2 tablespoons butter
1 medium onion, chopped
2 garlic cloves, finely chopped
3 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon thyme
1/4 teaspoon sugar
3 cups chicken broth
1 lb frozen broccoli cuts, thawed
2 cups frozen corn, thawed
1 cup fat-free half-and-half
1/2 cup sharp cheddar cheese

Steps:

  • In 4-quart saucepan, melt butter over medium heat. Cook onion and garlic in butter 2 to 3 minutes, stirring frequently, until tender. Stir in flour, salt, pepper, thyme and sugar.
  • Cook, stirring constantly, 1 minute.
  • Stir in broth, broccoli and corn. Heat to boiling over medium-high heat.
  • Reduce heat; simmer 5 -7 minutes, stirring occasionally, until vegetables are tender.
  • Stir in FF half-and-half and cheese. Cook over low heat 2 to 3 minutes or until hot - do NOT boil.

3 tablespoons Gold Medal all-purpose flour
1/2 teaspoon coarse salt (kosher or sea salt)
1/8 teaspoon pepper
3 cups reduced-sodium chicken broth or 3 cups vegetable broth
1 (16 ounce) bag frozen broccoli cuts
2 cups frozen sweet corn (from 16-oz bag)
1 cup half-and-half

4 slice bacon, cut into 1-inch pieces
1 medium onion, chopped
1/4 c all purpose flour
2 can(s) (14 oz. each) reduced-sodium chicken broth
1 large baking potato, peeled and diced
1 medium head broccoli, cut into bite-size florets, stalks, peeled and thinly sliced
1 1/2 c frozen whole corn kernels or a (10 oz. pkg)
1/2 tsp dried thyme
1 c whole milk
kosher slat and fresh ground pepper

Steps:

  • 1. In a large pot or kettle, cook bacon over medium heat, stirring until crisp , about 9 minutes.,Using a slotted spoon, transfer to a paper towel lined paper plate. Increase heat to medium. Cook onion, stirring until it begins to soften, about 8 minutes.
  • 2. Add flour, cook stirring constantly, 30 seconds. Add broth and potato; bring to a boil. Reduce to a a simmer, cook until potato is tender, about 10 minutes. Add broccoli, corn, thyme and milk. Cook until broccoli is crisp tender, 8-10 minutes. Season with the salt and pepper to taste. Sprinkle bacon on each serving.( a little cheese too, if desired)

  • Heat Potatoes, Sauce Mix and remaining ingredients except cheese to boiling in 4-quart Dutch oven over high heat, stirring occasionally and breaking up broccoli with fork.

3 cups fresh broccoli florets
2 cups diced peeled potatoes
2 cups water
1/3 cup sliced green onions
1 teaspoon salt

3 tablespoons all-purpose flour
1/8 teaspoon ground nutmeg
2 cups whole milk
1/2 cup shredded cheddar cheese

Steps:

  • In a large saucepan, combine the first 6 ingredients. Bring to a boil. Reduce heat; cover and simmer for 12-14 minutes or until vegetables are tender., Meanwhile, in another saucepan, melt butter. Stir in flour and nutmeg until smooth. Gradually add milk.
