4 cups fresh broccoli florets (1 medium bunch)
3/4 cup golden raisins
1 small red onion, chopped
1/2 cup Miracle Whip
1 tablespoon white vinegar
2 teaspoons sugar
3 bacon strips, cooked and crumbled

Steps:

  • In a large bowl, combine the broccoli, raisins and onion. In a small bowl, combine the Miracle Whip, vinegar and sugar. Pour over broccoli mixture; toss to coat. Sprinkle with bacon. Refrigerate for at least 2 hours before serving.

1 pound bacon
6 cups chopped broccoli
1 small red onion, finely chopped
1 cup raisins
1 cup mayonnaise
½ cup white sugar
2 tablespoons white vinegar
1 (3 ounce) package sunflower seeds

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels and cool. Chop bacon.
  • Mix broccoli, bacon, red onion, and raisins in a bowl.
  • Whisk mayonnaise, sugar, and vinegar together in a bowl; stir dressing into broccoli mixture until evenly coated. Cover bowl and refrigerate for flavors to blend, about 1 hour. Sprinkle salad with sunflower seeds.

1/2 cup whole pecans or 1/2 cup chopped pecans
1/2 lb cooked crumbled bacon
1/2 cup raisins
1/4 medium red onion, sliced
1/2 cup low-fat mayonnaise
8 teaspoons sugar
1 tablespoon white vinegar
1 tablespoon parmesan cheese

Steps:

  • Toss the first five ingredients in a large salad bowl.
  • In a separate bowl mix the remaining ingredients.
  • Add to salad bowl.

3 pounds fresh broccoli florets (washed)
1 cup bacon crumbles
1 cup golden raisins
1 cup toasted pine nuts (or your favorite nut)
3/4 cup mayonnaise
1/4 cup sour cream
1/4 cup granulated sugar
2 tablespoons fresh lemon juice
1/2 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper
1/2 medium red onion (diced)

Steps:

  • Bring a large pot of water to a boil. Add broccoli and cook for 30 seconds. Drain water and rinse with ice cold water or place broccoli in an ice bath. Drain and set aside.
  • Reserve a small handful of bacon, raisins and pine nuts for garnish.
  • In a medium bowl combine mayonnaise, sour cream, sugar, lemon juice, salt and pepper. Whisk to combine. Set aside.
  • Place broccoli, onion and remaining raisins in a large bowl. Pour dressing over top. Toss to coat. Chill.
  • When ready to serve add nuts and bacon and toss well. Garnish with reserved bacon, raisins and pine nuts. Serve and enjoy!

1 ½ lbs broccoli
½ red onion, thinly sliced (about 1 C)
½ C golden raisins
2 T red wine vinegar
2 t yellow mustard
½ C canola oil
1T sugar
Salt & ground black pepper, to taste,
½ C pecans, toasted & chopped

Steps:

  • If necessary, trim ends off the broccoli, use a vegetable peeler to peel the skin off the stalk. Slice the broccoli into thin slices & small florets. (There should be about 1 lb after trimming.) Place the broccoli in a large bowl and add sliced onions & raisins. Set aside. Combine vinegar, mustard, oil, sugar, salt, and pepper in a separate bowl. Add to the broccoli mixture & toss to combine. Cover & refrigerate at least 1 hour or overnight for the flavors to blend. When ready to serve, toss again & garnish with pecans.
