin olive oil
⅛ cup almond, sliced
sea salt, to taste
white pepper, to taste

Steps:

  • Preheat the oven to 425° F.
  • Prep salmon filets by drizzling a small amount of olive oil, then seasoning with salt, pepper, and fresh dill. Slice the ends off of the two lemons (reserve the ends for later), then cut the remaining lemon in half, creating four (4) wheels. Arrange these lemon wheels onto the foil-lined baking sheet along with the salmon.
  • Mince shallot and place in a small saucepan with the white wine, white wine vinegar, a pinch of salt, and a pinch of white pepper. Heat mixture on low heat until almost evaporated.
  • While that's reducing, toss asparagus stems with extra virgin olive oil, garlic, sliced almonds, salt and pepper. Arrange asparagus on a foil-lined baking sheet and bake for 10 minutes.
  • Add heavy cream to shallot reduction and start whisking in cold butter, one tablespoon at a time, on low heat. Slowly melt butter into the sauce.
  • Move asparagus to the lower rack in the oven, switch oven to broil, and place salmon on the top rack. Broil for 13-15 minutes.
  • Squeeze juice of reserved lemons into the beurre blanc, being careful not to let any seeds get into the sauce. Whisk this in, then continue whisking every so often while the salmon broils. Then, strain the sauce and return to the lowest setting, continuing to whisk so sauce doesn't separate.
  • Remove asparagus and salmon from the oven and serve.
  • Enjoy!

3 sprigs fresh mint, leaves chopped
1/4 cup beef stock
2 tablespoons butter
Kosher salt and freshly ground black pepper
2 racks of lamb, frenched and cut into chops
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
2 sprigs fresh rosemary, leaves chopped
2 tablespoons butter
2 tablespoons olive oil
2 bunches white asparagus, bottoms trimmed

Steps:

  • For the sauce: In saute pan add the orange liqueur. Pour the alcohol into the pan and carefully ignite with a match or click lighter. Return the pan to the stove top over medium-high heat and gently swirl to reduce the flames. Add the mint and beef stock and reduce by half. Finish the sauce with the butter and season with salt and pepper. Hold warm. For the lamb: Preheat the oven to broil.
  • Sprinkle the lamb with salt, pepper and rosemary. Broil the lamb 2 minutes per side for medium-rare. Remove and let rest 5 minutes under foil .
  • While the lamb is resting, start the asparagus: Heat a saute pan over medium-high heat. Add the butter, olive oil and asparagus and saute until the asparagus is al dente, about 7 minutes. Season with salt and pepper.
  • To serve, place 2 to 3 lamb chops per plate, drizzle with the sauce and garnish with the asparagus.

Finally, I've gotten lazy, and I cheat, and just use cooking spray (I prefer Vegalene, but they do make olive oil sprays, too).

  • Heat broiler. In a mixing bowl, toss the asparagus with the oil. Lay out in a single layer on a baking sheet and sprinkle with salt and pepper. Broil, shaking the baking sheet occasionally, until tender and slightly charred, 6 - 8 minutes.
