PASTA WITH SAUSAGE AND BROCCOLI RABE
Tips: Cook the broccoli rabe the night before and you'll be way ahead. Whatever you do, read the recipe through start to finish before you get started. It's a little out of the ordinary but relatively painless. Cook off the garlic and sausage up to one hour ahead and let it sit in the pan until you're ready to finish the dish.

- Cut the broccoli rabe into 3 to 4 inch pieces, discarding the stems. In a large pot of rapidly boiling water, blanch the broccoli rabe until tender and cooked through, about 5 to 6 minutes. Before you drain broccoli rabe, reserve 1 cup of cooking liquid. Drain and rinse the broccoli rabe with cold water until it has cooled off. Spread it out on a towel to finish draining.
- Meanwhile, cook the pasta in a large pot of boiling water according to package directions until al dente.
- While the pasta is cooking, place 2 tablespoons of water into a cold skillet with garlic and sausage and then turn heat to medium-low. Cook, stirring occasionally, until garlic is golden and sausage is cooked through, about 5 to 7 minutes. Pour reserved broccoli water into pan with sausage.
- When the pasta is cooked, drain it and place back in pot you cooked it in and season with salt. Pour sausage sauce over pasta and stir in cooked broccoli rabe. Taste and adjust seasonings. Serve immediately.
- If the Queen's coming to dinner: Garnish with fresh bread crumbs and/or freshly grated pecorino Romano or parmesan cheese.
PASTA WITH SPICY SAUSAGE, BROCCOLI RABE AND CHICKPEAS
In this hearty weeknight pasta recipe, chickpeas contribute an earthy, nutty flavor to the classic combination of sausage and broccoli rabe. - Bring a large pot of salted water to a boil. Roughly chop the broccoli rabe, add it to the pot, and cook for 3 minutes. Use a sieve or slotted spoon to lift the broccoli rabe from the water and place it in a colander to drain.
- Bring the water back to a boil. Cook the pasta according to package instructions until al dente, reserve 1 cup pasta water, then drain pasta.
- Meanwhile, in a large Dutch oven or deep, 12-inch skillet, heat the olive oil over medium-high. Add the sausage and cook, breaking it up with a wooden spoon, until browned, 3 to 5 minutes. (Don't worry if the sausage is not completely cooked through.) Add the garlic and cook for 30 seconds.
- Add the wine and cook, scraping any bits from the bottom of the pan, until the wine is reduced by half, about 1 minute.
- Add the broccoli rabe, chickpeas, 1 teaspoon salt and 1/2 teaspoon pepper to the skillet and cook over medium heat, stirring often, until the sausage is cooked through and the broccoli rabe is very tender, about 3 minutes.
- Add the pasta and 1/2 cup of the reserved pasta water, toss well, and cook over low heat until the sauce comes together, about 1 to 2 minutes. Add additional pasta water, a few tablespoons at a time, if needed for moisture.
- Remove the pan from the heat, add the butter, Parmesan, lemon zest and lemon juice, and toss until the butter is melted. Divide pasta among shallow bowls and top with additional cheese sprinkled on top.

- Bring 4 to 6 quarts of water to a boil in a large pot.
- Cut 1 to 1 1/2 inches off of the bottom of the broccoli rabe stalks; cut into 1 1/2-inch sections.
- Place trimmed broccoli rabe and orecchiette into the boiling water and boil until pasta is tender, 12 to 14 minutes.
- Meanwhile, heat 3 tablespoons oil in a large pan over medium heat. Add sausage and cook for 6 minutes; stir in garlic and cook until sausage is browned and crumbly, 2 to 3 minutes more.
- Heat a medium-sized pan over medium heat. Add enough oil to coat the bottom of the pan. Stir in bread crumbs. Cook until browned and crunchy, about 5 minutes.
- Drain the pasta pot. Add drained broccoli rabe and orecchiette to the sausage. Add red pepper flakes and 1/2 of the bread crumbs and stir well.
- Transfer 1/2 the pasta mixture to a large bowl. Stir in 1/2 the Pecorino cheese. Add remaining pasta mixture to the bowl and top with remaining cheese; mix well. Top with remaining bread crumbs.

- Bring a large pot of water to a boil. Prepare an ice-water bath; set aside. Add salt and broccoli rabe to the boiling water. Cook until just tender. Drain, and transfer to ice bath. When cool, drain, and set aside.

- Cut Broccoli Rabe all the way down to end of stems. Cut in about 1/2 inch sections on top and get smaller as you go down. When stems get very tough towards bottom stop cutting and discard.
- Wash thoroughly and drain.
- Place in large pot cover with water add salt.
- Bring to boil uncovered and then reduce heat.
- Simmer until all is soft about 45 minutes.
- Drain when cooked set aside.
- At the same time Broccoli is cooking, cook pasta in rapidly boiling salted water.
- Drain when cooked and put aside.
- While Pasta and Rabe are cooking fry the sausage in about 1/2 tablespoons Olive Oil until brown. Set aside.
- Chop Garlic.
- Place Olive Oil in Pan heat and then add garlic.
- When you SMELL the garlic (not brown) add the Hot Pepper and slowly add Brocoli Rabe.
- Toss oil and garlic through all Broccoli Rabe.
- Toss in Pasta and Sausage.
- Cover with generous sprinkle of Parmasian Cheese.

- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the orcchiette and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 12 minutes. Drain well in a colander set in the sink.

- Bring two large pots of salted water to a boil.
- While the water is heating, remove sausage from casings (if you can't find Italian sausage bulk)heat a large frying pan over medium heat and place sausage in the pan, breaking into bite sized pieces while cooking.
- Cook sausage till nicely browned, (reserve).
- Cut off stems from Broccoli Rabe and place in boiling water.
- Boil your pasta of choice only cut back on time from the package directions by 1-2 minutes.
- Thinly slice 1-2 cloves of garlic, and place in a small sauce pan with the olive oil (and pepper flakes if desired).
- Cook garlic till lightly toasted (be careful! Don't burn it).
- When broccoli rabe is tender resesrve about 1 cup of the cooking liquid and drain the broccoli.
- Use the cooking liquid from the broccoli rabe to deglaze the frying pan with the sausage.
- Return the drained broccoli to the pot, add the sausage and the cooked pasta.
- Add Olive oil with garlic and the cheese and toss together.
- simmer all ingredients together for about 1-2 minutes (to allow flavors to marry).
- serve with extra cheese for sprinkling.

BROCCOLI RABE, SAUSAGE AND PASTA

- Make the sauce Bring a large pot of water to a boil over high heat. Add the salt and broccoli rabe to the boiling water. Cover and cook until nearly tender, 4 minutes. Using a skimmer or slotted spoon, transfer to a bowl and set aside. Return the water to a boil. In a large fry pan over medium heat, warm the oil. Add the sausage and sauté, stirring occasionally, until browned, about 4 minutes. Drain off all but 4 Tbs. fat from the pan. Add the garlic, fennel seed and red pepper flakes and sauté until the garlic is fragrant, about 2 minutes. Add the broccoli rabe and stir to combine. Cook the pasta Meanwhile, add the pasta to the boiling water. Cook, stirring occasionally to prevent sticking, until al dente, according to the package instructions. Drain, reserving about 1/2 cup of the cooking water. Add the pasta to the sauce and stir to coat. Add as much of the reserved cooking water as needed to loosen the sauce and serve. Serves 4.
ONE-POT BAKED PASTA WITH SAUSAGE AND BROCCOLI RABE
Steps:
- Place racks in center and upper third of oven; preheat to 325°. Heat a large pot of water over high. Add several tablespoons of salt and bring to a boil (this is for your pasta).
- Grate 12 oz. cheese on the large holds of a box grater (you should have about 4½ cups). Smash 6 garlic cloves, peel, and coarsely chop. Pick all sage leaves from stems and set aside about 10. Finely chop remaining leaves (you should have about 1 Tbsp.). Trim tough dried ends from 1 bunch of broccoli rabe, then cut stems into 2" pieces. Leave leafy ends long.
- Heat a deep, large, ovenproof skillet, preferably cast iron, over medium-high. Add ¼ cup oil and swirl to coat. Remove 1 lb. sausage from casings and add to skillet. Break into small pieces with a wooden spoon. Cook, undisturbed, until sausage is browned, about 4 minutes. Stir a couple of times and continue to cook, undisturbed again, until sausage is fully cooked through, about 3 minutes longer.
- Add garlic, chopped sage, and ½ tsp. red pepper and cook, stirring, until garlic is golden, about 2 minutes.
- Stir in 2 cups half-and-half and simmer until sauce is thickened slightly, about 2 minutes. Reduce heat to low.
- Gradually add about two-thirds of cheese, bit by bit, stirring constantly and letting cheese melt completely before adding more, until sauce is smooth and thick, about 3 minutes; season with salt and remove from heat.
- Meanwhile, cook 1 lb. pasta shells in boiling salted water 2 minutes shy of package instructions (8-10 minutes depending on type). During the last 2 minutes, add all of broccoli rabe to pot with pasta. Drain in a colander and shake several times to remove excess water. Return pasta and broccoli rabe to empty pasta pot.
- Add cheesy sausage mixture from skillet to pot with pasta. Stir until pasta and broccoli rabe are coated in sauce, then transfer everything back to skillet.
- Cover skillet tightly with foil and bake on center rack until pasta is tender and sauce is bubbling, 30-40 minutes. Let rest a few minutes while you heat broiler.
- Remove foil and top with remaining cheese. Toss sage leaves with remaining 1 Tbsp. oil in a small bowl and arrange over pasta. Broil until cheese is browned and bubbling in spots, about 5 minutes (depending on strength of broiler).
PASTA WITH SAUSAGE AND BROCCOLI RABE

- Mash anchovies and add 1 tbsp oil, lemon juice, and 1 tsp garlic in bowl. Cook pasta, save 1 cup water, and return to pot. Heat 1 tbsp oil in skillet and add sausage till cooked. Remove with slotted spoon and add 2 tbsp oil, 3 garlic cloves minced, and red pepper for 1 minute on medium. Add half broccoli and increase heat, add remaining and cook til just tender-3-4 minutes. remove broccoli. Add broth and 3/4 cup water to skillet, let boil and then simmer down till one cup. Whisk in anchovies and butter. Add sauce, broccoli and cheese to pasta and toss. Serve with cheese.
BAKED PASTA WITH BROCCOLI RABE AND SAUSAGE

- Cook the pasta and rabe: Bring large pot of well-salted water to boil. Add pasta and 5min before its cooking time is up, add broccoli rabe. Drain the broccoli rabe and pasta together and place in a large bowl. Cook your sausage: Meanwhile, 1-2T tablespoons olive oil in a large, wide saucepan over medium heat. When hot, add sausage, breaking it up with a wooden spoon until it starts to brown, about five minutes. Remove with slotted spoon or spatula, leaving any fat behind. Eyeball the drippings (pork sausage will leave some; chicken usually does not) - use one tablespoon less butter next if it looks like there's a tablespoon there. Any less, don't worry about adjusting the butter. Heat oven to 400F. Make the bechamel: Melt butter in same saucepan over medium heat. Once melted, add flour and stir it into butter until smooth. Cook mixture together for a minute, stirring constantly. Pour in small drizzle of your milk, whisking constantly into butter-flour mixture until smooth. Continue to drizzle a very small amount at a time, whisking constantly. Once you've added a little over half of your milk, you'll find that you have more of a thick sauce or batter, and you can start adding the milk in larger splashes, being sure to keep mixing. Once all the milk is added, add salt, garlic, nutmeg, and few grinds of black pepper, and bring mixture to a lower simmer and cook it, stirring frequently, for 10 min. Taste and adjust seasonings if needed. Assemble and bake: Add sausage and bechamel to the bowl with pasta and broccoli rabe. Stir in mozzarella and half of grated parmesan or pecorino until combined. Pour into a lasagna pan, deep 9×13-inch baking dish* or 3-quart casserole dish and coat with remaining parmesan or pecorino. Bake for 20 to 30 minutes, until the edges and craggy points are nicely bronzed.

- Bring a large pot of well-salted water to the boil.
- Cut off and discard the lower part of the broccoli rabe stems, leaving the broccoli about 8 inches long. Remove any large tough leaves. If the stems are very thick, you can peel the lower part with a vegetable peeler. Removing the peel takes out some of the bitterness. Cut the stems into roughly 2-inch lengths. Wash the broccoli and set it aside to dry in a salad spinner or colander.
- Remove the casings from the sausage and crumble it. In a large skillet heat 1 tablespoon of olive oil over medium-high heat. Add the sausage meat and cook until the sausage is no longer pink, about 7 - 10 minutes. When the sausage is brown and just cooked through, remove it with a slotted spoon onto a plate and set aside.
- If there's fat in the pan, pour it out and add a couple of tablespoons of olive oil. Add the garlic, pepper flakes and beans and cook until the garlic is fragrant, about 2 to 3 minutes.
- Add the pasta to the boiling water, stir well and cook, stirring occasionally, until al dente, according to the package directions.
- In the skillet with the garlic, add the broccoli rabe and toss it until it begins to wilt. Cover the pan and steam the broccoli until wilted and bright green, about 4 minutes. Taste and season lightly with salt and pepper. (if the broccoli is getting too dry and starting to brown, add a few tablespoons of the pasta water).
- When the pasta is ready, drain it, but reserve about a cup of the cooking water. Add the pasta to the broccoli mixture and add back the sausage and about a 1/2 cup of grated cheese. Stir and toss well over low heat to combine, adjusting the consistency by adding some of the cooking water, a little at a time, as needed.
- Divide the pasta among bowls, top each portion with a sprinkle of cheese and a little drizzle of your best olive oil.
