BROCCOLI MADELINE
Delicious fresh salad. I'm putting it here for safe-keeping and easy sharing. I usually use half the sugar in the recipe....just because we need to cut back on sugar....

Steps:
- Cut the brocolli into small pieces, I use some of the tender stems also.
- Combine the bacon bits, broccoli, cheese, rasins, and onion.
- For the Dressing:.
- Mix together in a small bowl the mayonaise, sugar and vinegar. Pour this mixture over the Brocolli mixture. Chill before serving.

- Whisk mayonnaise, sugar and vinegar; set aside. In a salad bowl, combine broccoli, onion, raisins and pecans. Drizzle with dressing; toss to coat. Gently stir in oranges. Refrigerate, covered, at least 3 hours before serving.

Steps:
- Cut the bacon into small pieces and cook over medium heat just until crisp; drain on paper towels.
- Bring a large saucepan of salted water to a boil. Add the broccoli and blanch until bright green and slightly softened, about 3 minutes. Drain well, run under cold water to stop the cooking, and drain again.
- In a mixing bowl, combine the mayonnaise, vinegar, onion, sugar and raisins. Add the broccoli and toss the coat with the dressing. Refrigerate for 1 hour.
- Just before servings, fold in the sunflower kernels and the bacon pieces. Serve immediately.
