2 teaspoons butter
2 teaspoons all-purpose flour
1 teaspoon prepared mustard
1/2 teaspoon prepared horseradish
1/4 teaspoon Worcestershire sauce
1/4 teaspoon dried minced onion
1/8 teaspoon salt
1/2 cup pineapple juice
1/4 cup milk
1 egg yolk
4 slices fully cooked ham (1/8 inch thick)
4 slices Swiss cheese
1 package (10 ounces) frozen broccoli spears, cooked and drained

Steps:

  • In a small saucepan, melt butter; stir in flour. Stir in the mustard, horseradish, Worcestershire sauce, onion and salt. Combine the pineapple juice, milk and egg yolk. Gradually stir into butter mixture. Bring to a gentle boil; cook until thickened. Remove from the heat and set aside. , Top each piece of ham with a cheese slice and two to three broccoli spears. Spoon 1 tablespoon sauce over broccoli. Roll-up, securing with toothpicks if necessary. Place, seam side down, in a greased shallow baking dish. Top with remaining sauce. , Cover and bake at 350° for 15-20 minutes or until heated through. Discard toothpicks.

8 slices swiss cheese
8 slices ham (rectangular sliced lunchmeat)
2 (10 ounce) packages broccoli stems, steamed and drained
1 tablespoon butter or 1 tablespoon margarine
1 tablespoon flour
1/4 teaspoon salt (I omit the salt)
1 tablespoon prepared horseradish
2 teaspoons mustard
1/2 teaspoon Worcestershire sauce
1/2 teaspoon grated onion
2 egg yolks, beaten
1 cup pineapple juice
1/2 cup milk

Steps:

  • Preheat oven to 350 degrees.
  • Place one slice of cheese on top of each slice of ham; top with 1 to 2 spears of broccoli and set aside.
  • In medium saucepan, melt butter, blend in flour, salt horseradish, mustard, Worcestershire and onion.
  • Combine egg youlks and pineapple juice; gently stir into butter mixture.
  • Stir in milk and cook over low heat, stirring constantly until thick and bubbling.
  • Spoon 1 tablespoon sauce over broccoli; roll ham and cheese around broccoli and secure with wooden toothpick.
  • Place roll-ups in baking dish; cover and cook at 350 degrees for 25 to 30 minutes.
  • Spoon remaining hot mustard sauce over ham rolls just before serving.

1 tablespoon unsalted butter
1 tablespoon gluten-free flour blend
1 cup unsweetened almond milk, warmed
2 cloves garlic, smashed
4 ounces Swiss cheese, shredded
Kosher salt and freshly ground black pepper
16 broccoli florets, halved and blanched
4 boneless, skinless chicken breasts, flattened to about 1/8-inch thick

Steps:

  • In a small saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute. Gradually whisk in the warmed almond milk and cook, whisking, until steaming hot and thick, about 6 minutes. Remove from the heat and stir in the garlic and cheese until the cheese is melted, then season to taste with salt and pepper. Stir in half of the broccoli florets until coated.

24 sheets frozen phyllo dough, thawed

Steps:

  • Heat oven to 375ºF.

1/2 lbs thick cut bacon, cooked and crumbled
1 small onion
2 C broccoli, finely chopped
2 cloves garlic, minced
16 oz low fat ricotta cheese
1 egg
1/4 C Parmesan cheese
1 C sharp Cheddar cheese
1/4 tsp basil
1/4 tsp oregano
salt and pepper
8 slices Provolone cheese (from deli)
For the Sauce:
1 can crushed tomatoes (35 oz)
1/4 cup of olive oil
1 small onion, minced
4 cloves of garlic, minced
1/4 tsp dried basil
1/2 tsp of dried oregano
salt and pepper to season
a pinch of sugar

Steps:

  • In a large pot of boiling salted water, cook noodles to al dente; about 5-7 minutes. Drain and lay flat on a clean cutting board. Preheat oven to 350 degrees. In a sauce pan, heat 1/4 C olive oil; over medium heat. Add onion and garlic and cook until onion is translucent; about 2-3 minutes. Add in crushed tomatoes, basil, oregano, salt, pepper and sugar. Bring to a boil, reduce heat and simmer while assembling the roll ups. In a skillet, heat 2 Tbs olive oil, over medium heat. Add onion, broccoli and garlic and cook until onion is translucent and broccoli is bright green in colour. Remove from heat and cool slightly. In a bowl, combine ricotta, egg, Parmesan, Cheddar, basil, oregano a pinch of salt and pepper, cooled broccoli mixture and three quarters of the cooked bacon. Separate filling among the cooked lasagna noodles, spreading evenly and leaving a 1/4 inch edge at one of the narrow ends (this will help if the filling shifts while rolling). Starting at the opposite narrow end, roll up noodles and filling, jelly roll style. Repeat with all noodles. Coat bottom of a 9x13 inch casserole dish with a few ladles of marinara sauce. Place lasagna rolls, seam side down, into the casserole dish. Top with remaining sauce, top with Provolone slices and sprinkle with remaining bacon. Cover with foil and bake for 50 minutes. Remove foil and bake for an additional 10 minutes, until cheese is bubbly.

6 uncooked lasagna noodles
1 package (8 ounces) cream cheese, softened
2 tablespoons chopped oil-packed sun-dried tomatoes
1 container (7 ounces) pesto
1/2 cup butter or margarine, softened
1 box (9 ounces) Frozen Broccoli Cuts, cooked, drained and cooled
1 jar (30 ounces) spaghetti sauce (about 3 cups)
1/4 cup pine nuts, toasted

Steps:

  • Cook and drain noodles as directed on package. Mix cream cheese and tomatoes. Mix pesto and margarine in medium bowl. Stir in broccoli. Spread about 3 tablespoons cream cheese mixture evenly over each lasagna noodle; spread about 1/3 cup broccoli mixture evenly over cream cheese mixture. Roll up noodles. Place seam-side-down in shallow container. Cover and refrigerated at least 4 hours but no longer than 24 hours or until firm. To serve, cut each roll in half forming two rounds.
  • Heat spaghetti sauce until hot in 1 1/2-quart saucepan. Place about 1/4 cup sauce onto small individual serving plates. Arrange 1 slice on sauce on each plate. Sprinkle with pine nuts.
