4 cups fresh broccoli florets (1 medium bunch)
3/4 cup golden raisins
1 small red onion, chopped
1/2 cup Miracle Whip
1 tablespoon white vinegar
2 teaspoons sugar
3 bacon strips, cooked and crumbled

Steps:

  • In a large bowl, combine the broccoli, raisins and onion. In a small bowl, combine the Miracle Whip, vinegar and sugar. Pour over broccoli mixture; toss to coat. Sprinkle with bacon. Refrigerate for at least 2 hours before serving.

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels and cool. Chop bacon.
  • Mix broccoli, bacon, red onion, and raisins in a bowl.
  • Whisk mayonnaise, sugar, and vinegar together in a bowl; stir dressing into broccoli mixture until evenly coated. Cover bowl and refrigerate for flavors to blend, about 1 hour. Sprinkle salad with sunflower seeds.

6 cups chopped fresh broccoli, including stems blanched, drained and cooled (I do not blanch, but leave it like it is)
1 cup raisins
1/2 lb bacon, fried crisp and crumbled
1/3 cup coarsely chopped fresh red onion
1/4 cup sugar
2 tablespoons cider vinegar
1 cup mayonnaise
1/4 cup roasted sunflower seeds (optional)

Steps:

  • Layer broccoli, raisin, bacon and onion in 2 1/2 quart serving bowl.
  • Mix sugar, vinegar, and mayonnaise.
  • together in small bowl; spread over onions sealing to edges of bowl.
  • Sprinkle sunflower seeds on top.
  • Cover and refrigerate to chill well.
  • Just before serving, toss thoroughly.
  • I do not put the bacon in until I toss it before serving.
  • I also just bought the packages of broccoli that was ready to serve.

2 Tbsp cider vinegar
1 c mayonnaise, hellman's
1/3 c sugar
1 bunch broccoli or a little more, break into bite size pieces, very small
1/2 c nuts, chopped, i use pecans
1/2 c red onion, bite size pieces
1/2 c raisins
6 - 8 slice bacon, cooked and crumbled

  • 1. Combine the first three ingredients and let sit overnight or for several hours. Prepare bacon. Combine the rest of the ingredients including bacon and chill. Just before serving combine all and mix. Mandarin Oranges, drained, can be added when ready to serve.

6 cups broccoli florets
3 cups cauliflower florets
1/2 cup golden raisin
1/3 cup walnuts, chopped & toasted
1/4 cup olive oil
1/4 cup cider vinegar
1 teaspoon honey
1/2 teaspoon dried basil, crushed
1/2 teaspoon ground black pepper
1/4 teaspoon red pepper, crushed (adds heat!) (optional)

Steps:

  • In a large saucepan bring 4 inches of water to boiling. Add the broccoli & cauliflower and return to boiling. Cook covered for 2 minutes or until crisp-tender. Drain. Rinse with cold water; drain well.
  • In 2 to 2 1/2 quart bowl layer half the broccoli, cauliflower raisins and walnuts.
  • Repeat layers.
  • Cover and chill.
  • In a screw top jar combine the olive oil, vinegar, 1 tsp salt, the honey, basil, black pepper and red pepper. Cover tightly and shake well.
  • Add dressing just before serving (drizzle over top). Toss to coat (let everyone admire the layers first!).
  • Prep time does not include chill time in fridge.

You know the one I am referring to... the broccoli salad with eight slices of bacon... it's not that one. If you don't want to stray too far from tradition, add a couple slices of chopped crisply cooked bacon or tempeh bacon. This version is not as syrupy sweet either. I've substituted broccolini and broccoflower in this recipe, too. From All-American Vegetarian cookbook.

1 lb broccoli
2 medium carrots, peeled and grated
1 small red onion, finely diced
1/2 cup raisins
1/3 cup roasted sunflower seeds or 1/3 cup slivered almonds, toasted
5 tablespoons freshly squeezed orange juice
1/2 teaspoon orange zest, finely minced
5 tablespoons tofu mayonnaise or 5 tablespoons sour cream
1 teaspoon raspberry vinegar (optional)
2 teaspoons sugar, to taste
1/4 teaspoon salt
white pepper

Steps:

  • Toast the sunflower seeds. Let cool.
  • Trim bottom 2 inches off the end of the broccoli stalks.
  • In large pot of boiling water, lighlty blanch the broccoli for about 3-4 minutes. Immediately rinse with cold water and drain. Set aside.
  • In small non-reactive bowl combine all the dressing ingredients except for the vinegar and blend well with hand-held immersion blender. Taste and adjust dressing. If too sweet start by adding 1/4 teaspoon but up to 1 teaspoon of the raspberry vinegar. Season with salt and pepper.
  • Once cool enough to handle, dice the broccoli stems and chop up the florets into bite-size pieces. Place the cut up broccoli into a large salad bowl with the carrots, onion, raisins, and sunflower seeds.
  • Keep salad refrigerated until time to serve. Serve chilled.

2 bunch broccoli, washed & cut up into bite size pieces
1 small red onion, chopped, i used vidalia
1/2 c raisins, i used twice as much
3/4 c sunflower seeds
1 lb regular or turkey bacon, cooked crisp and crumbled
1 c mayonnaise (regular or light)
1/2 c sugar or splenda
4 Tbsp apple cider vinegar

Steps:

  • 1. The broccoli yield about 5 cups when cut into bite size pieces. Pour into a large bowl.
  • 2. These are some of the main ingredients used for the salad.
  • 3. Cut onion into quarters then eights, and process in a food processor into small pieces. The onions takes on the flavor of the smoked bacon. They marry well together.
  • 4. Now add the chopped bacon and onion mixture to the bowl of broccoli flowerettes. Add in the sunflower seeds as well.
  • 5. Stir to mix together.
  • 6. Add the mayonnaise, sugar or splenda and apple cider vinegar to a medium size bowl and whisk or beat together till blended.
  • 7. Mixture should be creamy and smooth. I added the raisins also to the salad dressing and allowed them to absorb the flavor and moisture of the dressing for about 10 minutes.
  • 8. Now pour salad dressing mixture over the broccoli and stir to blend together. If time permits allow to sit and flavors marry before serving. About 1/2 hour to 45 minutes.
  • 9. Stir just before serving. Then serve and enjoy.

  • Mix all salad ingredients in a large bowl, set aside.
