1/2 teaspoon pepper
1/4 teaspoon salt, divided
2 tablespoons butter, divided
1 small onion, chopped
3 garlic cloves, minced
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon dried oregano
2 cups reduced-sodium chicken broth
1 cup fat-free milk
2-1/2 cups uncooked ziti
1 bunch broccoli, cut into florets
1 cup julienned roasted sweet red peppers
1/2 cup grated Parmesan cheese

Steps:

  • Sprinkle chicken with pepper and 1/8 teaspoon salt. In a large skillet, saute chicken in 1 tablespoon butter until no longer pink. Remove and keep warm., In the same skillet, saute onion in remaining butter until tender. Add the garlic, pepper flakes, oregano and remaining salt; cook 1 minute longer. Stir in broth and milk; bring to a boil. Add ziti; cook for 7-8 minutes or until ziti is tender, adding broccoli and red peppers during the last 5 minutes of cooking., Return chicken to skillet; heat through. Sprinkle with cheese.

4 bone-in, skin-on chicken thighs (about 2 pounds), patted dry
1 1/2 teaspoons kosher salt
1/2 teaspoon black pepper
2 tablespoons extra-virgin olive oil
2 tablespoons unsalted butter
1 lemon, thinly sliced and seeds removed
12 ounces broccoli florets, cut into smaller pieces if larger (about 4 cups)
8 ounces dried orzo (about 1 1/4 cups)
1 teaspoon fresh thyme leaves
2 garlic cloves, minced
1/2 cup dry white wine
2 cups low-sodium chicken broth

Steps:

  • Season chicken thighs on both sides with 1 teaspoon salt and 1/2 teaspoon pepper. In a large, heavy skillet (preferably cast-iron or stainless steel), heat olive oil over medium-high. Cook the chicken, skin-side down, until golden brown, about 7 minutes. Flip and cook until golden on the other side, about 5 minutes more. Transfer chicken to a plate and set aside.
  • Decrease heat to medium, add butter and lemon slices, and cook until the lemons release their juices and start to brown, 1 to 2 minutes. Transfer to the plate with the chicken.
  • Add broccoli, orzo, thyme, garlic and remaining 1/2 teaspoon salt to the skillet and stir to coat. Cook, stirring occasionally, until the orzo is lightly toasted and the broccoli is bright green, about 5 minutes.
  • Deglaze with the wine and cook until the liquid is mostly absorbed, 1 to 2 minutes.
  • Add the broth and lemon slices to the skillet, then add the chicken thighs, skin-side up, along with any liquid from the plate. Cover the skillet and continue cooking until the orzo is tender, most of the liquid is absorbed, and the chicken is cooked through, 13 to 15 minutes.
  • If you want to add a little texture and crunch to the dish, uncover and continue to cook until browned and crisp on the bottom, 3 to 5 minutes. Serve warm.

This is a simple, easy recipe I make on nights when I don't feel like making something that's time consuming or when the weather is cold. I also substitute 3 cans (12 oz.) of chicken if I don't have time to cook the chicken breasts. Some variations yield different flavors, ( substituting cream of chicken for broccoli cheese, etc.) so be adventurous! :)

3 chicken breasts, cooked and diced
2 (8 ounce) cans cream of chicken soup (although you can substitute cream of broccoli, broccoli cheese, or cheddar cheese soup)
1 (8 ounce) container sour cream
1 (8 ounce) can evaporated milk or 8 ounces half-and-half
1 1/2 cups milk
2 cups shredded cheese (any variety, although I have found a cheddar or colby-jack blend works best)
1 tablespoon garlic powder
1 tablespoon black pepper
1 teaspoon seasoning salt
2 cups frozen broccoli florets
egg noodles or rice

Steps:

  • Cook chicken and allow to cool. Dice and set aside or use canned chicken and drain.
  • Mix the soup, sour cream and milk in a mixing bowl with the seasonings listed. Put on stovetop on medium-low and add chicken. Stir occasionally until slightly bubbly. Add the cheese and cook until melted, stirring occasionally. Set temperature to simmer until noodles or rice are done.
  • Put frozen broccoli in a microwave safe dish and cook, covered until thawed, (usually about 3-5 minutes, depending on microwaves). Drain, if needed, and pour and stir into chicken mixture. (One thing I have done is, I line a glass bowl or dish with about 4 paper towels, and pour the frozen broccoli on the towels. I then cover the dish, and nuke for about 4-6 minutes. When it's done, the broccoli doesn't need draining because the towels absorbed all the liquid from the frozen broccoli).
  • Prepare egg noodles or rice as directed on packaging.
  • Serve creamy, cheesy mixture over noodles or rice. I imagine you could serve it over stuffing as well, although I have yet to try it that way. Serve with a salad. Enjoy!

1 Tbsp. oil
2 cups water
3 cups fresh broccoli florets
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1-1/4 cups KRAFT Shredded Cheddar Cheese

Steps:

  • Cook chicken in hot oil in large skillet on medium-high heat 3 to 4 min. on each side or until done (165°F). Remove from skillet; cover to keep warm.
  • Add water and broccoli to skillet; bring to boil. Add stuffing mix; stir just until moistened.
  • Return chicken to skillet; sprinkle with cheese. Cover; cook on low heat 5 min. or until cheese is melted.

1 lb boneless skinless chicken breast, sliced into 1-inch pieces
salt and pepper, dash
3 tablespoons butter
1 minced onion
1/4 teaspoon red pepper flakes
1/4 teaspoon dried oregano
1/2 teaspoon salt
3 garlic cloves, minced
8 ounces penne
2 1/2 cups chicken broth
1/2 cup heavy cream
1 1/2 lbs broccoli florets, cut into one inch pieces
1 red pepper, sliced into 1/4 inch thick pieces
1/2 cup parmesan cheese

Steps:

  • Pat the chicken dry, then season with salt and pepper. Melt 1 tablespook of the butter in a 12 inch skillet over medium-high heat. Add the chicken and cook until it is lightly browned but not fully cooked, about 4 minutes. Transfer the chicken to a bowl.
  • Reduce heat to medium. Add 1 more tablespoon of the butter, onion, red peppers, red pepper flakes, oregano and the 1/2 tsp salt to the skillet. Cook until onion is softened, about 5 minutes. Stir in the garlic and cook until fragrant, about 15 seconds.
  • Sprinkle the penne (uncooked) evenly into the skillet. Pour the broth and cream over the ziti. Cover and bring to a boil, about 5 minutes.
  • Reduce the heat to medium-low and stir in the broccoli. Cover and continue to simmer, stirring occasionally, until the pasta begins to soften and the broccoli turns bright green, about 8 minutes.
  • Stir in the chicken and any accumulated juices. Cover and continue to simmer until the chicken is cooked through, about 3 minutes.
  • Stir in the remaining 1 tbsp butter and the parmesan. Season with salt and pepper to taste.

2 cups ORE-IDA Diced Hash Brown Potatoes, thawed
2 cups frozen broccoli florets, thawed

1 (10 3/4 ounce) can condensed cream of chicken soup
1 (10 3/4 ounce) soup can full water
1 cup of chopped broccoli
2 cups instant rice

Steps:

  • Cook 1 pound of meat in 1 tbsp of hot oil in a large skillet or 10 minutes or until cooked through, stirring frequently.

2 Tbsp oil
2 large potatoes, sliced
3 - 4 sausage, sliced diagonally 1/2 inch thick
1 medium onion, sliced thinly
1 c chicken breast, cut into chunks
1/2 c water
1 c campbell chicken soup
1 c fresh broccoli florets
1 small red bell pepper cut into strips

Steps:

  • 1. In a skillet, fry potatoes in oil. Place in paper towel and set aside.
  • 2. In the same skillet, fry sausage. Set aside.
  • 3. Still using the same skillet, saute onion and chicken breast chunks.
  • 4. Add water and chicken sauce. Mix gently. Simmer for 15 minutes or until chicken is tender.
  • 5. Add pre-fried potatoes and sausage. Stir in broccoli. Simmer for another 3 minutes or until potatoes and broccoli florets are cooked.
  • 6. Add red bell pepper. Simmer for another minute.
  • 7. Serve hot with rice.

1 lb small red potatoes, sliced thin
1 lb chicken breast, cut into bite sized pieces
1/2 small onion, diced small
1 can(s) condensed broccolli cheese soup
1/2 c milk
2 c broccoli florets (fresh or frozen)
1/2 c cheddar cheese, grated
2 Tbsp vegetable oil
1/4 tsp garlic powder
3 dash(es) pepper

Steps:

  • 1. Heat oil in skillet over medium heat. Add chicken and onion. Cook until chicken is no longer pink. Remove chicken to a plate and set aside. (This step may be skipped if using pre-cooked chicken.)
  • 2. Add potato slices to hot pan. Cover and cook for 10 minutes, flipping occasionally.
  • 3. Stir in the soup, milk, garlic powder, pepper, and broccoli. Add chicken back to skillet. Sprinkle with cheese.
  • 4. Cook until boiling, then reduce heat to low. Cover and cook for 5-10 minutes, or until potatoes are tender.
