Here's what you need: large shrimp, garlic, broccoli floret, onion, low sodium soy sauce, sesame oil, salt

1 lb large shrimp, peeled and deveined
3 cloves garlic, minced
2 cups broccoli floret
½ onion, diced
1 tablespoon low sodium soy sauce
2 tablespoons sesame oil, divided
½ teaspoon salt, divided

Steps:

  • Heat 1 tablespoon of sesame oil in a large, nonstick skillet over medium heat.
  • Pour in the shrimp and season with ¼ teaspoon of the salt.
  • Fry the shrimp for 1 minute on each side.
  • Remove the shrimp from the pan and pour in the remaining 1 tablespoon of oil.
  • Toss in the onion and remaining ¼ teaspoon of salt and sauté for a few minutes until they begin to soften.
  • Add in the broccoli, garlic and soy sauce and sauté until the garlic is fragrant, about 30 seconds.
  • Toss the shrimp back into the pan and mix until everything is well incorporated and the shrimp is fully cooked, about 1 minute.
  • Divide the mixture evenly between 4 bowls.
  • Enjoy!

2 tablespoons vegetable oil
2 garlic cloves, minced
2 teaspoons gingerroot, fresh, minced
5 -6 cups broccoli, florets and julienned stems
2 tablespoons water
1 tablespoon soy sauce

Steps:

  • Heat vegetable oil in a wok.
  • Add garlic and gingerroot.
  • Add broccoli. Stir fry to coat with oil.
  • Add water and soy sauce.
  • Continue to stir fry until broccoli is bright green and tender crisp, 3-4 minutes.
  • Serve at once.

This is a stir-fry recipe I devised and now love. Be sure to press tofu to get rid of its water by pressing it, wrapped in paper towels or a clean towel, for 30 minutes to a few hours under heavy cookbooks.

2 -4 tablespoons sesame oil
1 large onion, diced
1 (16 ounce) package extra firm tofu, cubed
12 ounces broccoli
1 small-medium eggplant, sliced and cubed
8 garlic cloves, minced
2/3 cup chicken broth or 2/3 cup vegetable broth, heated
6 tablespoons rice wine vinegar
6 tablespoons reduced sodium soy sauce
2 tablespoons brown sugar
2 tablespoons cornstarch
2 tablespoons red pepper flakes, to taste

Steps:

  • In a bowl, prepare sauce: combine heated broth and cornstarch, stirring to dissolve. Add vinegar, soy sauce, brown sugar, and red pepper flakes (to taste). Set aside.
  • In another bowl, toss eggplant in a few shakes of salt. Let eggplant cubes sit in salt for 20-30 minutes, then rinse with water and pat dry. Doing this eliminates the slightly bitter taste eggplant sometimes has. Set prepared eggplant cubes aside.
  • Heat oil in a large skillet or wok on stovetop.
  • Add minced garlic and diced onion and fry until onion becomes golden or translucent.
  • Add broccoli and stir-fry about 2 minutes, adding more oil or broth if veggies begin to stick to pan.
  • Add cubed tofu and continue to cook 1-2 minutes; then add cubed eggplant and keep cooking 4-5 minutes, stirring to keep from sticking to the pan bottom.
  • Finally, turn heat down to medium or a simmer. Stir the sauce you've prepared, and then pour it into the pan. Continue to cook until the sauce thickens nicely.
  • Serve and enjoy!

Can use the stems from the broccoli also, just trim the outside tough skins and chop, you can adjust the garlic to taste. Feel free to add in a red bell pepper also if desired!

1 teaspoon dried red pepper flakes (or to taste)
1/2 teaspoon black pepper (optional)
sesame seeds (optional)

Steps:

  • In a bowl combine together the soy sauce, green onions, brown sugar, ginger, garlic and red pepper flakes; mix well to combine.
  • Heat the sesame oil in a large skillet or wok over medium heat; stir-fry until crisp-tender (about 3-5 minutes).
  • Add in the soy sauce mixture until thoroughly heated and coated well.
  • Season with black pepper if desired.
  • Transfer to a bowl and toss with sesame seeds.

4 cloves garlic, peeled, sliced (about 2 tablespoons)
4 cups fresh broccoli florets (about 1 lb)
1/2 cup ready-to-eat baby-cut carrots, cut in half lengthwise
1 can (8 oz) sliced water chestnuts, drained
1/4 cup water
1/2 cup teriyaki baste and glaze (from 12-oz bottle)
2 cups bite-size strips deli rotisserie chicken (from 2- to 2 1/2-lb chicken)
Hot cooked rice, if desired

Steps:

  • In 12-inch nonstick skillet or wok, heat oil over medium-high heat. Cook garlic in oil about 1 minute, stirring constantly and being careful that garlic doesn't burn, until golden brown.
  • Add broccoli, carrots, water chestnuts and water to skillet. Cook 7 to 9 minutes, stirring occasionally, until vegetables are crisp-tender and water has evaporated.
