4 slices bacon
4 cups broccoli florets
¼ red onion, finely chopped
¼ cup raisins
1 cup chopped cremini mushrooms
¼ cup sunflower seed kernels
1 cup mayonnaise
¼ cup white sugar
3 tablespoons apple cider vinegar
salt and ground black pepper to taste

Steps:

  • Place bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on a paper towel-lined plate; crumble bacon.
  • Combine broccoli, red onion, raisins, mushrooms, sunflower seeds, and crumbled bacon in a large bowl.
  • Mix mayonnaise, sugar, vinegar, salt, and black pepper in a bowl until well blended.
  • Pour mayonnaise mixture over vegetables; toss to coat.

1 large egg
1/4 cup sugar
1-1/2 teaspoons honey
1 teaspoon ground mustard
1/2 teaspoon cornstarch
2 tablespoons water
2 tablespoons cider vinegar
2 tablespoons mayonnaise
2 tablespoons sour cream
4-1/2 teaspoons butter
4 cups broccoli florets (about 1 medium bunch)
1 cup salted cashews
1 cup cubed Swiss cheese
1 can (11 ounces) mandarin oranges, well drained
1/2 cup raisins
6 bacon strips, cooked and crumbled
1/2 cup chopped red onion, optional

Steps:

  • In a heavy saucepan, combine egg, sugar, honey, mustard and cornstarch with a whisk until smooth. Gradually whisk in water and vinegar. Cook and stir over medium heat until a thermometer reads 160° and mixture is thickened. Remove from the heat; stir in mayonnaise, sour cream and butter until blended. Cool. , Meanwhile, in a large bowl, combine broccoli, cashews, cheese, oranges, raisins, bacon and onion if desired. Just before serving, add dressing and toss to coat.

1 cup vegetable oil
½ cup white sugar
¼ cup cider vinegar
1 teaspoon salt
1 teaspoon ground paprika
1 teaspoon celery seed
1 teaspoon onion powder
1 large head broccoli, cut into bite-sized florets
1 (16 ounce) package sliced fresh mushrooms
2 stalks green onion, sliced

Steps:

  • Combine oil, sugar, vinegar, salt, paprika, celery seed, and onion powder in a jar. Seal the jar, shake, and refrigerate for 30 minutes.
  • Combine broccoli, mushrooms, and green onion in a large bowl. Remove dressing from the refrigerator and shake. Pour over veggies, toss to coat, and refrigerate for at least 1 hour before serving.

PASTA WITH MUSHROOMS AND BROCCOLI



Pasta With Mushrooms and Broccoli image

Broccoli stems and flowers can be prepared and cooked separately, like two different vegetables. For this pasta I used a vegetable peeler to shred the broccoli stems into thin ribbons, which I cooked briefly with the mushrooms. I sliced the crowns very thin and blanched them briefly with the pasta. The result is a dish with different textures and shades of green: the stems should be crisp-tender, their color faded. The crowns will be bright green, and 2 to 2 1/2 minutes cooking will render them tender but not mushy.

2 large stalks broccoli (stems and crowns)
2 tablespoons extra-virgin olive oil
1/2 pound mushrooms, sliced 1/3 to 1/2 inch thick
2 garlic cloves, minced
Salt and freshly ground pepper
1 teaspoon fresh thyme leaves (optional)
8 ounces spaghetti
Freshly grated Parmesan

Steps:

  • Cut broccoli stalks away from crowns and peel stalks. Use a vegetable peeler to shave stalks into thin ribbons. Set aside. Cut crowns into thin slices (about 1/4 inch). Combine with the little flower buds that fall off onto your cutting surface in a bowl.
  • Begin heating a large pot of water for the pasta. Heat 1 tablespoon of the oil over medium-high heat in a large, heavy skillet. Add sliced mushrooms and sauté until lightly colored and beginning to sweat, 3 to 5 minutes. Reduce heat to medium, add salt to taste, another tablespoon of oil, and shaved broccoli stems. Continue to sauté until the broccoli stem ribbons are crisp-tender, 3 to 5 minutes. Add garlic and thyme, season to taste with salt and pepper, and cook, stirring, until garlic smells fragrant, 30 seconds to a minute. Remove from heat.
  • When water in the pasta pot comes to a boil, add salt to taste and spaghetti. Set timer for 2 minutes less than the cooking time suggested on the package. When it goes off, add thinly sliced broccoli crowns and flower buds, and cook 2 minutes more, or until the pasta is al dente. Using a ladle, transfer 1/2 cup of the pasta cooking water to the pan with the mushrooms and shaved broccoli stems. Drain the pasta and broccoli and toss with the mushroom and stem mixture, either in a large bowl or right in the pan. Serve with Parmesan cheese.

1 teaspoon cornstarch
1 teaspoon dry mustard
1/4 cup white wine vinegar
1/4 cup water
1/2 cup mayonnaise (use mayo not salad dressing)
1 pinch garlic powder (optional)
4 cups fresh broccoli florets, washed and very well drained (I do this hours in advance or even a day ahead to make certain that the broccoli is well drained)
1 cup raisins
10 slices bacon, cooked and chopped
2 1/2 cups sliced fresh mushrooms
1/3-1/2 cup slivered toasted almond (or to taste)
1 large orange (peeled and cut into pieces)
1 small red onion, sliced

Steps:

  • For the dressing: in a saucepan, whisk together the eggs, sugar, cornstarch and the dry mustard.
  • Add/whisk in vinegar and water; cook on low heat until thickened.
  • Remove from heat, add/stir in the mayonnaise and garlic powder (if using) cool well.
  • To make the salad: marinate broccoli in the dressing for about 3-4 hours.
  • Add in the remaining salad ingredients; toss well to combine.
  • DELICIOUS!
