This is a delicious twist to broccoli, rice, and cheese casserole, and is VERY easy to make. You can also cut this in half. I use the 1 can cream of mushroom soup when I make half. You can also leave out the onion. It just gives it a little added flavor, but is still very good without it.

2 cups water
2 cups uncooked instant rice
2 (10 ounce) cans chunk chicken, drained
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10.75 ounce) can condensed cream of chicken soup
¼ cup butter
1 cup milk
1 (16 ounce) package frozen chopped broccoli
1 small white onion, chopped
1 pound processed cheese food

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium saucepan, bring the water to a boil. Mix in the instant rice, cover, and remove from heat. Let stand 5 minutes.
  • In a 9x13 inch baking dish, mix the prepared rice, chicken, cream of mushroom soup, cream of chicken soup, butter, milk, broccoli, onion, and processed cheese.
  • Bake in the preheated oven for 30 to 35 minutes, or until cheese is melted. Stir halfway through cooking to help cheese melt evenly.

3/18/13. I've updated this recipe to include alternate choices for the canned chicken the original recipe called for. Lately, I've been using store bought rotisserie chicken. I've seen a lot of recipes for broccoli, cheese and rice casseroles. However, this takes it from a side dish to a main meal casserole. It fills up the sink with dirty dishes, but that is the only draw back. You can make umpteen variations to customize the taste to your liking. I will offer substitution possibilities in the instructions.

1 1/2 cups cooked chicken (bake it yourself, rotisserie or canned)
3 cups cooked rice (1 cup uncooked)
2 cups frozen chopped broccoli
1 (8 ounce) can cream of chicken soup
1 (8 ounce) can cream of mushroom soup
1/2 cup margarine
1/2 cup chopped onion
6 ounces shredded cheddar cheese

Steps:

  • Drain 2 cans of chicken breast meat (You can substitute home boiled chicken or rotisserie- just chop it small).
  • Boil broccoli till tender; drain.
  • Boil rice. (You can substitute a packet of broccoli cheese rice mix such as Lipton's. Depending on amount of rice you want, might want to make two packets).
  • Melt margarine in large frying pan. Saute onions till glassy. Add both soups and stir well. Add cheese and mix till melted. Remove from heat.
  • Lightly grease a 13 x 9 glass dish.
  • Spread rice evenly over bottom of dish.
  • Spread broccoli over rice layer.
  • Pour 1/3 of cheese sauce over the broccoli and rice and spread evenly.
  • Spread chicken on top of cheese sauce and top with remaining sauce.
  • If desired, sprinkle more shredded cheese on top.
  • Bake at 350 for 30 minutes.

1 (10 ounce) package broccoli florets
1 (10 ounce) cream of chicken soup
1 cup instant rice, prepared
1 1/2 cups cheddar cheese, grated
3/4 cup Ritz cracker, crushed
2 tablespoons butter, melted

Steps:

  • Saute onion in olive oil and set aside.
  • Boil broccoli florets in water for 3 minutes. Drain and chop into pieces.
  • Mix broccoli with cream of chicken soup, prepared instant rice, onions and cheddar cheese. Pour into a one quart size baking dish.
  • Mix crackers crumbs with butter and sprinkle on top.

1 tablespoon oil (I use extra virgin olive oil)
3 cups cooked rice
2 cups cooked ham, diced
3 cups broccoli florets, steamed
1 (10 ounce) can corn
1/2 cup milk
2 (10 ounce) cans cream of mushroom soup
1 dash salt
1 dash pepper
1 dash garlic powder
2 cups cheddar cheese, shredded (I prefer extra-aged)
1/2 cup fine breadcrumbs
1/2 cup parmesan cheese (use breadcrumbs if you don't have parm on hand)
1/4 cup butter, melted or 1/4 cup margarine

Steps:

  • Preheat oven to 375 degrees.
  • Cook onions in oil over a medium-low heat until soft.
  • In a large bowl mix the milk, soup, seasonings and cheddar cheese together until combined. Gently stir in the cooked rice, ham, broccoli, corn and onions.
  • Dump broccoli mixture into a large casserole dish.

This is everyone's favorite casserole, not least because on Thanksgiving Day it's the only rice dish on the table (and my Korean family loves rice). When my cousin Becky finally learned how to make broccoli-cheese rice casserole from her Aunt Anne, whose Southern food I always thought tasted so good, she usually made two vats of it because it's the one dish everyone wants leftovers of. (It also happens to reheat especially well-a key requirement for any Thanksgiving side dish, in my book.) What I love most is how much this recipe has changed over time. I call it Aunt Anne's Broccoli-Cheese Rice Casserole because she's the catalyst for the dish, but really it's "Eric's interpretation of Becky's Broccoli-Cheese Rice Casserole, which she maybe learned from her mother, Julia, who learned it from her sister Anne." Like a game of telephone, the recipe has been tweaked and misremembered, and now tastes like a mere version of that first casserole we had as kids, which is fine because we're not kids anymore. And I love that. This kind of culinary evolution is what defines Thanksgiving for me. As for the broccoli, sometimes I like to use only florets because that's my favorite part of the vegetable, but my mother likes it the way Aunt Anne makes it, which was often with frozen chopped broccoli (stems and everything). The original had Velveeta cheese, as well, but I enjoy the sharpness of cheddar and the ease of ready shredded cheese, which is what I call for here.

1 medium red onion, diced
1 teaspoon sugar

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9 × 13-inch baking dish with softened butter.

8 ounces cream of chicken soup
2 cups Minute Rice
2 cups water
1 1/2 cups frozen broccoli florets

Steps:

  • Preheat oven to 350°F.
  • Grease glass 2 quart cake pan.
  • Chop 2 cups frozen broccoli florets into small pieces, you can thaw for better cutting.
  • Mix in pan cream of mushroom, cream of chicken, rice, water broccoli, and 1 1/2 cups of cheese.
  • Smooth evenly in dish.
  • Place the THAWED UNCOOKED chicken breast on top of the mixture.
  • Season with whatever spices you like; for a kick, I always put chile power, crushed peppers, and garlic salt.
  • Around the chicken put the remaining cheese to cover the mixture, but not the chicken.
  • Place in over, do not cover, and bake for 25 minutes.

My sister-in-law served this at a family function and it's been a hit ever since. No Cheese Whiz, just real cheddar cheese. Delicious, and kid-friendly. My now-grown son would request this when he came home from college. This recipe is very adaptable as well - add crushed Ritz crackers or panko crumbs on top during the last 5 minutes of cooking for a crunchy topping. Add bacon bits to the mixture for some extra flavor, or add a couple teaspoons of hot sauce for some heat. I also have used brown rice successfully with this recipe, and frozen broccoli cuts instead of chopped.

1 bunch broccoli, washed and broken into very small flowerets (should be 4 cups after cooking)
2 tablespoons butter
1 small onion, finely chopped
2 -2 1/4 cups low-fat milk
1 egg, beaten
2 cups shredded extra sharp white cheddar cheese (or sharp or regualar)
1/4 teaspoon salt (more or less to taste)
1/4 teaspoon pepper
1/4 teaspoon paprika

  • Preheat oven to 350. Lightly grease/spray a casserole dish; set aside.
  • Place your 3 cups hot cooked rice in a large bowl and set aside.
  • Steam/microwave the broccoli flowerets until fork-tender; drain (you should have 4 cups cooked flowerets) and place in bowl with hot cooked rice; set a side.
  • In a small saucepan, over med-low heat, melt butter; add onion and saute for about 3-4 minutes. Add in milk and beaten egg; stir well. Add in the cheese, salt, pepper and paprika. Continue to cook, stirring often, until cheese is melted. Pour this mixture over broccoli and rice in the large bowl. Stir together well to evenly coat.

1 (5 ounce) can evaporated milk
3 cups cooked rice

Steps:

  • In a large skillet over medium heat, saute onion, celery and broccoli in butter for 3-5 minutes, Stir in cheese, soup, and milk until smooth.
  • Place rice in greased 8-inch square baking dish.
  • Pour cheese mixture over rice, do not stir.
  • Bake uncovered at 325°F for 25-30 minutes or until hot and bubbly.

This is a very good and creamy Brocolli and Cheese Rice Casserole. It originally called for Cream of Chicken soup, but my girlfriend is a vegetarian, so I have substituted it for Cream of Mushroom and found that it does not loose much flavor.

1/2 medium onion, finely chopped
1 (10 ounce) package frozen broccoli, cooked and drained
1/4 cup butter
1 (8 ounce) can cream of mushroom soup
3 cups wild rice
2/3 garlic clove
1 1/2 cups cheddar cheese

Steps:

  • Preheat oven to 350°F.
  • In a skillet melt the butter.
  • Sauté onion and garlic, until onions are tender. Set aside to cool.
  • Steam the frozen broccoli until thawed, then drain well. Let cool.
  • Cook wild rice according to directions. (Use any type of rice desired; wild rice is exceptionally good in this recipe).
  • It is important to allow the warm ingredients to cool before mixing everything together so the cheese doesn't melt too soon.
  • When sufficiently cool, reserve 1/2 cup of the cheese and mix remaining ingredients together. Put in a oven-proof baking dish or casserole dish (or 2 if needed).
  • Spread reserved 1/2 cup of cheese on top. Cover with foil.
  • Bake for 20 minutes, remove foil; bake an additional 5 to 15 minutes, or until cheese on top is hot and bubbly.

1 1/2 cups cooked chicken
3 cups cooked rice (1 cup uncooked)
2 cups frozen chopped broccoli
1 (8-ounce) can cream of chicken soup
1 (8-ounce) can cream of mushroom soup
1/2 cup margarine
1/2 cup chopped onion
6 ounces shredded cheddar cheese

Steps:

  • Boil broccoli till tender; drain. Boil rice. (You can substitute a packet of broccoli cheese rice mix such as Lipton's. Depending on amount of rice you want, might want to make two packets). Melt margarine in large frying pan. Sauté onions till glassy. Add both soups and stir well. Add cheese and mix till melted. Remove from heat. Lightly grease a 13 x 9 glass dish. Spread rice evenly over bottom of dish. Spread broccoli over rice layer. Pour 1/3 of cheese sauce over the broccoli and rice and spread evenly. Spread chicken on top of cheese sauce and top with remaining sauce. If desired, sprinkle more shredded cheese on top. Bake at 350°F for 30 minutes.

1 (10 3/4 ounce) can cream of broccoli soup
1 (10 3/4 ounce) can cream of chicken soup
16 ounces Velveeta cheese, cubed
1 1/2 cups raw Minute Rice
6 -8 tablespoons melted butter
0.5 (12 ounce) box Chicken In A Biscuit crackers, crushed into fine crumbs

Steps:

  • In large bowl, combine soups and Velveeta. Microwave til melted and creamy. About 5 minutes, stirring occasionally.
  • Stir in broccoli and rice.
  • Pour into greased 13x9-inch pan or glass baking dish.
  • Stir cracker crumbs into melted butter and sprinkle evenly over top.
  • Cover and bake at 350ºF for 30 minutes.
  • Uncover and bake 10-15 minutes longer. Or til casserole is bubbly and crumbs are golden.
