4 slices bacon, diced
2 tablespoons olive oil
2 tablespoons butter
3 large leeks, chopped
1 onion, chopped
3 stalks celery, chopped
3 cups chicken stock
3 Yukon Gold potatoes, cubed
1 teaspoon herbes de Provence
½ teaspoon ground coriander
½ teaspoon fennel seed, crushed
½ teaspoon salt
1 teaspoon ground black pepper
3 cups broccoli florets
2 ½ cups whole milk
3 green onions, chopped

Steps:

  • Stir the bacon and olive oil in a large pot over medium heat until the bacon has turned golden brown and released its grease, about 7 minutes. Add the butter, leeks, onion, and celery. Cook and stir until the leeks have softened, about 7 minutes.
  • Pour in the chicken stock, potatoes, herbes de Provence, coriander, fennel, salt, and pepper. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until the potatoes are just beginning to turn tender, about 8 minutes. Stir in the broccoli, and simmer 5 minutes. Add the milk, and continue simmering until the vegetables are tender, about 5 minutes more.
  • Pour the soup into a blender, filling the pitcher no more than halfway full. Hold down the lid of the blender with a folded kitchen towel, and carefully start the blender, using a few quick pulses to get the soup moving before leaving it on to puree. Puree in batches until smooth and pour into a clean pot. Alternately, you can use a stick blender and puree the soup right in the cooking pot. Season to taste with additional salt and pepper; sprinkle with chopped green onions to serve.

1 Tbsp. extra virgin olive oil
1 1/2 leeks, chopped
3 stalks of celery, diced
3 garlic cloves, minced
1 1/2 lb. broccoli, mostly crowns, chopped
1/3 cup medium grain rice
6 cups chicken stock or vegetable stock
1 bay leaf
1 Parmesan cheese rind
3 thyme sprigs
3 parsley sprigs
Salt and pepper to taste
1 cup grated Cheddar cheese
A coupe squeezes of lemon juice (opt.)

Steps:

  • Heat olive oil in large, heavy soup pot. Add onion and celery. Cook, stirring, until tender -- 5 minutes. Do not allow ingredients to brown -- add a generous pinch of salt to draw liquid out of vegetables. Add garlic and cook, stirring until fragrant -- 30 seconds. Add broccoli, rice, stock, bay leaf, cheese rind, thyme, rosemary. Bring to a boil. Reduce heat, cover and simmer for 20 minutes. Remove the bay leave, thyme stalks, cheese rind. Using an immersion blender, puree soup. Adjust salt and pepper seasonings. Stir in Cheddar cheese and adjust seasonings again. You can sharpen and adjust taste by adding a couple of squeezes of lemon juice from 1/2 a fresh lemon.

1 large bunch broccoli (about 1 1/2 pounds)
1 tablespoon olive oil
1 tablespoon unsalted butter
2 medium leeks, white and light green parts only, thinly sliced
1 medium baking potato, peeled and cut into 1-inch pieces
1 garlic clove, thinly sliced
3 cups low sodium chicken broth or 3 cups vegetable broth
3/4 teaspoon salt
1 pinch fresh ground pepper
1/4 cup half-and-half (optional)
1/4 cup snipped chives

Steps:

  • 1. Separate broccoli stems from florets. Using a vegetable peeler, peel stems to remove tough outer layer, then slice into 1/4 inch thick "coins." Break or cut the florets into small pieces. Reserve stems and florets separately.
  • 2. In a medium saucepan, heat oil and butter over medium heat. Add leaks and cook, stirring often, until softened and fragrant, about 3 minutes.
  • 3. Add broccoli stems, potato, and garlic, and cook 2 to 3 minutes.
  • 4. Add 3 cups of water, broth, salt, and pepper; bring to a boil.
  • 5. Reduce heat; cover partially, and simmer until broccoli and potato are tender, about 12 minutes.
  • 6. Add florets, bring to a boil and then simmer 5 minutes. Transfer soup in batches to a blender or food processor, and puree until smooth.
  • 7. Return soup to saucepan; add half and half and chives, and reheat briefly.

375g leeks, thinly sliced
400g potatoes, peeled and cut into medium chunks
2 garlic cloves, chopped
2 tsp vegetable bouillon powder
340g broccoli, roughly chopped
250ml milk
165g plain wholemeal flour
1 tsp baking powder
20g parmesan or vegetarian alternative, finely grated
1 tsp mustard powder
100ml milk
½ tbsp olive oil
65g soft goat's cheese
4 tomatoes, sliced, to serve

Steps:

  • Tip the leeks, potatoes and garlic into a large pan with the bouillon. Pour over 800ml boiling water, stir well, cover and simmer for 15 mins.
  • Add the broccoli to the pan, then cover and cook for 5 mins more until just tender. Blitz with a hand blender until smooth, then pour in the milk and blitz again. Add a little stock if the soup looks too thick.
  • To make the scones, heat the oven to 220C/200C fan/gas 7 and line a baking tray with baking parchment. Put the flour and baking powder in a bowl with the all but 1 tbsp of the parmesan and all the mustard powder. Gradually add the milk and oil, stirring with a cutlery knife until the mixture comes together. Shape into a log, about 16cm long and 6cm wide, and press the remaining parmesan on top. Cut in half along the length, then halve each of those pieces again to create four wedge-like scones. Arrange the scones on the tray and bake for 10-12 mins until golden.
  • If you're following the Healthy Diet Plan, reserve two of the scones for another day. Will keep covered for up to three days. Halve the remaining two and top with half the goat's cheese and half the tomato. Ladle half the soup into two bowls and serve with the scones. The remaining soup will keep chilled for up to three days.

2 leeks, including tender green parts
1 1/2 lbs broccoli, florets and stalkes cut into 1-inch pieces
4 cups chicken stock
salt and pepper
1/4 cup sour cream or 1/4 cup plain yogurt
2 tablespoons finely chopped fresh chives

Steps:

  • To make the soup, in a large saucepan over medium heat, warm the olive oil. Add the leeks and sauté until softened, 3 to 5 minutes. Add the broccoli and sauté, stirring frequently, until slightly softened, about 2 minutes more.
  • Add the stock and bring to a simmer. Cover partially and cook until the vegetables are tender when pierced with a sharp knife, 15 to 20 minutes. Remove from the heat.
  • In a blender or food processor, puree the soup in batches until smooth and return the soup to the pan. Alternatively, process with a stick blender in the pan until smooth. Reheat the soup gently over medium heat. Season with salt and white pepper. Ladle the soup into warmed bowls and garnish with the sour cream, croutons and chives. Serve immediately. Serves 4.

After blending the soup, the recipe says to transfer it to a clean saucpan to heat through, but I don't see the point of involving any more dishes than absolutely nesessary and would just return in to the same pot. :)

2 slices thick whole meal bread, crusts removed, cut into 1cm pieces
olive oil flavored cooking spray
1 leek, pale section only, halved lengthways, thinly sliced
2 garlic cloves, crushed
1 large potato, peeled, finely chopped
4 cups vegetable stock
600 g broccoli, cut into small florets
1/4 cup fresh parsley leaves
1/4 cup fresh basil leaf
1/4 cup low-fat sour cream

Steps:

  • Preaheat oven to 200degC. Place the bread cubes on a baking tray and spray lightly with olive oil spray. Bake, turning once, for 10 mins or until golden.
  • Meanwhile, heat a large saucepan over medium heat and spray with olive oil spray.
  • Add the leek. Cook, stirring occasionally, for 5 mins or until soft. Add the garlic and cook for 30 seconds, until aromatic.
  • Add the potato and stock. Bring to the boil then reduce heat to low and simmer for 10 minutes.
  • Add the broccoli and simmer for 5 mins or until the broccoli is tender.
  • Set aside to cool slightly.
  • Place the mixture into a blender along with the parsley and basil and blend until smooth.

2 ounces thinly sliced pancetta, finely chopped (1/4 cup)

2 medium leeks, finely chopped (white and tender green part only)
1 tablespoon butter
2 bunches broccoli (about 2 lbs)
8 garlic cloves, sliced
1/2 cup olive oil
6 cups vegetable broth
1/2 teaspoon dried thyme
1/4 cup dry white wine
4 tablespoons fresh lemon juice, divided
1/2 cup sour cream
1 lemon, zest of
1/4 cup fresh chives, chopped
1/4 cup parmesan cheese, freshly grated
1/4 cup shredded cheddar cheese

Steps:

  • Melt butter in skillet over medium heat. Add leeks and cook for 3 minutes until soft. Add garlic and cook 1 minute more. Scrape leeks and garlic into slow cooker.
  • Cut off the broccoli florets and chop them. Cut two inches off bottom of the stem. Peel the remainder of the stems and then slice and chop them. Add chopped broccoli to the slow cooker, along with the olive oil, vegetable broth, thyme, white wine and 2 tablespoons of lemon juice. Add salt and pepper to taste. Cover and cook on LOW for 5-6 hours.
  • Meanwhile, in a small bowl, mix the sour cream, remaining 2 tablespoons lemon juice, lemon zest, chives and Parmesan cheese. Season it with salt and pepper. Refrigerate until ready to use.
  • When the soup is finished, transfer it in batches to a food processor or blender and puree until smooth. Taste the soup and adjust seasonings if necessary. Stir in half of the lemon chive cream. Ladle into bowls and serve with a dollop of remaining cream and some shredded cheddar cheese, if desired.

1 onion, chopped
2 cups leeks, sliced
8 ounces unpeeled potatoes, diced
4 cups vegetable stock
1 bay leaf
2 cups broccoli florets
1 1/2 cups frozen peas
2 -3 tablespoons chopped fresh parsley
salt
pepper
fresh parsley leaves, to garnish

Steps:

  • Put the onion, leeks, potatoes, stock and bay leaf in a large heavy saucepan and mix together well. Cover and bring to a boil over medium heat. Lower the heat and simmer, stirring frequently, for 10 minutes.
  • Add the broccoli and peas, cover and return to a boil. Lower the heat and simmer, stirring occasionally, for another 10 minutes.
  • Set aside to cool slightly. Remove and discard the bay leaf. Process the soup in a blender or food processor in batches if necessary, until you have a smooth puree.
  • Add the parsley, season to taste with salt and pepper and process again briefly. Return to the saucepan and reheat gently until piping hot. Ladle into heated soup bowls and garnish with parsley leaves. Serve immediately.
  • Note: If you prefer, cut the vegetables finely and leave the cooked soup chunky rather than pureeing it.

Love making healthy soups during the colder months. And soups can be a great way to get your vegetables in for the day. This broccoli leek soup is packed with five different vegetables, broth, and a little bit of coconut milk. Super delicious!

5 c broccoli florets
2 large leeks, sliced (white and light green parts only)
1 c carrots, grated (2-3 large)
2 clove garlic, roughly chopped
1/2 c celery, chopped (2-3 stalks)
1/2 c coconut milk
2 Tbsp olive oil
4 c vegetable broth
2-3 c water
1 tsp salt
1/2 tsp black pepper
1/4 tsp cayenne pepper

Steps:

  • 1. In a large pot, over medium-high heat, add olive oil, and saute the leeks, carrots and celery for about 4 minutes, stirring constantly.
  • 2. Add the broccoli and garlic. Saute for another 4 minutes, stirring constantly.
  • 3. Add the vegetable broth and water. Liquid should just barely cover all the vegetables.
  • 4. Heat to boil, then reduce heat to low, cover and simmer for about 15 minutes. Broccoli should be tender.
  • 5. Remove from heat and let cool slightly.
  • 6. In batches, transfer to a food processor, and blend until smooth, then transfer to a large bowl. For each batch, add a little coconut milk during blending. Don't transfer/blend all of the broth or the soup may be too runny. You can always add broth in the end if you need more liquid. Otherwise, discard any unused liquid.
  • 7. Once all veggies are blended, add the salt and peppers, and stir to combine.
  • 8. At this point, you can either transfer back to the pot, reheat and serve. Or you can store in an airtight container (once cooled) and refrigerate for up to 5 days. Enjoy!

1 Lg Bunch of Leeks ( washed thouroughly and sliced into strips)
1 Lg Bunch of Broccoli (Chopped )
1/2 bag of Frozen Broccoli Florets
20 sliced Mushrooms (give or take, I like lots)
3 stalks Celery chopped
4-5 16oz cans of Chicken Broth
1 pint of 1/2 N 1/2
1 cup of White Wine (give or take)
1 Cube of Butter
4 Tbsp Flour
1.5 pounds of Jarlsburg or Baby Swiss Cheese chopped or grated.
1 cup of freshly grated Parmesan Cheese
Salt and Pepper to taste
Optional:
you can add a can or two of cheese soup or broccoli soup to your soup. Makes it thicker and adds more flavor.

Steps:

  • In a large pot over medium high heat add 1 cube of butter,chopped celery, sliced mushrooms and the sliced leeks. Saute until the leeks are tender.(About 30 minutes) Add 3tbsp flour and mix together. Let simmer for a moment. Add all the chicken broth and 1/2 n 1/2, stir. Bring to a boil, then add the chopped broccoli and 1/2 the bag of frozen broccoli florets. Stir and bring back to a soft boil. Add all the swiss cheese and continue to stir until melted. In the meantime add the wine. Keep Stirring! The soup should begin to thicken. After cheese is melted add a can or two if desired of the cheese soup. This is really just for extra flavor but isn't necessary. Salt and pepper to taste. Sprinkle Parmesan cheese on top of soup just before serving. Soooooo goood!

4 tablespoon(s) butter
2 large leeks soaked rinsed and chopped
4 clove(s) garlic minced
1 large head of broccoli cut into floretts
4 clove(s) vegetable or chicken stock
2 teaspoon(s) salt
1/4 teaspoon(s) red pepper flakes
3 tablespoon(s) flour
1 cup(s) milk
- parmesan cheese grated

Steps:

  • Select saute on Instant pot. Place 1 tbsp. butter in pot. Add the leeks and garlic and saute for 5 minutes. Add the broccoli, stock, salt and red pepper flakes. Secure the lid and select manual. Toggle up to 8 minutes on pot. Use quick release. Remove lid.
  • Meanwhile melt the remaining 3 tbsp. butter to a small pan on stove. Add the flour and make a roux. Slowly add the milk and cook until thickened stirring constantly.
  • After removing the lid of the instant pot. Select saute again and add the milk mixture to the pot. Let it saute for 3 minutes. Serve with parmesan cheese sprinkled on top.

ORANGE ZEST, BROCCOLI & LEEK SOUP

Low GI and awesome. I was surprised when I first tried this to find that the little amount of orange zest I added was enough to create such a wonderful flavour combined with the other ingredients. This is not a blended soup, so it still feels like you're eating a full meal by itself and when frozen, the flavours will intensify giving the soup a bit more bite.

2 tablespoons olive oil
4 cups leeks, sliced
6 cups chicken stock
6 cups broccoli, cut into small pieces
1 cup oats, large flake
1 orange, zest of
1/2 teaspoon red pepper flakes
1/2 teaspoon salt
1/2 teaspoon pepper
2 cups milk
1/2 cup cheddar cheese, shredded (optional)
ground pepper

Steps:

  • Heat the oil in a soup pot on a medium heat.
  • Add leeks and cook for 7 - 8 minutes or until softened.
  • Add stock, broccoli, oats, orange zest, red pepper flakes, salt & pepper. Bring to a boil then simmer, covered for about 30 minutes or until vegetables are soft.
  • Stir in milk and let simmer for another 10 minutes.
  • Garnish with cheddar cheese and pepper.

8 cups water
8 teaspoons vegetable base
4 cups broccoli, bite size florets (about ½ pound) 1 tablespoon extra virgin olive oil
½ cup sweet onion, small diced
1 tablespoon garlic, fresh and finely chopped, (about 6 cloves)
¾ pound leeks, white part only, washed and medium diced (about 2 cups chopped)
1 ½ pounds yukon or Idaho potatoes, peeled and large diced
2 pounds broccoli, chopped
1 teaspoon salt
¼ teaspoon pepper

Steps:

  • In cook pot, add 8 cups water and vegetable base, mix and bring to a simmer. Add 4 cups broccoli florets and blanch until just tender, remove from stock, set aside and save. In cook pot, sauté onions on medium heat in olive oil until transparent, add garlic without browning, stirring frequently, about 2 minutes. Add diced leeks and sauté 4 minutes. Add saved vegetable stock, increase heat, bring to a simmer, add potatoes, bring to a boil and simmer four minutes. Then add 2 pounds chopped broccoli and simmer on medium heat until potatoes are fully cooked. Turn off heat and blend with a vertical stick blender until completely pureed. Garnish with blanched broccoli florets and serve.
