This is a (vegetarian) variant of the Chicken Divan created by Louis Diat of the Ritz Hotel in New York during the '20s and '30s. It's delicious, different, and a complete meal.

1 lb firm tofu
1 lb broccoli
3 cups cooked rice
1 1/2 tablespoons olive oil
1 teaspoon curry powder
2 garlic cloves, minced
2 tablespoons flour
2 tablespoons butter
1 cup milk
1/4 lb cheddar cheese, grated

Steps:

  • Place rice evenly in a baking pan, about 12" by 8".
  • Chop tofu into triangles or 1/2" cubes and saute in vegetable oil with the minced garlic.
  • Steam or boil broccoli.
  • Arrange tofu, garlic, and broccoli over the rice.
  • For Sauce Divan, melt the butter in a small saucepan, then mix in the flour, creating a roux.
  • Add the cheese, and stir until you get a smooth sauce, then stir in the curry powder.
  • Pour the sauce over the rice, tofu, and broccoli.
  • Bake at 350 for 45 minutes to an hour.
  • Serve.

A vegetarian version of an American classic. Fresh or frozen broccoli and cauliflower may be used, this is what I had on hand at the time. Don't forget to freeze the tofu the night before!

1/2 small onion, diced
1 cup cremini mushroom, sliced
0.5 (14 ounce) package frozen tofu, dethawed and cubed (you may substitute seitan)
8 ounces broccoli, cut and steamed (I used 1 small crown)
0.5 (10 ounce) package frozen cauliflower, dethawed
1 (10 3/4 ounce) can cream of mushroom soup
1/2 cup vegan mayonnaise
2 teaspoons lemon juice (1/2 lemon)
1 tablespoon curry powder
pepper
1 (2 1/4 ounce) can olives, sliced
1 cup sharp cheddar cheese
1/2 cup crushed Cheez-It crackers
olive oil (or butter)
cooking spray

Steps:

  • Grease an 8X8 inch baking pan and preheat the oven to 350 degrees.
  • Heat a small amount of olive oil in a medium sized pan over medium high heat. Add the onions and saute until translucent.
  • Add mushrooms and continue sauteeing until cooked, then add the cubed tofu.
  • Pour this mix into the baking dish, then layer the broccoli and cauliflower on top.
  • In a medium bowl, mix the mushroom soup, mayo, lemon juice, and curry powder. Add more lemon or curry to taste and pepper to taste, then add the olives.
  • Mix half of the cheese into the soup mixture, then pour the mixture over the casserole.
  • Sprinkle the remaining cheese over the casserole.
  • Sprinkle the cheez-it crumbs on top and spray with oil.
  • Bake casserole for 40-45 minutes Let cool for a few minutes before eating.

Now, this sounds crazy and I am not a person that cooks with tofu often. I've recently become vegetarian for various reasons, and this was a recipe I was trying out. I ended up added some stuff too it because it was too bland, but then it turned out pretty awesome! My BF said that he hates tofu and he would eat it and like it! (Also - it doesn't taste exactly like "Chicken Divan" - however if you're having that creamy/brocoli feeling... go for it!)

1 red onion (small or large depending on what you like)
8 ounces frozen broccoli
0.5 (8 ounce) box firm tofu (pressed for about 15 mins)
0.5 (8 ounce) can vegetable broth
sesame oil
adobo seasoning (if you don't have that you can use onion powder or whatever you have on hand)
1 tablespoon soy sauce (more or less depending on your tastes buds)
garlic rice wine vinegar (splash)
1 tablespoon peanut butter
1 tablespoon fat free cream cheese
cilantro (fresh or dried to taste)

Steps:

  • Pour Broccoli, and onion into saute pan with olive oil to moisten. Saute on medium and start marination your tofu,
  • For tofu pour rice wine vinegar,soy sauce and sesame oil to taste. (Some like it stronger than I do) Let your tofu marinate while your veggies cook down. I like chunks of onion so mine takes longer.
  • Once they are translucent add half a can of vegetable broth.Your tofu should be ready to be added so cut it cubes and throw it inches Now let that simmer/reduce until you have about half the broth left. Now add your spices, pb, and cream cheese. Now let that simmer until it appears to have a creamy consistency.

This is like a chicken and broccoli casserole except it uses tofu. It's fast, easy, and delicious!

1 (14 ounce) package tofu, frozen and thawed
2 (16 ounce) packages frozen chopped broccoli
1 tablespoon extra-virgin olive oil, or as needed
2 cloves garlic, diced
2 (10.5 ounce) cans condensed broccoli cheese soup
¾ cup milk
1 (12 ounce) package dry bread stuffing mix
1 cup shredded Cheddar cheese
1 dash chili powder, or to taste
ground black pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Slice tofu into 1/4-inch cubes.
  • Place frozen broccoli in a microwave-safe bowl with a few tablespoons water. Cover and microwave on high power until tender, 3 to 4 minutes. Drain.
  • Heat oil in a skillet over medium heat. Add garlic and cook until fragrant. Add tofu and fry for 3 to 5 minutes. Remove from the heat.
  • Empty condensed soups into a bowl and stir in milk. Mix in dry stuffing mix. Add broccoli, fried tofu, Cheddar cheese, chili powder, and pepper; mix to combine. Dump into a 9x13-inch casserole dish.
  • Cook in the preheated oven for 20 to 25 minutes. Let cool for 5 to 10 minutes before serving.
